    Grilled Peaches with Whipped Coconut Cream, Honey Balsamic Drizzle and Mint

    Instead of calling this one a recipe, I feel like I should call it a “requirement.” You NEED to grill some peaches, as soon as possible. I feel like this should be mandatory for everyone in the summer months.

    It all started with this salad and I haven’t been able to stop since. This particular simple and sweet dish that I am sharing today would be the perfect way to end any summer meal, and it would be especially great at pretty much any summer BBQ. It also makes the perfect snack when you are craving something a little sweet.

    I serve mine with a dollop of homemade whipped coconut cream. But, if you eat dairy, you could also just serve it with regular whipped cream, your favorite yogurt, ice cream or even, some mascarpone, crème fraîche or burrata.

    There are some blogs and cookbooks that I feel like were created just for me, thumbing through the pages or scrolling past the recipes, I feel like every beautiful photo was taken for me, each recipe created with my eating choices in mind. While I am not so arrogant to believe this to be actually true, it is really amazing to know that there are people out there, just like me, eating intuitively – loving and celebrating all of the beautiful, seasonal, healthy whole foods available to us. When I started reading The Year in Food, sometime last year, I instantly felt connected to Kimberley Hasselbrink, the creative mastermind behind all of the recipes and beautiful photos. Her creativity shines brightly, as she creates a feast for the eyes by combining colors, textures, and flavors into her gorgeous, dynamic dishes. When I heard of her brand new book, VIBRANT FOOD, I knew right away before ever seeing it, that this was a book that I would absolutely love and would become a resource I turn to often. I was right.

    It is clear that Kimberley’s look at food is viewed through the eyes of an artist in search of beauty as well as flavor and that she’s wildly inspired by the vivid hues of produce. In her debut book, Vibrant Food Kimberley captures the radiant colors of each of the seasons with recipes that transform meals into captivating works of art. It is apparent the passion that Kimberley has for cooking, each recipe a celebration of color, flavor and mood. Besides being an inspiration in the kitchen, it is hard not to be inspired visually, as well, as you make your way through the incredible, drool-worthly photographs on each page.

    Vibrant Food invites you to look at ingredients differently and let their colors inspire you: the shocking fluorescent pink of a chard stem, the deep reds and purples of baby kale leaves, the bright shades of green that emerge in the spring, and even the calm yellows and whites of so many winter vegetables.     As always, I am late to the party on this one, but I finally got a Spiralizer last month and I have been obsessed with it, ever since it showed up. I have been having so much fun making salads, veggie noodles, curly cut sweet potato fries and all that good stuff. So, be on the lookout for many more recipes very soon.

This garlicky tahini dressing is just so amazing, it is simple to throw together and full of so much great flavor. I’ve been making my own tahini* lately and that, in my opinion, really sets it over the top.

    There is something about summertime and it’s fresh vibrant fruit that just makes me school-girl giddy!! Sitting in the sun, enjoying your favorite fruit, juice running down your face and your arms, that’s when you know it’s really summer!

    We’ve been fortunate that for a few weeks now we’ve been getting some of the freshest, sweetest fruit in our weekly CSA box. Peaches, nectarines, watermelons, cantaloupes and so much more. I decided this year that rather than just cutting up the fruit and stuffing it into our faces, that I would get creative with some of it. Treat it like I do all of the many veggies we get.

    I was dreaming up frozen summery desserts when I realized that I hadn’t pulled my ice cream maker out once since we moved to California last year. That feels like a MAJOR sin, considering I basically live in perpetual summer, here in Southern California. In discovering my terrible neglect of my ice cream maker, I also realized that I had never made a sorbet! Sacrilege isn’t it?

    Summer Berry Probiotic Smoothie

    I am sure you have read plenty of articles and posts about the many benefits of probiotics by now. Rather than carrying on about their many wonderful benefits and why you should be including them in your daily life, I though it better to just share a delicious Summer Berry Probiotic Smoothie that is sure to make your belly happy.

    If you do want to read all about how wonderful probiotics are and all of their many incredible benefits, I encourage you to check out this great post: 3 Tasty Ways to Heal With Priobiotics.  I also encourage you try your hand at making your own probiotic-rich water kefir or my simple homemade coconut milk yogurt – two wonderful ways to easily include more of that beneficial bacteria in your life.

    This smoothie is not only rich in probiotics, from the yogurt and probiotic drink, but I also included other super-food ingredients sure to please your tummy! Ginger, which has long been known to alleviate symptoms of gastrointestinal distress, and provide calming, anti-inflammatory and immunity boosting properties. Cinnamon, another digestive aid, known not just for it’s comforting, warming, aroma, but for it’s powerful anti-bacteria properties, its help with reducing bloating, and its help in improving circulation and digestive discomfort. Finally, I added some chia seeds, which is a great way to include healthy omega-3 fats and of course, one of your digestion’s other friends – fiber. Plus, I really love how thick chia seeds make my smoothies!

    Having an organic farmer that shows up at your door every Wednesday afternoon with the freshest, yummiest and most in-season foods is literally a dream come true for this girl.

    It’s like my own personal Food Network show where I am given a box of random ingredients and I have to create something delicious with them. I guess the only difference is, I don’t also have to use random canned weirdness, fish body parts or other strange things no one has ever heard of.

    Basically, it just means I get to play with my food and I get to be creative with different delicious treats, each week. It really is so fun.

    Lately, we’ve been getting all kinds of amazing fruit in our boxes and most excitingly we have been getting these big beautiful watermelons that are seriously the tastiest things I have ever had. So sweet, so juicy and just so perfect for these hot sunny days we’ve been having.

    I created these non-alcoholic Watermelon Hibiscus Coolers simply because at one point we had more watermelon than we knew what to do with. They are soo refreshing, so perfectly sweet and aromatic and a beautifully impressive, refreshing treat when you have guests. I served these at the little Memorial Day BBQ we hosted here at our place. Some was even served as margaritas (recipe below) with silver tequila and a little extra fresh lime juice.

    Thankfully it has since broke, but this past week, we had the most insane heat wave here in Southern California. After living here just over a year, I haven’t felt anything quite like this. Several days of right around 100ºF and many days even a few degrees more. Now, we don’t get any of that nasty humidity I am used to from my days on the East Coast, but mugginess or not, 100 degrees is DAMN hot.

    Early in the week, we had been in the desert, in Palm Springs, on a much needed anniversary getaway and we came home ready to work our butts off on the various projects we have going on in our cooler beach breeze town of Long Beach. Instead, without any air conditioning and not a breeze to be found, we found ourselves doing a lot of laying around in undergarments, drinking tons of water and we planned lots of meals at restaurants in air conditioning. Seriously guys, I sweat in places this week, that I didn’t even know was possible.

    Homemade simple syrups have become a staple in my kitchen, much like homemade nut milks, nut butters and even sprouts. It’s a simple treat that you can easily make with your favorite fruits, herbs and/or botanicals. Occasionally, I will make them with organic raw sugar, but since I really adore the lovely the depth of flavor that you get when you use good local raw honey, I usually opt for that instead.

    The possibilities are really endless for flavors, you can experiment with whatever you like best and expand your flavors and combinations from there. This particular flavor combination is one of my absolute favorites. Lavender and vanilla bean together are what dreams are made of, add in the honey and just forget it. It really doesn’t get any better.

    Honey Lavender Vanilla Bean Simple Syrup

    Sweet, fragrant, earthy and unique. A few teaspoons of this syrup is wonderful topped with sparkling water for a refreshing non-alcoholic beverage. You can also use it as a traditional syrup, pouring it over yogurt or ice cream, cereals and granolas you can even add it to a homemade almond milk latte, which I am telling you – is life changing!! I am kind of obsessed.

    It’s strawberry season, it’s strawberry season and I  might be just a little bit excited! Iapologize in advance, I know it isn’t quite strawberry season for those of you not in Southern California. But, that just means you can start bookmarking and saving all of these yummy strawberry recipes I share and they’ll be all ready for you to get to cooking as soon as they are in season near you.

    This slighty sweet, kinda tart, and a little bit spicy, Strawberry Avocado Jalapeño Salsa, is just as amazing as it is beautiful. Great on tortilla chips, over your favorite tacos,  on grilled chicken or fish, or even just with a spoon. We have already had some hot weather here in Southern California, so I have been enjoying summery treats a little early. This salsa is simple to make and just full of so much flavor.     Fresh Fig & Banana Smoothie (Gluten-Free & Vegan)

    With the excessive amount of figs we are getting from our tree, I am trying to get very creative with all the different ways I can use them. I think making a fig smoothie might just be the best idea I have some up with yet, to enjoy them. A great way to enjoy a few fresh from the tree now while they are in season and it will be a really nice way to use some of the figs I froze whole, later, after the season is long gone and over. This smoothie is creamy and so perfectly sweet, without needing any sweetener at all. You could add some spices like cinnamon or cardamom if you wish, but I really wanted to fully enjoy the delicious but mild fig flavor.

    Fresh Fig & Banana Smoothie (Gluten-Free, Vegan & Sugar-free)

    Ingredients 

    • 3-4 fresh figs, washed and stems removed the halved (I used black mission)*
    • 1 frozen banana
    • 1 ½ cups unsweetened almond milk, or other non-dairy milk
    • 1 teaspoon vanilla extract
    • 1 tablespoon ground flaxseeds, optional
    • Handful of ice

    Instructions

    • Add all of the ingredients to your blender, blend until smooth and creamy. Serve immediately!
    • *This recipe works great with frozen fresh figs as well.

    If you follow me on Instagram or Facebook, it is likely that you have seen how figs are overtaking my life right now. Our huge black mission fig tree is producing so much fruit. I love it. I have been getting quite creative with the figs; making pizzas, muffins, cakes, smoothies, adding them to salads and more. Fig season begins as early as June in some areas and it can run as late as October. My tree didn’t really start producing until mid August, but given how much small unripe fruit is on there, I have a feeling that I am going to have figs for quite some time. Yay!

    Figs are quite perishable so I have been doing everything I can to use them up as quickly as I can. Stored at room temperature fresh figs keep for about for 1-2 days or 2-3 days in the fridge. Besides what I have been using in recipes, I have been freezing them whole and even dehydrating some so I can enjoy them in the off season, still. Look for lots of fig recipes over the next few weeks, I am loving having so many to play with.

    Besides being delicious and so beautiful, figs are a wonderful source of calcium and dietary fiber. Figs have the highest amount of calcium of any fruit.     Kalamata Olive & Goat Cheese Stuffed Cherry Tomatoes

    If you follow my Facebook page, you probably have seen the excessive amount of tomatoes coming from my garden. It is crazy. I am having to get really creative over here with all of them. It has been quite fun, actually.

    These simple to make Kalamata Olive & Goat Cheese Stuffed Cherry Tomatoes are super simple to make and they make a great appetizer for an end-of-summer BBQ or picnic. If you don’t love olives, simply leave them out, this will still be super delicious. For a different variation, if you are vegan or avoid all dairy, try stuffing your tomatoes with some mashed avocado with cilantro, or a homemade guacamole. That’s equally as delicious.

    Kalamata Olive & Goat Cheese Stuffed Cherry Tomatoes

    I have been experimenting more and more with enjoying small amount of goat milk and sheeps milk cheeses and yogurt, I tend to not notice any issues when I eat it, so I do it very sparingly and in small amounts. I think for many people, this seems to be the case, outside of those with serious intolerances or allergies. At any rate, I have missed cheese a bit, so it has been a nice addition to my life. Do you have issues with dairy? Is it all dairy or just some?

    Kalamata Olive & Goat Cheese Stuffed Cherry Tomatoes

    [print_this]Kalamata Olive & Goat Cheese Stuffed Cherry Tomatoes

    • 24 heirloom cherry tomatoes (about 1 pint), washed and dried
    • 4 ounces goat cheese
    • 1/4 cup Kalamata olives, chopped finely (optional, if you don’t like olives, you can leave them out)
    • 1 tablespoon fresh oregano, roughly chopped (fresh basil would be great, too)
    • Freshly ground black pepper
    • Dash of sea salt
    • 1 tablespoon fresh chives, sliced thin

    Slice the top off of cherry tomato, about 1/4-inch. Gently scoop out the seeds using a small spoon — I find a 1/4 teaspoon works perfectly. Drain off any juice that accumulates in the shells. (If your tomatoes are rolling around, you can slice a tiny sliver off the bottom of each so it will sit without rolling.)

    In a bowl, mix together the goat cheese, Kalamata olives, fresh oregano, black pepper and sea salt together. Get it stirred up really well so it is creamy — I found a fork works perfectly. You may want to add just a small splash of water to get it moving.

    Gently spoon the mixture into the tomatoes. Arrange on a serving platter, top them with the fresh cut chives and serve immediately.

    I realized earlier this summer that it had been years since I have had an ice cream sandwich. While working an event, I came across a food truck that specialized in just ice cream sandwiches and they actually had a gluten-free and dairy-free option for someone like me. YAY! It was delicious, messy and probably loaded with sugar and lots of other stuff I prefer not to eat. It immediately got the gears turning in my head. I wanted to make a healthy ice cream sandwich myself and I of course just needed to find the time to actually play with some recipe ideas.

    I know we have all seen the one or two ingredient banana ice cream that has been making it’s rounds all over the internet for the last two years. If you haven’t tried it yet, you must. Stop what you are doing right now, put those bananas in the freezer and make some yummy healthy ice cream. It is simple to make and sooo surprisingly creamy and delicious. I realized it would make the perfect ice cream sandwich filling since it is creamy, simple to make and literally has nothing more than bananas in it. A great compliment to some grain-free dairy-free cookies!

    I am sharing the cookie recipe over on Free People today as part of my ongoing Restricted Diets series with them and so I expanded on the recipe to make this a two-for-one deal; a cookie recipe and a bonus ice cream sandwich recipe! Plus, we had our friends Dan and Debbie over earlier this week to celebrate Dan’s birthday, so I wanted to make something special for him that we could all enjoy. Debbie is experimenting with a gluten-free and dairy-free diet, so I am pretty sure her mind was blown that these were OK for her to eat!     This recipe is one of those times I created something on the fly with what I had on hand, haphazardly adding ingredients that made sense to my vision, doing my best to measure and take photos when possible. This particular night I hadn’t made any plans for dinner, it was getting late and I came up with the idea to grill some green beans that we had from our CSA and sugar snap peas I had that also needed to get eaten up. I am pretty sure Mark was a tad apprehensive about having so much green stuff for dinner, but let’s be honest he had no choice really! It was this or cereal. We all know those nights.

    I decided to snap photos while I was making this, since some of my most favorite dishes I create are the ones that I don’t stress over, that are inspired by what is fresh from our farmer and what is quick and easy. The sun was literally setting quicker than I could get this served up, so although these may not be the most glamorous or well-styled photos, this dish was far too good not to share with you guys, especially with green beans in season right now.

    I get really excited as different fruits and veggies come into season. Whether in my garden or a neighbors’, at the farmers market or in my weekly CSA box. Tomatoes, especially the beautifully vibrant heirloom varieties, that is my favorite time of the season. If those don’t feel/taste like summer. I don’t know what does.

    This vibrant and fun vegan take on the traditional caprese salad celebrates all that is great about summer!  Instead of mozzarella, I substitute creamy avocado, which works so well with these flavors. I had some beautiful basil from my garden, some red onions from my friend Dan’s garden plus some beautiful heirloom tomatoes and an avocado from the local farmers market. It doesn’t get much more fresh than that.

    Whole artichokes are admittedly something I discovered late in life, I don’t think I had my first fresh whole artichoke until last year sometime. It actually makes me sad every time I think of it, all the missed years of goodness. I had canned or jarred artichokes hearts on salads or in dips, but whole artichokes aren’t a super common vegetable in Western New York and I always prefer to eat as local as possible. After living here in Southern California a few months and trying fresh whole artichokes several different ways, I quickly learned my favorite way to enjoy them is grilled.

    Preparing artichokes for the first time is very daunting. I actually attempted to make them a couple of years ago and didn’t look up any instructions and I had NO clue what I was doing. I didn’t know which parts were edible and which parts were not. However, once you figure out how to prepare an artichoke, and do it yourself a time or two, it really is a breeze.     I am not sure why, but I seem to be one of those people that always gets bit up by bugs, even when no one else is. I can be in a group of 5 or 6 other people and I will seemingly be the only one. I must taste really good. It must be all that healthy, real food! After getting bit up pretty good, the first few weeks of summer, I was determined to do some research and make my own homemade essential oil insect repellent spray.

    There are many essential oils, known for being excellent natural insect repellents.Here are just some of them: Citronella, Clove, Lemongrass, Lemon Eucalyptus, Cedarwood, Rosemary, Tea Tree, Eucalyptus, Cedar, Catnip, Lavender, Peppermint, Basil, Rose Geranium, Cinnamon Oil, Thyme, Lemon, Orange, Pine

    Many of these different essential oils work especially well for specific pests, according to the research I have done, here are some of the more well known pests and essential oils that work as repellents for them:

    Mosquitos – citronella, lemon eucalyptus, peppermint, lemon, eucalyptus, catnip, basil, clove, thyme, lemongrass, geranium, lavender
    Fleas – cedarwood, citronella, eucalyptus, tea tree oil, lemongrass, lavender, orange, pine,
    Ticks – rose geranium, juniper, rosewood, thyme, grapefruit, oregano

    Some studies have also shown, additional effective ingredients include: Neem Oil, Soybean Oil, Vodka, Garlic and Vanilla Extract

    Zucchini!!! We have lots of it and I have been doing my best to get creative with it.  I’ve made a raw zucchini appetizer, I baked chocolate zuccini muffins, I have made more zucchini “pasta” than I would like to admit and the rest have been getting grilled. These simple to make bites are naturally gluten-free and vegan and work well as a bite-sized appetizer or a delicious side dish.

    Last weekend we had dinner plans with Meg and Todd from Beard & Bonnet, who live just around the corner from us and I offered to make something with my homegrown zucchini. Besides being insanely excited to have another food blogger nearby, one who I happen to have a ton in common with, I was also super excited to eat at another gluten-free household where I could be certain everything was 100% safe to eat! Really made for an extra special night.

    Quinoa Stuffed Zucchini Bites - Gluten-free + Vegan

    Meg was making her delicious homemade falafel, so I came up with these Quinoa Stuffed Zucchini Bites. They have so much flavor and they are easy to make, I pre-stuffed the zucchini and popped them in the oven when we got to their house. We ate a few before dinner as appetizers and served the rest as a side dish with our meal.     [print_this]Quinoa Stuffed Zucchini Bites – Gluten-free + Vegan
    Serves 4 to 6 as an appetizer or 2 to 4 as a side dish

    • 2 medium-sized zucchini
    • 1 tablespoon olive oil, plus a little extra, if need be
    • 1 small onion, chopped
    • 2 garlic cloves, minced
    • 1/2 cup uncooked quinoa, rinsed
    • 1 cup vegetable broth or water
    • 2 teaspoons fresh thyme
    • 1/4 teaspoon sea salt
    • 1 cup cremini mushrooms, chopped
    • 1/2 cup sun dried tomatoes, in oil, roughly chopped + some of the oil they are packed in
    • 1/4 cup fresh basil, thinly sliced or roughly chopped
    • Salt and Pepper, to taste

    Preheat the oven to 375ºF. Lightly oil a large baking sheet or line with parchment paper or a silpat.

    Slice off the tops and bottoms of your zucchinis, and then cut them into 1 to 1 1/2-inch long segments. Stand each segment up on one of the cut sides, and use a melon baller (or spoon) to remove the center flesh. Be careful not to scoop all the way through the bottom and create a hole (if you do make a small one, it’ll be fine). Arrange the hollowed-out zucchini pieces onto your prepared baking sheet so that they’re ready to go. Set aside.

    Heat up the olive oil in a small sauce pan, add in the onion and garlic, sauté for about 2 to 3 minutes, then add the quinoa. Stir it around and let the quinoa get coated in a little oil and let it toast up for a minute.  Add in your liquid (broth or water), thyme and sea salt. Bring to a boil, then cover, take the temperature down to low and let it simmer for 15 minutes.

    While the quinoa is cooking, chop your mushrooms and sun dried tomatoes. After the quinoa is cooked, add it to a medium sized bowl. In the same pan you cooked the quinoa in, add a little more olive oil if need be and quickly sauté the mushrooms, just a couple of minutes until they are soft.

    Add the mushrooms, sun dried tomatoes and the fresh basil to the quinoa. Stir everything together add salt and pepper, to taste. I like to add some of the oil from the jar of sun-dried tomatoes to the stuffing, maybe 1 tablespoon or two. You could also just use a little more olive oil.

    Spoon the mixture into the prepared zucchini pieces, letting it mound up as much as you’d like. Bake for 25 to 30 minutes until the stuffing is lightly browned and the zucchini is slightly tender (you don’t want them to get overcooked or they will be too mushy and be hard to eat).[/print_this]

    I know you guys are aware just how much I adore cooking foods inspired by the season and what is most fresh. I don’t have to sell you on that. This salad came from a recent trip to the farmers market where I decided to grab the most delicious, in-season produce I could and just create from there. I had no clue what I was making when I bought everything, I just got it home and started brainstorming.

    This salad is full of flavor, beautiful Spring colors and I love the combination of the tender baby red potatoes with the crunch for the sugar snap peas and the radishes. Plus the light dressing, is such a nice alternative to the usual creamy mayo-based dressings on most potato salads. The mint is the perfect compliment to the salad, finishing it with a bright, fresh flavor.

    Spring Potato Salad with Sugar Snap Peas and Radishes - Gluten-free + Vegan

    Ingredients 

    Dressing

    • ¼ cup olive oil
    • 2 tablespoons white wine vinegar
    • 2 tablespoons whole grain dijon mustard
    • 1 clove garlic, minced

    Salad

    • 1 lb baby red potatoes, washed and cut into 1/2-inch slices
    • ½ lb sugar snap peas, trimmed
    • 1 small bunch radishes, 4 to 6, trimmed and sliced thin
    • 1 /2 small red onion, sliced thin
    • 2 tablespoons fresh mint, sliced thin
    • salt and pepper, to taste

    Instructions

    • Whisk the 4 dressing ingredients together in a small bowl to combine. Set aside.
    • Set up an ice bath in a large bowl, by filling it with cold water and ice cubes. Meanwhile bring a medium saucepan of salted water to a rolling boil, add the sugar snap peas and blanch for 1 to 2 minutes, immediately remove the snap peas to the ice bath with a slotted spoon. Leave the pot of water on the stove and over a medium-high heat. Add the potatoes to the same pot and bring the water back to a boil. Cook for about 10 minutes, until the potatoes are just tender.
    • Drain the potatoes and if you want to cool them quicker, run some cold water over them.
    • Once the snap peas and potatoes are cooled and drained (you can pat them dry to make sure they are nice and dry), add them to a large serving bowl with radishes, onion and fresh mint. Mix the dressing and pour over the salad. Toss gently to combine. Salt and pepper, to taste.
    • Serve at room temperature or cold, and enjoy!
