    Since I have started sprouting foods myself, a few months back, I have been pretty excited not only with how much more delicious so many of my favorite foods are, but how much easier they have been to digest. Sprouting seeds and beans especially, have seriously reduced the amount of bloating I have felt with certain foods. Sprouted quinoa is one of my absolute favorites to sprout. It’s super simple and I love knowing that I am maximizing the full nutritional benefits of the quinoa this way.     This super easy, vibrantly-colored quinoa bowl is so easy to throw together and it’s full of so many amazing flavors. Seriously, if you don’t count the sprouting time, you can have this for dinner – completely made and on the table in under 30 minutes. It’s just that easy. Besides the food processor to make the pesto, it’s a one pot meal, which I am ALL about. I love easy meals like this, where it can all cook in one pot and your entire meal is in one bowl. Doesn’t get much easier than that.

    With all of the many different greens we’ve been getting in our CSA box each week I have actually made variations on this recipe too, last week I actually made it with swiss chard instead of the kale and it was just as amazing. I know arugula or spinach would be incredible, too.

    Spring produce honestly makes me giddy. I get school girl crush excited to stroll the aisles at the farmers market and my favorite organic grocery store and it feels like Christmas morning every Wednesday when I open the CSA box that our farmer drops off and I get to look inside. I am not sure how you feel about it, but I seriously think all of this fresh green goodness is definitely worth celebrating.

    One of my absolute favorite in season vegetables is asparagus. I am not joking when I tell you I consumed about 3 lbs of it myself in a 24 hour period, one day last week. I love it. My two favorite ways to enjoy it is roasted in the oven and grilled. The smokey flavor and those char marks from the beautiful caramelization of the natural sugars are just perfection.

    I am so excited to introduce you guys to Ella of Pure Ella today! I recently discovered Ella’s gorgeous website and I was instantly in love. Her gorgeous photos and recipes obviously caught my attention immediately, but her excitement for life and he sweet and positive outlook just sealed the deal for me.     Lately I’ve had this insane craving for Kimchi! And I just had to have it!
    I scoped around several stores in our area including Whole Foods and when I couldn’t find it myself I finally had to ask (in complete desperation) if they could help me find it!
    After rechecking with several clerks I was delivered the news “We’re sold out!” (Ok, let’s expand on that exclamation mark!!!! I was completely shocked!) This was my third attempt and it’s like Kimchi has gone extinct! Or just got extremely popular! Maybe both?
    “Oh no… but I’m pregnant!” It was no use. Kimchi was just a fantasy at that point. There was nothing I could do and no interest at that time to ferment cabbage for 3 weeks before I could get a bite!

    Days went by and I gradually learned to stop whimpering the word “kimchi” with the fridge door open at lunchtime when preparing my lunch. I haven’t really given up but I wasn’t going to go crazy for fermented cabbage… or was I?

    And then this happened: My sweet husband just walks in through the front door and hands over a jar of Kimchi to me! I jumped for joy and skipped all the way around the kitchen island to plant a big kiss on him! The guy doesn’t do flowers, but he does Kimchi and I was in Love! (with both of them ;))

    The first and last time I had Kimchi before was on our last Summer trip to Montreal, when we enjoyed a stay at a great Asian restaurant in Montreal. I couldn’t get enough of this stuff. My husband didn’t get it. I loved it!

    So what is Kimchi anyway? If you’re unfamiliar with the latest super-food – Kimchi is a spicy pickled (or fermented) cabbage that is traditionally from Korea. It has a flavour combination of spicy, sour and a little sweet depending on what variety you get.

    It’s been a cultural dish in Korea for nearly 3,000 years so it’s a big part of their daily tradition. Even when taking pictures, people there say “Kimchi” not “cheese” when smiling for their pictures. Fun, right? 😉

    Harissa is a bit spicy and it has such a robust and full flavor. So much more than your run-of-the-mill pepper blend.     As summer winds down, I am still not quite ready to jump into all of the fall recipes just yet. I am looking to hang on to the last few delicious bits of the summer bounty. For me, tomatoes are always the way to do that — bid the summer farewell with the most delicious tomatoes you will have all year. My garden is still producing its fair share of tomatoes and I am enjoying savoring the last of it. I have even oven-dried some of them and packed them in oil to preserve the goodness through the winter.

    Roasted Tomato Pesto - Gluten-free + Vegan

    This roasted tomato pesto is a great way to use up some of the last of the tomatoes. It is full of robust and deep flavors and, of course, lots of great nutrients from the fresh tomatoes. Besides with pasta or even zucchini pasta, you could also spread this on toast for a bruschetta of sorts, or serve it over your favorite grilled meat or fish. It would also make a delicious dip served with crackers.

    If you have a lot of tomatoes, you can double or triple the recipe and freeze some for later, too. Head on over to the Free People Blog BLDG 25 where I am sharing this recipe today as part of my ongoing Restricted Diet series.

    Roasted Tomato Pesto - Gluten-free + Vegan

     

    [print_this]Roasted Tomato Pesto – Gluten-free + Vegan

    makes about 1 cup

    • 1 lb fresh roma tomatoes (9-12), sliced in half lengthwise
    • 2 garlic cloves
    • 1/2 cup almonds, walnuts or pine nuts, toasted + a small amount more for serving
    • 1 cup fresh basil + a bit more for garnish
    • 1/4 cup extra virgin olive oil + more for drizzling on tomatoes
    • 2 tbsp nutritional yeast or parmesan cheese
    • 1 teaspoon fresh lemon zest
    • 1/2 teaspoon dried crushed red pepper, optional
    • Sea salt & freshly ground black pepper, to taste
    • Cooked gluten-free pasta of your choice, reserving approximately 1/4 cup of the cooking water before you drain

    Preheat oven to 400º F. Line a baking sheet with parchment paper.

    Place tomatoes cut side up on the lined baking sheet. Drizzle about 1 tablespoon of olive oil over the tomatoes, lightly salt and pepper.

    Roast the tomatoes for about an hour. They should be lightly browned and soft. Take them out and allow them to cool. Don’t worry if some of the tomatoes get a bit blackened, it may change the color of the pesto, but it really enhances the flavor. I prefer them this way.

    Once cooled take about 3/4 of the tomatoes and add to the food processor, reserving the rest to add to the pasta. Process until finely chopped, to your desired texture. Remove and set aside. Add the toasted nuts and the garlic and pulse a couple times until finely chopped. Add the basil, nutritional yeast and lemon zest, continue pulsing to combine. Pour in the oil and the tomatoes. Process until smooth. Season with salt, pepper and red pepper flakes.

    Pour as much pesto over your pasta as you would like. If your pesto is thick like mine was, add in some of the cooking water to the pasta and pesto, to thin it out. Toss it all well to combine and get all of the pasta coated. Top with additional toasted almonds, fresh basil and if you’d like, some of the roasted tomatoes.

    This recipe is one of those times I created something on the fly with what I had on hand, haphazardly adding ingredients that made sense to my vision, doing my best to measure and take photos when possible. This particular night I hadn’t made any plans for dinner, it was getting late and I came up with the idea to grill some green beans that we had from our CSA and sugar snap peas I had that also needed to get eaten up. I am pretty sure Mark was a tad apprehensive about having so much green stuff for dinner, but let’s be honest he had no choice really! It was this or cereal. We all know those nights.

    I decided to snap photos while I was making this, since some of my most favorite dishes I create are the ones that I don’t stress over, that are inspired by what is fresh from our farmer and what is quick and easy. The sun was literally setting quicker than I could get this served up, so although these may not be the most glamorous or well-styled photos, this dish was far too good not to share with you guys, especially with green beans in season right now.

    For the record, Mark absolutely LOVED this green dinner! He couldn’t get over all the flavor and how filling it all was served over a small serving of brown rice. I liked it because for not only the wonderful flavors, but the fact that in less than 30 minutes I went from not knowing what to make us, to this delicious, light and satisfying dinner.     I get really excited as different fruits and veggies come into season. Whether in my garden or a neighbors’, at the farmers market or in my weekly CSA box. Tomatoes, especially the beautifully vibrant heirloom varieties, that is my favorite time of the season. If those don’t feel/taste like summer. I don’t know what does.

    This vibrant and fun vegan take on the traditional caprese salad celebrates all that is great about summer!  Instead of mozzarella, I substitute creamy avocado, which works so well with these flavors. I had some beautiful basil from my garden, some red onions from my friend Dan’s garden plus some beautiful heirloom tomatoes and an avocado from the local farmers market. It doesn’t get much more fresh than that.

    Zucchini!!! We have lots of it and I have been doing my best to get creative with it.  I’ve made a raw zucchini appetizer, I baked chocolate zuccini muffins, I have made more zucchini “pasta” than I would like to admit and the rest have been getting grilled. These simple to make bites are naturally gluten-free and vegan and work well as a bite-sized appetizer or a delicious side dish.

    Last weekend we had dinner plans with Meg and Todd from Beard & Bonnet, who live just around the corner from us and I offered to make something with my homegrown zucchini. Besides being insanely excited to have another food blogger nearby, one who I happen to have a ton in common with, I was also super excited to eat at another gluten-free household where I could be certain everything was 100% safe to eat! Really made for an extra special night.

    Meg was making her delicious homemade falafel, so I came up with these Quinoa Stuffed Zucchini Bites. They have so much flavor and they are easy to make, I pre-stuffed the zucchini and popped them in the oven when we got to their house. We ate a few before dinner as appetizers and served the rest as a side dish with our meal. If your zucchini is small enough, these bites are the perfect size for picking up with your fingers and popping into your mouth.

    [print_this]Quinoa Stuffed Zucchini Bites – Gluten-free + Vegan
    Serves 4 to 6 as an appetizer or 2 to 4 as a side dish

    • 2 medium-sized zucchini
    • 1 tablespoon olive oil, plus a little extra, if need be
    • 1 small onion, chopped
    • 2 garlic cloves, minced
    • 1/2 cup uncooked quinoa, rinsed
    • 1 cup vegetable broth or water
    • 2 teaspoons fresh thyme
    • 1/4 teaspoon sea salt
    • 1 cup cremini mushrooms, chopped
    • 1/2 cup sun dried tomatoes, in oil, roughly chopped + some of the oil they are packed in
    • 1/4 cup fresh basil, thinly sliced or roughly chopped
    • Salt and Pepper, to taste

    Preheat the oven to 375ºF. Lightly oil a large baking sheet or line with parchment paper or a silpat.

    Slice off the tops and bottoms of your zucchinis, and then cut them into 1 to 1 1/2-inch long segments. Stand each segment up on one of the cut sides, and use a melon baller (or spoon) to remove the center flesh. Be careful not to scoop all the way through the bottom and create a hole (if you do make a small one, it’ll be fine). Arrange the hollowed-out zucchini pieces onto your prepared baking sheet so that they’re ready to go. Set aside.

    Heat up the olive oil in a small sauce pan, add in the onion and garlic, sauté for about 2 to 3 minutes, then add the quinoa. Stir it around and let the quinoa get coated in a little oil and let it toast up for a minute.  Add in your liquid (broth or water), thyme and sea salt. Bring to a boil, then cover, take the temperature down to low and let it simmer for 15 minutes.

    While the quinoa is cooking, chop your mushrooms and sun dried tomatoes. After the quinoa is cooked, add it to a medium sized bowl. In the same pan you cooked the quinoa in, add a little more olive oil if need be and quickly sauté the mushrooms, just a couple of minutes until they are soft.

    Add the mushrooms, sun dried tomatoes and the fresh basil to the quinoa. Stir everything together add salt and pepper, to taste. I like to add some of the oil from the jar of sun-dried tomatoes to the stuffing, maybe 1 tablespoon or two. You could also just use a little more olive oil.

    Spoon the mixture into the prepared zucchini pieces, letting it mound up as much as you’d like. Bake for 25 to 30 minutes until the stuffing is lightly browned and the zucchini is slightly tender (you don’t want them to get overcooked or they will be too mushy and be hard to eat).[/print_this]

    I’ve been trying to be super creative over here with zucchini. I planted ours from heirloom Italian seeds in our garden and they did wonderfully, they grew far better and far faster than anything else out there. We have a lot of zucchini. I have been bringing them to all of our friends.

    This simple salad is inspired by a snack I have had a few times from Trader Joes. Chile Spiced Dried Mangoes.  I really love these, but I don’t love that they contain sugar, so I wanted to make something at home that has some of the same flavors but was a bit healthier and fresher

    This salad is super simple to make, it takes longer to peel and cube the mango than anything else. The spice from the chili powder is so nice with the bright, fresh and sweet flavor from the mango and the coconut chips bring a great welcomed crunch to the salad. I like to add in a little dash of chipotle powder because that smokey taste is just so complimentary, but it is definitely optional. This salad is great on it’s own or it makes a wonderful side dish for a BBQ or picnic.     I know you guys are aware just how much I adore cooking foods inspired by the season and what is most fresh. I don’t have to sell you on that. This salad came from a recent trip to the farmers market where I decided to grab the most delicious, in-season produce I could and just create from there. I had no clue what I was making when I bought everything, I just got it home and started brainstorming.

    Spring Potato Salad with Sugar Snap Peas and Radishes - Gluten-free + Vegan
    This salad is full of flavor, beautiful Spring colors and I love the combination of the tender baby red potatoes with the crunch for the sugar snap peas and the radishes. Plus the light dressing, is such a nice alternative to the usual creamy mayo-based dressings on most potato salads. The mint is the perfect compliment to the salad, finishing it with a bright, fresh flavor.

    Spring Potato Salad with Sugar Snap Peas and Radishes - Gluten-free + Vegan

    Servings: 4 -6

    Ingredients 

    Dressing

    • ¼ cup olive oil
    • 2 tablespoons white wine vinegar
    • 2 tablespoons whole grain dijon mustard
    • 1 clove garlic, minced

    Salad

    • 1 lb baby red potatoes, washed and cut into 1/2-inch slices
    • ½ lb sugar snap peas, trimmed
    • 1 small bunch radishes, 4 to 6, trimmed and sliced thin
    • 1 /2 small red onion, sliced thin
    • 2 tablespoons fresh mint, sliced thin
    • salt and pepper, to taste

    Instructions

    • Whisk the 4 dressing ingredients together in a small bowl to combine. Set aside.
    • Set up an ice bath in a large bowl, by filling it with cold water and ice cubes. Meanwhile bring a medium saucepan of salted water to a rolling boil, add the sugar snap peas and blanch for 1 to 2 minutes, immediately remove the snap peas to the ice bath with a slotted spoon. Leave the pot of water on the stove and over a medium-high heat. Add the potatoes to the same pot and bring the water back to a boil. Cook for about 10 minutes, until the potatoes are just tender.
    • Drain the potatoes and if you want to cool them quicker, run some cold water over them.
    • Once the snap peas and potatoes are cooled and drained (you can pat them dry to make sure they are nice and dry), add them to a large serving bowl with radishes, onion and fresh mint. Mix the dressing and pour over the salad. Toss gently to combine. Salt and pepper, to taste.
    • Serve at room temperature or cold, and enjoy!

    Imagine my excitement when I came across gluten-free couscous at the Whole Foods here a few weeks back. And on a sale rack, to boot. It has been over 8 years since I have had couscous. I know it’s nothing fancy to get excited over. I know it’s really just tiny pasta, but there is something so fun about it and come on, who doesn’t love tiny food?

    I immediately decided I would make a simple salad highlighting both the couscous and some green lentils, which I have been obsessed with lately. With roasted red peppers and marinated artichokes already on hand, how could I not make it Mediterranean inspired?

    This simple but full-of-flavor salad is perfect for lunch or as a side dish. I even served it as a meal with some of my baked falafel, with a drizzle of the tahini dressing on top, one night for dinner. So many wonderful textures and tastes.

    Ingredients 

    • 2 cups cooked couscous, cooled (I used gluten-free brown rice couscous)*
    • 2 cups cooked green lentils, cooled
    • 2 stalks celery, chopped
    • 1 small red onion, finely chopped
    • 3-4 roasted red peppers, chopped
    • ½ cup marinated artichoke hearts, roughly chopped
    • 3-4 cups spring mixed greens, or other greens like arugula, baby spinach, etc

    Vinaigrette:

    • 3 tablespoons balsamic vinegar
    • ¼ cup olive oil
    • 1 tablespoon whole grain mustard
    • 1 clove garlic, minced
    • 1 teaspoon fresh oregano, roughly chopped (or less if using dried)
    • salt and pepper, to taste
    • Optional: Top with crumbled feta or goat cheese, if not vegan

    Instructions

    • In a small bowl wisk together all of the vinaigrette ingredients and set aside.
    • In a large serving bowl add all of the salad ingredients and toss gently to combine. Just before serving pour the vinaigrette over top and gently toss again to incorporate. You may not want all of the dressing on there, so don’t dump it all over at once. Salt and pepper to taste and serve.

    Happy New Year Everyone!! Is everyone as excited to welcome 2013 as I am? We have a lot on schedule for this year and at the stroke of midnight on New Year’s Eve it all felt very real! We are still in the middle of packing up our house for the big move to California. The moving truck comes on Friday and our house closes in just over a week and we have been working like crazy to wrap up all of the end of year loose ends with the business and to go through the house room by room to decide what is making the move, what can get donated and what can be sold. It has been an arduous few weeks with the holidays squished into the middle of it all, but it was a welcomed distraction during such a stressful time.

    A few days after Christmas we had an emergency scare with our dog Seri, when she got into some gum with Xylitol in it. As you can imagine, this definitely aded to the stress. You can read a little about it here. I do plan to do a post here on Tasty Yummies about our experience, as well. I would like to share my story and get the word out about how dangerous and highly xylitol is for dogs, since the I feel that not enough dog owners know. I am so grateful for the other food bloggers that have mentioned it, otherwise I wouldn’t have known to act quickly. I consciously do not keep it in the house, but I didn’t know it was hidden in so many common things. I was unaware we even had it in the house. She is thankfully (and very luckily) OK now, but it was a very rough few days, my body actually broke out into a full on cold in the middle of it. I could feel I had been fighting it for a few days and I guess the stress of worrying about my baby just brought it on full force.

    With our pooch being back home with us now and yesterday officially ending the holidays and making this move our only focus, the stress of it definitely hit me like a ton of bricks last night. I am not at all a person stricken with anxiety in the least, I consider myself to be mostly calm, but wow, is this move testing me on that. You always hear people say that a big move is one of the most stressful things you can ever go through. They aren’t kidding.

    I have been trying to find as much time to cook as I can in this time, since like my yoga it is one of the most calming and soothing things to me. I made a huge pot of chicken pho when my cold was in it’s full force and it was so perfect! I also made a big feast on New Year’s Eve for hubby and I. Yesterday we had dinner with my family at my parents house and since I am now in full-on clean out the fridge and pantry mode, I decided to come up with a salad inspired by what is in season and in my fridge!

    Everyone absolutely LOVED this salad, which made me so happy! It is full of beautiful vibrant colors and bright fresh flavors. If you can’t find baby kale, you could also use arugula, baby spinach, field greens, frisée, endive, etc.

    I am starting to pack up my kitchen stuff today, so this may be the last recipe post you see for a while. We will be temporarily staying with my parents for a few weeks while we fly out to California to find a house and get everything in order. Hopefully I will have some time to cook for and with my parents in that time.

    Baby Kale and Roasted Sweet Potato Salad with Pomegranate and Toasted Pine Nuts

    serves 4-6

    Salad:

    • 2-3 small/medium organic sweet potatoes, cleaned well and cut into 1-inch cubes, I leave the skin on
    • 1 tablespoon olive oil
    • 1/2 teaspoon dried thyme
    • 1/4 teaspoon onion powder
    • sea salt and pepper, to taste
    • 5 cups organic baby kale (or arugula, baby spinach, field greens, frisée, endive, etc.)
    • 2 green onions, thinly sliced
    • 1/4 cup toasted pine nuts
    • 1 small organic pomegranate, seeded – you are looking for about 1/2 to 3/4 cup of seeds

    Dressing:

    • 1/2 cup olive oil
    • 1/4 cup fresh squeezed orange juice, plus some fresh orange zest
    • 2 tablespoons champagne vinegar (or white wine vinegar)
    • 2 small cloves garlic, minced
    • 1/8 teaspoon red pepper flakes (optional)
    • sea salt and pepper, to taste

    (I didn’t need all of this dressing, so use as much as you’d like and then store the rest in a sealed container in the fridge for other salads)

     

    Preheat the oven to 400ºF. Toss the sweet potatoes with olive oil, thyme, onion powder, salt and pepper. Spread into a single layer on a baking pan and roast for 20-30 minutes until they start to brown and are tender. Set aside to cool.

    While the potatoes are roasting make the dressing. Whisk all of the ingredients together. Taste and adjust seasonings, as needed.

    After the sweet potatoes have cooled a bit, layer those on top of the baby kale in a large serving bowl, add the green onions, toasted pine nuts, and top with toasted pine nuts and pomegranate seeds. Toss with the dressing just before serving (you may not need all of it, so add slowly). Grate a little fresh orange zest on top as you are serving.

    Last, but certainly not least, in our Very Tasty Thanksgiving series we have a beautiful dish from Jeanine of Love and Lemons. I absolutely LOVE everything about Jeanine’s site, from the photography and design, to of course, all of the incredible recipes. Jeanine and her husband Jack work together on the site to create some of the most beautiful looking photos and styling you will ever see, always swoon worthy.  Jeanine isn’t exclusively gluten-free or vegan, but many of her recipes naturally are, and she always celebrates what is seasonal and fresh, so it is a great resource no matter what your eating restrictions are.

    We know this recipe is coming in just a day before Thanksgiving and many of you have your meals totally planned and shopped for, but not all of you are in America and celebrating Thanksgiving and some of you may also just want a simple, yet still very delicious and seasonal alternative to the turkey and all the sides. Besides being a great possible side at your holiday feast, this risotto would also make the perfect meal for the day after Thanksgiving when you want something beautiful, seasonal and delicious and light.

    Butternut Squash Risotto - Gluten-free + Vegan

    I’m so happy to participate in Beth’s Very Tasty Thanksgiving! I’m up last, but I’m so excited to make the other recipes that have gone up before mine – they all look so delicious!

    Now that it’s the day before Thanksgiving, I’m sure most of you have finished planning and shopping for the big meal. You’ve moved onto either preparing your feast, or are en route to your Thanksgiving destination.

    I’m sharing a recipe that I made one Thanksgiving when my husband and I decided to stay home and celebrate, just the two of us. It was one of the nicest, stress-free holidays we’ve ever had. We avoided the grocery store rush by going to Whole Foods that very afternoon (the best time to go, btw, the store is empty). I made this butternut squash risotto with leeks, sage and rosemary… it was the essence of Thanksgiving, without having spent all day cooking. A perfect meal for 2.

    Butternut Squash Risotto - Gluten-free + Vegan

    serves 2 with leftovers.

    INGREDIENTS:

    butternut squash:

    • 1 tablespoon olive oil
    • 1 cup butternut squash cubes (about 1 cm)
    • salt, pepper
    • 1/4 cup veggie broth

    risotto:

    • 2 tablespoons olive oil
    • 1/2 chopped onion
    • 2 cloves of garlic, minced
    • 1 large leek, sliced (white and light green parts only)
    • 1/2 cup white wine
    • 1 cup organic arborio rice
    • 3 cups veggie broth
    • 1-2 tablespoons earth balance butter
    • 1/4 cup finely chopped sage
    • 1 teaspoon finely chopped rosemary
    • 1/4 cup toasted pine nuts (optional)
    • a few pinches of red pepper flakes
    • salt, pepper

    METHOD:

    butternut squash:

    First, start your butternut squash. Heat oil in a medium skillet over medium heat. Add butternut squash cubes, salt and pepper. Cook until they start to brown, gently flipping, to get color on the other sides… about 5 minutes. Before they start to brown too much, add the veggie broth and stir. Reduce heat to low. Heat until they are tender and cooked through. Approx 20 minutes, depending on the heat of your stove. If the broth cooks down before they are done, add some more (or some water) to keep them from burning to the bottom of the pan.

    risotto:
    When the squash are at least half done, start your risotto. Heat oil in a large skillet over medium heat. Add the onion and half the leeks, and a bit of salt and pepper. Cook until the onion is translucent (but not browning), about 8 minutes. Add the rice, mix it together with the onions so the dry rice toasts a little bit. (about 1 minute). Add the wine, scrape up anything that’s sticking to the pan, and let the wine simmer down for another minute.

    Add broth 1 ladle at a time, stirring continuously. Each time the liquid cooks down, add another ladle full. Before you add the last ladle of broth, add the butternut squash, the remainder of the leeks, rosemary and sage, a pat of (vegan) butter. Stir to combine. Taste and adjust seasonings. Serve immediately. Top with pine nuts and a pinch of red pepper flakes.

    * alternatively, you can add your butternut squash cubes to your risotto pan right after the onions… as you cook your risotto they will melt apart into the risotto rather than remain cube shaped. Both ways are equally delicious.[/print_this]

    Garlic Maple Sweet Potato Casserole - Vegan + Gluten-free

    How’s everyone doing today? My name’s Leanne and I blog over at Healthful Pursuit, a wholesome living blog dedicated to allergen-free living, holistic nutrition and intuitive eating. I’m super pumped to be sharing a new healthy Thanksgiving recipe with you!

    Recently; as in yesterday, a bunch of friends, clients, readers, family members and I were on a two week cleanse to clean up our dietary habits and prepare our bodies for Winter. Knowing full well that we’d all be finishing a cleanse when I was contributing to Beth’s Thanksgiving roundup, I planned to prepare a recipe for us today that was as cleanse-friendly as possible, while still being more than acceptable to be prepared for any Thanksgiving feast.

    Instead of the sugar-laden sweet potato casserole that we’re all used to, I’m coming at you guys with a clean-eating sweet potato casserole that’s so ridiculously good that you wont miss the marshmallows, corn syrup or brown sugar.

    There’s nothing I hate more than a Thanksgiving food comma and this recipe will not contribute to a drowsy Thanksgiving evening, that’s for sure.

    Garlic Maple Sweet Potato Casserole - Vegan + Gluten-free

    [print_this]Garlic Maple Sweet Potato Casserole (Vegan + Gluten-free)

    Serves 4

    Casserole ingredients:

    • 2 medium sweet potatoes
    • 3 tablespoons dairy-free yogurt
    • 2 garlic cloves, minced
    • 2 teaspoons maple syrup
    • 1/4 teaspoon chopped fresh ginger
    • 1/4 teaspoon sea salt

     

    Topping ingredients:

    Garlic Maple Sweet Potato Casserole - Vegan + Gluten-free

    Begin by roasting 2 medium sweet potatoes. To do this, preheat your oven to 375F and place the sweet potatoes in the oven. Simple as that. Leave to cook for about 30-40 minutes, until potatoes are tender. To test, you can poke with a fork or butter knife. Once complete, remove from the oven and allow to cool for a couple of minutes.

    Reset oven to 350F and lightly oil a 4-cup casserole dish. Set aside.

    Remove the skin from the sweet potatoes.

    Garlic Maple Sweet Potato Casserole - Vegan + Gluten-free

    Keep the skin for later, it makes a fabulous snack with a sprinkle of sea salt. Trust me, it’s delicious!

    Garlic Maple Sweet Potato Casserole - Vegan + Gluten-free

    Place the peeled sweet potatoes in a medium sized bowl, add the remaining casserole ingredients and mash with a potato masher until fully incorporated.

    Garlic Maple Sweet Potato Casserole - Vegan + Gluten-free

    Spoon mixture into the prepared casserole dish and flatten with the end of a spoon. Set aside.

    Combine topping mixture in a small bowl.

    Garlic Maple Sweet Potato Casserole - Vegan + Gluten-free

    Stir to combine, then drop over top of the sweet potato mix.

    Place in the preheated oven for 40-45 minutes until the top is golden.

    Remove from the oven and allow to cool for about 10-15 minutes before consuming. [/print_this]

    If you’re like me and you’re in Canada, this could easily pass as an everyday meal too. Pair with a chicken breast, maybe a bit of steamed veggies and you’re rockin’ it, regardless if Thanksgiving has come and gone already.

    I shared this recipe previously when I made it last year for Thanksgiving. It was such a hit, so easy to make, I couldn’t let it get passed by this year. Anything raw and this healthy should be celebrated on a day of indulgences.

    Next up in our Very Tasty Thanksgiving series is Cara of Cara’s Cravings. I came across Cara’s site earlier this year and I have always enjoyed every recipe that pops up in my feed from her. Although Cara isn’t exclusively gluten-free or dairy-free, she prepares a good amount of recipes that are naturally both and where she and I really share a common bond with our food is our love of eating clean and wholesome foods! Cara believes in healthy, seasonal clean eating, but doesn’t believe that has to mean compromising the flavor or fun of a meal. I couldn’t agree more.     Butternut Squash Souffle - Gluten-free + Dairy-free

    As much as it pains me to say it, and surprises all my friends who know I love to cook and entertain, I have never – and probably will never – host Thanksgiving.

    Food blogger blasphemy, right?!

    But you see, when I married my husband Ben, I also married his family in Philadelphia. And in this family, Thanksgiving is always in Philly. I know, it would seem like we should compromise and switch off every year between my family and his, but thing is, I really can’t complain. My family is all here in Massachusetts. And, I’m Jewish, so we get lots of big holiday dinners with my family: Rosh Hashanah (x3), Yom Kippur (the night before and break-fast), Hanukkah, and Passover (x2.) Oh, and did I mention my Dad converted to Judaism? So yeah, I get Christmas and Easter with the other side of the family too. I have no grounds to demand that we stay here for Thanksgiving. Unless of course there was a snow storm – but we’ve even trekked down there for a Bar Mitzvah when that was the case.

    But that doesn’t keep me from making Thanksgiving-esque dishes throughout the holiday season. You should see the amount of winter squash that comes through this kitchen. I love to stock up from farmers’ markets and for some reason they all get stored at the far end of the kitchen counter, which my husband has affectionately labeled, “Squash Alley.”

    This year, I got my bottom in gear and prepared a whole turkey dinner weeks before the big day so that I could join in the blogger fun and actually have Thanksgiving dishes to share.

    Butternut Squash Souffle - Gluten-free + Dairy-free

    Well, that’s kind of a lie. I made all the side dishes and asked my dear friend V to take care of the bird. I’m not one to do anything too terribly creative with a turkey, but wholesome stuffings, sides, and salads are what I’m all about!

    While I don’t eat an entirely gluten free diet, I tend to cook a lot of gluten free dishes, whether that be recipes with more nutritious whole grains that happen to be gluten free, or entirely grain-free dishes. Same goes for dairy. I try to keep in moderation, and that opens up a whole wide world of ingredients like nuts, coconut, and tofu.

    This Butternut Squash Souffle is a dairy-free, gluten-free side dish I’ve been making for a couple of years now at this time of year. It’s sweet, but not too sweet (come on, as if there is such a thing!) and has a light and fluffy texture. While I’d love to put it on my Thanksgiving table, I’ll happily settle for serving it at my pre-holiday bash, Hanukkah party, or dinner any time I feel like it.

    Butternut Squash Souffle - Gluten-free + Dairy-free

    Adapted from The Food Lovers’ Primal Palate Carrot Souffle

    • 2lbs peeled, diced butternut squash
    • 1 quart low-sodium, organic chicken broth (or vegetable broth for vegan option)
    • 1/2 cup chopped yellow onion
    • 1/4 cup coconut oil, melted and cooled
    • 1/4 cup unsweetened vanilla or plain almond milk
    • 1/4 cup maple syrup
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon nutmeg
    • kosher salt and freshly ground pepper, to taste
    • 1 tablespoon coconut flour
    • 3 large eggs

    Preheat oven to 350ºF. Grease a large souffle dish or individual ramekins with coconut oil or cooking spray.

    Place squash and broth in a saucepan and bring to a boil over high heat. Cover, reduce heat to low, and simmer for 20 minutes, until squash is very soft. Drain squash (reserve the broth for another use, if desired) and transfer to a food processor. Cool for 15 minutes.

    Add onion, coconut oil, milk, and maple syrup. Process until smooth. Blend in cinnamon and nutmeg, and season to taste with salt and pepper. Lastly, blend in coconut flour and eggs.

    Pour the mixture into the greased dish(es). Bake for 45-50 minutes, until puffed and set. Serve hot.

    This dish may be refrigerated and reheated when ready to serve, although it will lose its “puff” it will still be just as delicious. [/print_this]
