    Spiced Apple Cider Margarita - Two Ways

    I have a very serious question for all of you… how in the heck is September almost over? Actually, make that two questions, I also want to know where the summer has gone? The Autumnal Equinox is just two days away and I honestly feel like summer just began. It probably doesn’t help that it has been a very busy summer and I have been traveling for most of this month. 12 days in a row were spent away from my home as I explored Maine, visited my family in New York, then returned home to quickly leave a mere 12 hours later, to visit a ranch and explore the adorable small town, Julian, CA.

    I always find the end of September and the start of October to be a highly charged time for me, with lots of energetic shifts. Not only is change in the air with the start of a new season, but the fall equinox celebrates the equality of light and dark. As the sun shines directly on the equator, we experience (nearly) equal hours of daylight and darkness, all across the world! How cool is that? Because of this, the shift into fall focuses our energies on balance and as a libra, this equanimity is vital to my very existence. I thrive in the balance and I find myself at my best, most aware and most creative at this time.

    Over the past few weeks I have had many reminders, presenting themselves in many different forms, to “honor yourself”. It’s easy in the busy time of summer to get lost in a sea of plans, to constantly be honoring promises to others and to fill the long days with socially-charged commitments. Summer is so focused on putting ourselves and our creations out into the world, feeding them and encouraging their flourishing growth in all the light surrounding us. I find as we transition toward darker days, the need to pause, to go within and to harvest our creations from these previous months. This time of rebalancing of our lives is the best for shifing our focus toward honoring our self. Armed with this knowledge of this time, the readings, reminders and messages, I have been able to focus on my energy inward these past few weeks. I have started to give myself the room to honor me and it has given me the space to see much more clearly.

    Beyond this balance and the start of this energetic shift, with this new season I also very much enjoy the very literal harvest taking place, of the foods we eat and are creating. Apples and winter squashes, warming spices, stews, soups and baked goods. After our trip to Julian, CA at the end of last week, a town known for it’s apples, I was feeling inspired to create an apple pie with the beautiful apples we brought back. I planned to create a grain-free pie reminiscent of the slice of delicious gluten-free Apple Boysenberry Crumb Pie I had from a small bakery off Main Street. As I finished the last few bites of this pie, I dreamt of filling my own kitchen with the spicy, comforting aroma that filled this tiny little gold-mining town. Sadly, mother nature had other plans for me with her 100 degree summertime-like temperatures. While I really wanted to create this pie to share with you, I couldn’t imagine turning my oven on and slaving over peeling apples and rolling out dough. I chose to instead create another recipe, honoring the swing season. This special, but brief time where summer and fall meet.

    Sometimes you find yourself in places and situations you hadn’t planned. Life is funny that way. How do you handle it? Can you roll with the punches? I like to believe that ultimately there is a plan for me, it helps with those little bumps and the unplanned surprises. As Seane Corn, one of my favorite yoga teachers says “everything happens as it is supposed for our souls to transform”. Not only do I now believe and live by this, but it has also allowed me to be much more open and flexible in my life. I know that things unfold as they should, oftentimes to teach me something. It has allowed me to see things with clearer eyes and to allow things to transform and evolved as they are meant to. I wasn’t always able to do this. This is a practice I have been working at for sometime now. In the past, if I set a plan and things veered off course, I would at times get a little freaked out and possibly allow to ruin my day or whatever situation I was in. It was never fun. Not only did it make the situation harder to deal with, but it made me harder to deal with. It’s not to say that is still doesn’t happen now and again, that I too don’t need these reminders once in a while.

    What does this have to do with a tuna salad I’m sure you are wondering? The first time I made this salad, was in one of these very situations where I was being tested. My husband, Mark, and I, were planning a quick summery dinner of grilled ahi tuna steaks. We bought these beautiful wild-caught tuna steaks and I had planned an Asian-inspired meal around them, we were going to to serve them over cauliflower rice with a quick arugula salad on the side. I was thinking ginger, coconut aminos, garlic, sriracha. I asked Mark to grill them up quick, a task he has done many, many times before. Seared tuna steaks need but a couple minutes per side, to keep that beautiful rare center that this particular cut lends itself so well to. Overcooked tuna steaks can be a bit dry and tough.

    Just a little FYI, for those considering a move to California, or any other vacation-ready destination, be prepared for lots of house guests. At times your home will feel like a Bed and Breakfast. While it’s fun to have house guests and show them around Southern California, it can be a challenge to come up with meals to please everyone.

    I absolutely, love to feed people but I put a lot of pressure on myself to create meals that not only work for me and my eating preferences and restriction, but foods that will also keep our visitors happy. I am a simple girl. I like to start my day with a green smoothie or some sautéed veggies. I know this type of eating doesn’t always fly for everyone else, so I am always challenging myself to create gluten-free recipes that will work for everyone.

    It’s quite fitting that my fifth and final recipe for this series of healthy travel snacks, I created with Albertsons, is being written from around 37,000 feet in the air. I am flying from California to the East Coast where I will be spending a total of 10 days between Maine and New York. As usual, I have a large selection of healthy snacks packed away for my travels. While I find when flying I have to be a bit more selective with my snack choices, homemade energy bars are always a must. They are super travel-friendly and so simple to whip up the night before my trips.

    By now I am sure you’ve caught my tutorial on how-to make your own homemade energy bars, but if you haven’t get to it. It’s the perfect formula to create the perfect bars for your favorite flavors. These bars were one of the few that I have made more than a few times and inspired the ideas of the adaptable tutorial.

    These tropical-inspired bars are a great, healthy snack for bringing along on your vacation, but they are also a wonderful way to bring the vacation to you at home. Coconut and pineapple always summons the tropics. Think fancy frozen drinks with umbrellas on the beach.

    These particular energy bars are made nut-free, but you can certainly add nuts to fill them out a bit more, if you prefer. Almonds, walnuts, pecans – these are all great options.

    Listen, I am not even going to try to claim any bit of this whole one-pot pasta thing, as my idea. If you have spent more than 5 minutes on Pinterest you will know that this phenomenon has swept the internet in the past few years and it’s definitely not going away. In fact, you can even read about the back story and learn where the trend originated.

    But, just because I can’t have gluten and I prefer to avoid dairy, doesn’t mean I shouldn’t be able to partake. In fact, I took it all a step further after a trip to the farmers market, adding as many end-of-summer veggies as I could, because duh – veggies are the best!!

    Farmers Market One Pot Pasta (Gluten-free)This hearty, creamy, Late Summer Farmers Market One-Pot Pasta dish can be made in just about 20 minutes, from start to finish, with just one pot to clean. It’s gluten-free and naturally vegan, plus you can easily adapt it to what is most in-season and highlight your favorites! I love that without any dairy this pasta is creamy and rich. Of course, if you are a cheese-eater, go to town and top it with your favorite shredded cheese.

    For my paleo and grain-free friends, you can grab an alternative recipe today where I am sharing a version of this one-pot pasta dish featuring zucchini pasta (aka zoodles)

    Farmers Market One Pot Pasta (Gluten-free)

    Late Summer Farmers Market One-Pot Pasta (Gluten-Free)

    gluten-free, dairy-free, egg-free, nut-free, vegetarian, vegan

    Prep Time: 10 minutes
    Cook Time: 12 minutes
    Total Time: 22 minutes

    Ingredients 

    • 12 ounces organic brown-rice spaghetti-style pasta, gluten-free
    • 1 pound cherry or grape heirloom tomatoes, halved or quartered
    • 1 medium onion, thinly sliced
    • 3 cloves garlic, thinly sliced
    • 2 sprigs basil, plus additional, roughly torn for serving
    • 2-3 zucchini, thinly sliced and quartered
    • 2-3 large handfuls kale, roughly chopped or torn, stems removed
    • 2 tablespoons extra virgin olive oil
    • 2 teaspoons coarse sea salt
    • ¼ teaspoon freshly ground black pepper
    • ½ red pepper flakes, optional
    • 4 cups water
    • for topping: zest from 1 lemon

    Options:

    • top with Parmesan or Romano cheese, shredded
    • sprinkle nutritional yeast on top for vegan cheesy flavor
    • opt for leeks or shallots instead of onion
    • try other veggies based on the season, peas, green beans, broccoli or cauliflower, bell pepper, mushrooms, etc
    • if not dairy-free, add cream at the end for even more rich, creaminess
    • if you are a meat-eater, you can add also add sausage or pepperoni

    Instructions

    • Combine all of the ingredients in a large high-sided pan, a stock pot or Dutch oven. Cover and bring to a boil over a high heat. Reduce the heat, remove the lid and simmer uncovered for about 9-12 minutes, until the pasta is cooked through and the liquid reduced. While it’s bubbling away, be sure to stir often to keep it from sticking. The pasta will continue to absorb the liquid as it sits. Serve immediately topped with fresh basil, shredded cheese or nutritional yeast.
    • PLEASE NOTE: The amount of water called for in this recipe was calculated using brown rice spaghetti. If you use normal pasta or a different gluten-free pasta, please be aware that it may alter the amount of liquid required. It is best to start with a smaller amount and add more, as needed.

    To know me, is to know my insane love of dark chocolate. As long as I am not on any elimination diets or protocols, it’s nearly always part of my daily routine, whether I am on the road or at home. In the freezer, I nearly always keep a bar or two of the best, darkest, organic fair-trade chocolate that I can easily get my hands on. It’s rare you’ll see me crushing on a cake or cookies, but if I pass by a good bar of dark chocolate, it will most certainly stop me dead in my tracks. Generally, I simply need a square or two of the good, dark stuff and I am a happy girl.

    Dark Chocolate Bark Bites

    Naturally lower in sugar than milk chocolate or other candy and certainly less than most baked goods or other treats, it’s just the right amount of flare at the end of a well-made savory meal. Besides being the most perfectly created food, chocolate with a cocoa content of 70 percent or higher contains resveratrol, which has been found to lower blood sugar. Dark chocolate also has positive affects on lowering “bad” cholesterol levels. Dark chocolate is rich in Flavonoids that help protect plants from environmental toxins and help repair damage. You only need about 1 to 1.5 ounces dark chocolate per day to see the heart healthy benefits.

    Flavonoids, which can also be found in green and black teas, cherries, apples, red grapes and other deeply colored fruits and vegetables, have also been known to help with digestion, improve kidney, bowel function and sexual performance, and treat anemia and gout.

    If I am traveling, you better believe that dark chocolate is my co-pilot. An integral part to any good trip, it’s an instant way to bring a smile to your face amongst the crazy hustle and bustle of an airport and the long and sometimes tiring long drives.

    Surely you can just pack a dark chocolate bar, but I find these Dark Chocolate Bark Bites are a fun way to indulge in additional superfoods, your favorite goodies or just the stuff in the pantry you need to use up. Dried nuts or seeds, dried fruit, spices, sea salt – if you like salty or savory, add some crispy bacon, crushed pretzels or potato chips.

    These little bark bites travel so well and you can really have fun with the toppings, making a little something for everyone.

    Is there anyone out there that doesn’t like Mexican food? I mean really! I feel like there’s a reason that every Taco Tuesday is celebrated with such enthusiasm and why Cinco de Mayo has turned into a way bigger deal here in the US than it is even in Mexico.

    I was craving enchiladas recently and I thought it was time I created some, with my spin on it. You may remember I created and shared a tutorial on How-to Make Plantain Tortillas a while back and while I absolutely love them, I just wasn’t sure they would hold up in this recipe. So instead I turned to the Urban Poser’s amazing Cassava Flour Tortillas. These tortillas (made with cassava flour), they are serious business, chewy and flexy, they hold up incredible well and they aren’t too much work to make – once you get into the rhythm. They held up fantastically well in this recipe. No breaks and no splits. Clearly you can opt for any tortillas you’d like here, I just love that these allow for grain-free enchiladas.     As summer winds down, I am clinging to every last bit of the season that I can. I refuse to acknowledge it’s almost over. Keeping with the theme of healthy summer road trip snacks this Honey-Sweetened Strawberry Fruit Leather is the perfect way to take the sweet tastes of summer with you, wherever you go.

    This fruit leather recipe calls for strawberries but you can use this as a guide to create fruit leather with whatever fruit you have an abundance of. Peaches, apricots, apples and so on. You can even create a blend of your favorite fruits.

    Fruit leather gets a wrap for being a kids-only snack, but I can tell you, adults truly love the stuff, too. This could partially be the fact that it will instantly transport you to being a kid. It’s also great for travel and being on-the-go, just roll it up with a little parchment paper and pack it into your bag and you are ready to go. Sweet, summer berry goodness, wherever you are. Try out different berries or other seasonal fruit for additional variations. For a smoother leather, you can strain the seeds or any pulp before dehydrating, if you’d like. You can cook the fruit first if you’d like to intensify the flavor a bit.

    At our core, we are all balance. It’s how we are meant to exist, it is necessary to our survival. It is how we choose to live our lives, in the most simplest of forms, that take this delicate rhythm away from it’s natural state. As I was creating this recipe, it struck me, like a huge truck in fact, I am truly the epitome of a libra and a middle child, through and through. I like when things are even and balanced, I like to see all sides, I like the middle and I love the way life feels when equanimity is at the forefront. The scales may flutter about, but ultimately I don’t feel right when my life is not in balance. I firmly believe that when life is imbalanced, this is when we suffer mentally, physically, emotionally and spiritually. When I am not in balance, I am not connected to the world. When I am not connected to the world, I get lost in myself and it never ends well.

    This Spiced Rum Fig Kombucha Cocktail is just another example of how I truly embody the idea of balance, even in the most casual of moments in life. It’s something I crave even in the play time, I seek it and I am drawn to it, oftentimes in a completely subconscious manner. Many paleo recipes, yet lots of vegan, after many grain-free recipes will might find some grains, with a dozen vegan recipes, you’ll log on to find meatballs. There are sweets, but after too many, you won’t find them for a while. Many times I add a food to a recipe, just for a balance in color. I like to include ingredients that offer a compliment to balance another strong element. This is just how I live my life. Sometimes this need for balance will even show up in a dessert like a cake with some greens snuck into it or cookies with zucchini. It’s balance. My body craves it. The extremes, they just don’t work for me.

    As far as my husband is concerned, no summer road trip is complete without some popcorn. Though if he had it his way, he’d be eating popcorn daily. This man and his stomach of steel LOVE popcorn and he constantly begs me to make it for him. Left to his own devices in a previous life, I have a feeling he would select some of that electric orange colored “cheese”-flavored stuff at the gas station, so this is a perfect compromise.

    Though popcorn and I (aka my digestion), we don’t always see eye-to-eye, I am very aware that not everything has to revolve around me and my eating, so when it comes to creating road trip snacks I try to be a team player and bring a little for everyone. This popcorn creation is the perfect example of just that. A snack created with my tastes in mind, so I can sample a small amount and be happy, but still something that will make hubby (and any others along for the travels) happy. While he snacks away in the drivers seat on this popcorn mix, I’ll be crunching away on my Salt and Vinegar Kale Chips and we are both content.

    I actually packed this snack mix for a recent drive to Santa Barbara when my parents were in town. As we headed of to wine country, the inside of car sounded as if we had a crew of squirrels chomping away, everyone was so furiously munching on this stuff! I’d say that’s a win.

    It’s here. It’s officially fig season and I couldn’t be happier. Though the season can seem somewhat short, when you have an over 20 foot fig tree in your yard, it honestly feels like it carries on forever and ever. I am not complaining. For the rest of the world, fig season usually feels like it is over in the blink of an eye. The season gone and done with, before you even fully begin to enjoy it. What a beautiful metaphor for life. Everything happening so quickly, whizzing right by us. The sweetest things, they come and go and if you don’t stop and slow down, if you don’t savor every bit of it, truly stopping to appreciate every little detail, it will pass you by.

    Over these past three summers of being in this house, I have done my very best to not take this tree for granted, what a gift. Having only ever really eaten dried figs, I have learned to love figs in a whole new way and I have found myself getting creative, adding them to recipes anywhere that  I can. If you have never had fresh figs, I can tell you that you are surely missing out.

    Figs are delicious when fresh, sliced up and added to salads or pasta, they are wonderful just for a sweet bites, you can stuff them with goat cheese or blue cheese, but like many foods, I have a real thing for roasting them. The flavor and the sweetness shines even brighter this way and you end up with a delicious sauce of sorts, perfect for so many different recipes.

    Roasting is also a great way to preserve the figs a bit longer. Many times if I pick figs that are perfectly ripe and ready for eating straight away, I try to nab them just before they fall to the ground or the birds get them, but they won’t last long when they are this ripe. Roasting gives me a few more days with them and it ensures not a single fig’s life is lost in vain! It’s also a great way to get the most out of the figs that aren’t as great. Maybe they were picked a little early or they are just less sweet. Roast them. Problem solved.

    If you don’t have a tree, when buying fresh figs, always buy the more ripe ones. Unlike many other fruits, figs do not continue to ripen once picked. Soft and squishy is perfect, a little splitting skin with some juices oozing, even better. The ugliest figs, the ones many would likely pass right over, those are usually quite often, the tastiest figs. Possibly another metaphor for life? Heh.

    These yogurt parfaits are one of my favorite ways to enjoy and savor the roasted figs. The tart and sweet flavor of the roasted figs, the beautiful syrupy sauce that is created, it pairs so perfectly with a creamy and tangy yogurt. I love the addition of the toasted pistachios, too. You can feel free to swap with whatever your favorite nut or seed is. I opt for my homemade coconut milk yogurt, but you can feel free to opt for any yogurt you’d like. Greek, goat’s milk an so on. Great as a breakfast, a dessert or a snack.

    Fresh Grape and Prosecco SorbetIf we could go back in time just for one day to visit our younger selves, I can tell you that there would be an early 20-something Beth, disappointed to know that most opened wine in the house of her mid-30-something self, usually just gets used in a recipe or worse yet, to know that there is any leftover wine at all.

    These days, I do such little drinking that I usually only open a bottle of wine if we have guests. On the rare occasion I imbibe just because, I have a glass, the bottle gets put in the fridge and usually it tastes bad before it ever gets finished. I know…. the shame, the horror. I love the way a good glass of wine tastes at the end of a busy day or with a delicious, robust home-cooked meal, but usually, the truth of it is most times I feel terrible before I ever even catch a buzz. My body just doesn’t like the stuff. It’s all “wait, this ain’t green juice. where’s my smoothie?” The other thing is, most mornings I get up so early, either for yoga or the gym, that a hangover, sans party, just never seems worth it. Yup, clearly I have rounded the corner to my mid-30s. These are all things, I swore I would never think or say.

    I was at Trader Joe’s last week picking up a few things and I saw the bubbly wines from the corner of my eye, as I pushed my cart full of veggies past the wine section. It just sounded so good. The summer time always has a way of making me crave chilled bubbly wines. So, I treated myself and I bought a bottle, I had a glass once it was chilled, then instantly knew the rest would go to waste, so I decided to get crafty this time. Waste not, want not.

    How is it Friday already? Where has this week gone? Busy weeks mean the time is just flying by. Among the usual weekly things, teaching yoga, events in LA and all that good stuff, Wednesday night I taught another free cooking demo at Whole Foods here in Long Beach. I shared 4 delicious seasonally-inspired recipes that were of course, gluten-free as well as all being plant-based and grain-free, too! It was another full room and everyone left with full bellies and I hope lots of fun tips and recipes. Thanks to all that came, it’s so fun to be able to share the message that real food heals and I love being able to cook simple, seasonal food that anyone can make in their own kitchen.
    Coconut Mango Chia Seed Pudding

    Being that mangoes are in-season right now, the final dish I created at the Whole Foods cooking demo, the sweet of the bunch, was this super simple Coconut Mango Chia Seed Pudding.

    Perfect as a breakfast ready to eat when you wake up in the morning, a naturally-sweetened dessert or a quick snack, this creamy, sweet pudding is also the perfect energy boost. Chia seeds have a high density of omega-3 fatty acids (more than a serving of salmon or flaxseeds), they are high in fiber, protein, they are full of antioxidants and minerals, like calcium (surprisingly up to 3 times more than a serving of milk), and they are naturally anti-inflammatory.  Chia seeds can absorb up to 10x their own weight in water, which means they are known to prolong hydration and improve our absorption of electrolyte nutrients. The best part is this also slows digestion and keeps you fuller longer, which makes these parfaits great fuel in the morning before a busy day. Talk about a superfood. Read the rest of this entry »
