  3. New Year Release Ritual

    New Year Release Ritual

    2016 will go down in the books as an intensely challenging and pivotal year for a great deal of us. If you too are counting down the days to starting over in 2017 with a vow to change and have a better year, let’s reflect on these resolutions and how to make them last. Mentally we need that idea of pressing a magic reset button in hope that we can leave our baggage behind in a four digit number and wash our hands of it.  By the end of the year it’s as if our candle has been burned at both ends and we grasp at the belief of starting over at the stroke of midnight.

    I have learned through my own ritual work with the moon and seasons that everything is on a cycle and having our own practice to mark the beginning and end of them can help you manifest things you want to attract and release that which no longer serves you. The moon expands, gets full and bright and then retracts until its dark only to start the cycle again. In the fall, the leaves die and fall off of the trees, everything retreats and goes within for Winter and emerges with new life and birth in Spring. We are not immune to these natural cycles. It’s why we focus so much on the New Year!  But before we can make room to bring new things into our lives, we must release the old and clear out the clutter. I am going to help you set this intention for release through a simple ritual I have experienced results with.

    I literally cannot believe that after nearly 7 years of blogging and sharing recipes here with you, that I have never shared this one. It’s literally one of my MOST favorite foods ever. Gluten-free Pastitsio (pa-STEE-tsee-oh), a Greek-Style Baked Pasta / Lasagna, of sort, this is 100% my kind of comfort food. A Christmas dinner tradition, this is the food I grew up eating for the holidays. My Yia Yia always made an incredible tray of pastitsio and since her passing, we can always count on my mother to manage the task and do it as if she herself was the Greek one. Years ago, when I discovered my gluten intolerance, my mom so graciously tweaked the family recipe to be made gluten-free and I never had to be without. Overtime I have made it myself and continued to slightly adjust things and I am so honored to be sharing it with all of you, finally.

    With layers of ground meat (beef or lamb) and pasta and a creamy, puffy, eggy, cheesy béchamel on top, there are hints of warming cinnamon throughout the entire dish and then it’s baked to perfection. This dish steps in where casseroles and lasagna leave off. Traditionally made with bucatini, a long tubular pasta laid out going in the same direction, I make mine gluten-free using instead an organic brown rice penne. In place of regular flour in the béchamel, I use a gluten-free all-purpose blend.

    With the busyness of this time of year, I am finding myself far more called to creating nourishing, comforting food that doesn’t eat up half the day in prep work, but that also cooks quickly and leaves us time for all the other crazy tasks we have on ours lists right now. This time of year I just want the most comforting foods, soups and stews, roasts and other hearty, seasonal meals. This Instant Pot Beef Stew is basically the best ever version of all of this! Ready in under an hour, it’ll taste as if had been cooking ALL day long.

    Last year I got myself the Instant Pot, after hearing from so many people how amazing it is. I am still, after a year, learning all the things it can do. I recently began playing with the sauté feature, which allows you to sear meat, before pressure cooking it. I find this seals in the flavor and the caramelized flavors from the browning really brings more depth and richness to the overall dish. Plus, it gives us little brown bits to deglaze, which is one of my most favorite things to do when cooking.

    This is comforting, winter food at it’s finest. It actually reminds me of being a kid, this is the food we grew up on. My mom made a killer beef stew on the stove top. It tastes of love, coziness and comfort.

    If I had it my way, as a nutritional therapist but also as a true, hardcore lover of substantial, energy-building, savory breakfasts I would LOVE to get all of clients eating a breakfast comprised of quality, well-sourced fats and proteins, with an appropriate amount of carbs coming from some tasty nutrient-dense veggies! But, I get it, I really do. I know most people would rather eat a doughnut, toast, cereal, oatmeal or anything else, sweet, simple and convenient in the mornings. So for me, it’s all about the baby steps and also meeting people halfway with better options than the standard fare.

    I know that mornings are generally a busy time, if you have kids you are getting them ready for school, you are probably packing lunches, getting the kiddos on the bus all while trying to get yourself ready and get out the door to work. Even if you don’t have children, the mornings are generally a very chaotic time and if you don’t plan extra time for cooking, most folks either grab something packaged and convenient or worse yet skip breakfast all together. NOOOOOO! I know that unless you are fortunate enough to work from home, cooking up some pasture-raised eggs and sautéing some greens – that’s probably not in the cards.

    Our trip to London in October was one I certainly will never forget. Traveling halfway around the world with my love, without any major plans beyond knowing where to stay, a list of restaurants as dishes I had to have and a few sights that were “musts” and not much more. Such a wonderful way to travel.

    Staying in the Shoreditch neighborhood in London was the perfect place for us. The grit of a big city matched with the deeply rooted history of London, it was the perfect edgy urban vibe that we love! The streets of “The Ditch”, as locals call it, are lined with charming cafes, coffee shops and restaurants, beautiful street art tucked into the most unsuspecting corners – it’s got that cutting edge vibe that juxtaposes the proper bits of London, just so perfectly.

    Being in London I was able to safely eat gluten-free easier than probably any other city I have ever visited and the food was incredible – I was stunned, not at all what I had expected nor remembered from my trip to the UK over 15 years ago. I plan to write up a post sharing some of my personal favorites from the Trip, but in the meantime I wanted to share my single most-favorite dish from all of my UK travels, shoot maybe all of my European travels, even.

    I have been a long time fan of chia seed pudding and it’s become a simple dish that I recommend often as an egg-free, dairy-free snack, breakfast or dessert option to my nutritional clients, especially those I recommend blood sugar control diets or sugar detoxes to. Without sweetener (or sweetened very lightly) chia pudding can be a great, nutrient-dense alternative to the more standard grain and carb-forward breakfasts. It’s loaded with omega-3 essential fatty acids, fiber, protein, and various micronutrients and chia seeds are also high in calcium, magnesium and phosphorus.

    Meet Brook: Shamanic Reiki Master

    When will the rollercoaster of emotions from the past few weeks stop?  The severe divisions, the resulting solidarity being shown in protests and by people vowing to stand up for one another, the complete shock of realizing how profoundly the beliefs of others can potentially affect us. If the current events have left you raw, breaking down crying at the grocery store, or fumbling for control of your anger or incredulousness perhaps what I have to share can help you get your bearings amidst absorbing other peoples’ emotions and amplifying this difficult time. The beauty of this is that we are all waking up to just how deeply connected we are to one another.

    In hindsight, as I was in Yosemite national park a week before election day, the powerful flow of the storm fed waterfalls and rivers were a premonition. I gathered strength from the waters, mountains and trees not knowing I was being prepared for the events that were to follow. As a shamanic healer I use a technique known as Nature divination- the practice of connecting to elements in nature to receive guidance. Messages come from particular nature spirits -like trees, plants, mountains or waterfalls.  We believe in shamanism that everything has a spirit living inside of it that we can communicate with if we learn how to listen. On my solo adventures on hiking trails, I gave attention to each rock, tree and animal; tuned to receive messages. Lucky for me, I was alone and spared the curiosity of fellow hikers wondering why I was talking to a tree!

    Simple Self Care

    I was intensely concerned with the violence and conflict at Standing Rock in North Dakota and while the guidance I sought was regarding that situation, I found it to be relevant to what we are experiencing today as a human collective and have felt comforted by receiving this knowledge. When we feel helpless, sometimes that is a sign that we need to re-center and remember that we are part of a higher calling, a bigger picture, and we should listen to our guides that are right in front of us everyday. This is how I was able to maintain the past week and be of assistance to others.
    I realized the tools and techniques needed to ground and care for ourselves may get lost in the daily shuffle of life but they are always there and I have created a simple list of self-care rituals to help us all through. We just need to decide our well being is worth making the time for and be willing to get a little bit out of our comfort zones.

    Without trying to rush away the holiday, considering it hasn’t even landed yet, I wanted to have a little something special waiting for those of you that will have leftovers later this week. If you ask me, the leftovers are half the fun. Sadly, oftentimes there isn’t exactly enough left over to make a full meal out of or, maybe you are sick of the traditional Thanksgivings spread and you wanna have a little fun. This pizza recipe is the answer. Use this more as a gentle suggestion / inspiration, since you can really make this your own, depending on what specific leftovers you have.

    Of course, you could always make the traditional sandwich, a pot of turkey soup or a turkey pot pie, but I am telling you, after you’ve made a Thanksgiving Leftovers Pizza, there’s no turning back.

    This pizza is an updated makeover on the traditional leftover Thanksgiving sandwich that we all now and love, and it’s easy to make with the family. To lighten things up, I made the turkey and the fresh veggies the highlight here with little dollops of cranberries for some bright, sweetness. For some extra fun, leftover gravy would make a killer sauce or maybe take some leftover stuffing, roll it up into tiny stuffing meatballs and add that on top, finally, you could mix your leftover mashed potatoes with the cheese and spread that out on top of the crust, to change things up a bit. But listen up, whatever you do, please don’t skip on the cranberry sauce! As crazy as it may sound, it’s THE best part of this pizza. The bites with the bright, fresh and sweet flavor of the cranberries were our very favorite.

    Here we go, it’s about that time to answer the very important question of ‘What to do with ALL the Thanksgiving leftovers?’ While I know the big holiday hasn’t hit just yet, I want to help you guys get prepared for the aftermath. This week is all about Thanksgiving leftover ideas for the days following the big event! Since we are always left with loads of goodies, why not get creative and continue the eating party?

    Soups are almost always my go-to after the holidays, for a variety of reasons. 1) they are so simple to make and they yield a large amount of food 2) soup is my ultimate comfort food. It’s always what I crave after I’ve maybe eaten more or differently than I usually do and 3) it’s the perfect cozy, cool-weather food. Soup will forever feel like a hug in food form!

    Don’t send a Thanksgiving lynching mob after me, but I generally don’t care too much about pies. I am already not a huge dessert person, but if I am going to have a little something sweet, I’d probably always opt for chocolate. Gimme this Dark Chocolate Pumpkin Tart and I’ve got everything I need. But, I am fully aware that pies are part of holiday spreads for a reason, pies go with Thanksgiving like peanut butter to jelly. I am currently also painfully aware of baking’s ability to heal and it’s important role in relieving stress, something I have personally been in great need of since the election. So here we are, with an epic pumpkin pie that will change the minds of even the greatest pie skeptics.

    I have always loved the idea of a pumpkin pie, as I am a big fan of pumpkin-spiced everything, but generally I find many pumpkin pies to be just a tad lacking. First, it’s just your standard pie crust, nothing too special there, not a ton of flavor, then the pumpkin filling gets a little spicing and maybe you top it all with a little whipped cream. To me, it just always feels like it’s missing a little something. It lacks a little dessert flair. I also find that when you add adequate spices and a sweetener with some depth, beyond just standard refined white sugar, the color of a finished pumpkin pie just ends up pretty drab. Beigy brown toasted edge crust, a orangey-brown filling. I dunno, I feel like we can do better than this you guys!

    Alright, here we go! The final stuffing recipe of the season and I am really excited about this one. Shhh, don’t tell the mashed potatoes, but I am pretty sure stuffing is my favorite. It’s a dish that just doesn’t get any love outside of Thanksgiving and I just don’t know why.

    Gluten-free Oyster Sourdough Stuffing

    While this stuffing isn’t grain-free, it uses my absolute favorite gluten-free bread ever – Bread SRSLY’s sourdough loaf. It would also be delicious with non-gluten-free sourdough (obviously), any crusty French-style bread, cornbread or even with a good grain-free bread. As far as I am concerned, always remember whatever your bread choice, your stuffing (or dressing) is only as good as your bread.

    Oyster stuffing is more traditional in the New England region and I believe some areas of the south, along the gulf coast. It isn’t one that I grew up eating, necessarily, but I have had it before and I love it, I also know it’s a staple for so many of you. Veering a bit from the traditional, I paired the shellfish in a more West Coast way, with the sourdough. Think of Northern Cali, San Francisco to be exact, the Hangtown Fry and all the sourdough bread paired with oysters, clams, chowders and so on. It’s a match made in heaven. A little tang, with the subtle, savory brininess of the oysters. This classic stuffing will bring an amazing and unique matrix of flavors to your Thanksgiving dinner.

    I asked over on Snapchat a while back, what holiday recipes people wanted help with. There was an abundance of requests for stuffing recipes for Thanksgiving. Particularly grain-free stuffing recipes.

    Paleo Sausage and Herb Bread Stuffing

    This particular recipe is a holiday classic, the perfect stuffing – moist in the middle and crisp on the top. For me, this is exactly the stuffing I grew up eating, but rather than white bread so many of us can’t have or even the overly process gluten-free stuff, this is made with a super quick, homemade (nut-free) grain-free bread, that you can throw together ahead of time.
