Smoothies are seriously my favorite, easy weekday breakfast. I wake up, practice yoga and immediately head into the kitchen to throw together a delicious, nourishing smoothie made from whatever I have on hand and it always keeps me full till lunch!
I almost always have a quart or two of my homemade almond milk on hand for just this reason and I let the fruit and veggies we get from our CSA box determine what the flavor of the day will be.
We’ve been getting these beautiful, organic juicy, sweet peaches from Tony, our farmer, and they have been an absolute treat, while we are waiting for our own peach tree to do it’s thing.
This Peaches and Cream Smoothie is creamy, rich and so easy to throw together. I add a small amount of raw honey when I make my almond milk and the peaches we have been getting are quite sweet, so I find no additional sweetener is needed, but you can use your own judgement.
If you don’t have coconut butter you could add a small amount of coconut oil, coconut cream or nut butter in place. But I highly recommend having some homemade coconut butter on hand at all times, it is such a treat and my new obsession.
By the way, peaches are a new addition to my life after about 4 years of not eating them (long story), I kinda can’t believe what I have been missing out on. I have to say, I forgot just how amazing peaches are.

makes 1 large smoothie or 2 small
- 1 cup homemade lightly sweetened vanilla almond milk
- 1 fresh peach, pit removed
- 1 tablespoon coconut butter
- 1 tablespoon chia seeds
- handful of ice or frozen coconut water ice cubes
- a little unsweetened shredded coconut for on top, optional
Add all of the ingredients to your high speed blender. Blend until smooth and creamy. Serve immediately. [/print_this]

I had my first peach of the season yesterday and it was so juicy and sweet. There’s nothing like a ripe, drippy peach and I LOVE having them in my smoothies. I need to go the whole 9 yards by fashioning up some coconut butter and nut milk for this fantastic treat!

I haven’t been lucky enough to eat any peaches yet this season, I can’t wait till they’re juicy and ripe out here on the east coast!! This looks incredible Beth and I think it’s a straight-up crime that I haven’t made your vanilla almond milk recipe, I’m putting that on my {never-ending} to-do list for the week.
