Whether you are starting the year off with the Whole30 or a 21 Day Sugar Detox, maybe you are going paleo or gluten-free for the first time or perhaps you are simply just getting back to your usual mindful-eating ways – we could all use our regular, pre-holiday routines and definitely some healthier eats. I want to make these first weeks of 2017 a breeze for all of you, this is the final week of meal plans all month. I hope it has been helpful.  All of the meals featured in the weekly meal plans, throughout this month, are gluten-free and paleo, all of the recipes are free from grains, dairy, legumes and sugar (or have very simple options to make them as such).

Greek-Style Lamb Burgers with Tzatziki

Monday: Lettuce-Wrapped Greek Lamb Burgers (for dairy-free, just leave out the optional feta and make dairy-free tzatziki). Serve with a big  ‘ol Greek salad and some homemade dressing (skip the feta and the sweetener) and some kalamata olives.

Slow Cooker Sesame Ginger Chicken {gluten-free and dairy-free}
Tuesday: This Slow Cooker Sesame Ginger Chicken is a simple meal to prepare ahead of time and it will be ready for you at the end of your busy work day. Simply leave out the honey if doing Whole30 or 21DSD and serve over cauliflower rice. I love it served with some shredded quick-cooked cabbage.

 

Comforting Mushroom Soup

Wednesday: Comforting Mushroom Soup. For a complete meal,  you can add shredded chicken, turkey or pork or serve alongside your favorite protein. My favorite Roasted Brussels Sprouts with a Spicy Orange-Parsley Chimichurri would make a killer side dish.

 

Grain-free Salmon Cakes with Old Bay Aioli

Thursday: We make these Grain-free Salmon Cakes weekly in our house. They are quick to make and so satisfying. We like them served over greens, either fresh baby greens or sautéed kale or spinach. The Old Bay Aoili is a solid finishing move, especially with homemade mayo.

 

Skillet Roasted Chicken Thighs with Rosemary, Lemon and Olives

Friday: The perfect way to finish out a busy week ,a one pan meal of epic levels Skillet Roasted Chicken Thighs with Rosemary Lemon and Olives! Serve with Zucchini Noodles with Caramelized Fennel on the side (drop the breadcrumbs and use grain-free bread or toasted chopped nuts of your choice instead and leave off the cheese)
