Banana Blueberry Coconut Smoothie  - Vegan + Gluten-free

As I mentioned a little while back, I recently received a sample of Gold Label Coconut Oil from Tropical Traditions and I have really been enjoying making things with it. One of my favorites has been this Banana Blueberry Coconut Smoothie, that I featured recently. Sometimes I make a similar smoothie but instead of blueberries, I add in a tablespoon or two of unsweetened organic baking cocoa. Wow, what a delicious and sinful treat.

Blueberry Rosemary Multi-grain Galette

Another recipe that I made recently that really used coconut oil in a different way was this Blueberry Rosemary Multi-Grain Galette, instead of butter or a butter alternative, I use frozen coconut oil to give the crust of this galette the perfect texture, it is so easy and perfect if you are dairy-free or vegan.

And of course, the most popular recipe here on Tasty Yummies that really features coconut oil are my Dark Chocolate Coconut Treats, which can easily be made in a regular sized or mini-sized muffin tin. These may just be my favorite use for coconut oil.

In addition to being great to cook with, I also from time to time use coconut oil on my skin and hair (and the same goes for the dog), since it makes a really great natural moisturizer.     I subscribed to your blog recently and have liked tastyyummies and tropical traditions on Facebook. I plan on sharing the post as soon as I find it (where is it?). I would love to win a quart of coconut oil simply because coconut oil is AMAZING. Since I started using it on my hair and skin my hair is so soft and my face looks so clear and glowing. I also used it to cure my cold sores, which I had for 2 months and would not go away with any other treatment (coconut oil got rid of them in 3 days!) and other cuts and scrapes. I also love the taste and it makes me feel so satisfied after eating it. As a college student I need to save money and coconut oil is perfect for that because it works as my moisturizer, hair treatment, antiseptic, and is a healthy dietary fat (hard to get vegan sources of that on campus…).

    I love your blog I check it every day. I especially love your smoothie recipes!

  37. I already “liked” Tasty Yummies (because I LOVE your blog!) and just “liked” Tropical Traditions on fb! I began using coconut oil after my husband and I decided to go vegan and gluten free to help different skin issues we were experiencing. That was 2 years ago, and our grocery list has not gone without a jar of coconut oil since! Because it’s so expensive (as most healthy things are) I try to use it in moderation, but it’s so hard! We don’t eat processed food, but we love baked goods, so every sweet treat we consume has to be made from scratch. I use coconut oil in everything from pancakes and waffles, to muffins and scones, cakes and breads…I even use it on toast instead of butter! It’s great on roasted veggies since it can withstand high heat, and excellent in rice with thai or indian food. The health benefits are incredible, and now that I have a baby, I need to make sure she is getting enough nutrition from our vegan diet. Coconut oil is a truly wonderful fat for her to consume. I’ve used it on eczema, blemishes, dry hair, and of course, all over my belly every night during my pregnancy- not one stretch mark, and I smelled so good! Often times when we’re grocery shopping, in order to stay within our budget we have to hold off on the coconut oil until our next trip. It would be incredibly amazing to win a quart and not have to worry about the expense or make a trade off between two items we really need……aaaannnnnd, I am dying to make your dark chocolate coconut treats!!!   73. Hi Beth, I’m so glad to have found your website, and I’m trying some of your recipes tonight!

    I’m a convert to coconut oil, and can’t even stand the thought of using corn oil again… (yuck)

    After first reading about coconut oil and its benefits, I started using it in everything and all over me. 🙂

    I put it in my oatmeal, my rice, even in my coffee. And to make sure I’m getting a full 3 tablespoons a day, I often just eat a spoonful straight.

    In addition to having more energy and needing less sleep, my skin is softer and my hair never felt sleekier.

    I’m fascinated by people who say coconut oil is helping them lose weight, reverse Alzheimers’, recover from diabetes and whatnot, and I truly believe using coconut oil provides a much-needed strong foundation for health, for everyone.

    Coconut oil used to be a mainstay in people’s diet, but was pushed out of the public consciousness by lobbyists promoting soya oil and vegetable oil some decades ago.

    The proof? Look up “Mama don’t want no peas no rice no coconut oil” on YouTube, and listen to the song by the same name that came out in 1929.
