    We made these delicious Greek Souvlaki Chicken Wings on our new Traeger Wood-Fired Grill, which has absolutely changed our grilling game and most especially it’s taken our already amazing wing game to another level. With real smoke coming from wood pellets and no fear of flare ups, it’s been incredible for grilling. In many ways for the purpose of this recipe, it’s just the same concept as Mark’s patented in-direct grilling method that he developed for our gas grill which we have shared here before, however the Traeger brings a delicious wood fired flavor we have never gotten with the gas grill. Mark’s method for indirect heat makes for THE BEST and most crispy chicken wings you will ever make on the grill. EVER! Either way, on a Traeger or not, give these chicken wings some time, it’s all about the low and slow and then give them that last round of heat, with the “re-sauce” – you will fall in love with the crisp factor.     These Instant Pot Carnitas have become a bit of a favorite around here. Especially when we’re hosting guests but also just for meal prep for busy weeks. I love that this recipe is naturally gluten-free, paleo, Whole30, keto and AIP-friendly and yet still simple and tasty-enough to serve to anyone – no matter their preferences! You can serve your Instant Pot Carnitas in lettuce cups or your favorite tortillas, over a big veggie-loaded salad or cauliflower rice and go burrito bowl-style.

    I truly love recipes like this that are not only fuss-free while still being super impressive, but that also allow me to eat how I prefer while still serving my guests without any dietary restrictions, so they’ll never feel like I am pushing my “health-food” onto them. I don’t want my closest friends to decline dinner invites for fear of being served liver and sprouts! haha. It’s important to me to enjoy amazing meals with my family and friends, no matter how differently we all eat, I never want anyone to feel like like I am preachy or pushing my agenda on them. I just cook them the food that I know to be healthful and hopefully they see how simple it can be. A focus on real whole foods is truly just a solid baseline / foundation that would do everyone some good.

    I have to say, in the over 7 years that Tasty Yummies has existed, I cannot believe we’ve never had my husband Mark as a guest contributor here. While I do most of the cooking around here, the grilling duties land nearly exclusively on his shoulders and this man has truly mastered his craft.

    These are a low and slow method, so they aren’t a quick throw them on the grill recipe, but this actually makes for a great recipe when entertaining. Our grill is front and center on our large deck, we all gather round with drinks and snacks while Mark tends to his duties. He likes having a job and I love relinquishing some of the cooking control. Don’t rush these, the crispiness and lack of dryness is all thanks to the indirect method Mark developed.

    What Beth Says: Mark takes his grilling very seriously and he is always tweaking and adjusting his methods, creating new ways to use old tricks. This grilled chicken wing recipe of his is by far the most popular. Based on the concept of his long-perfected beer can chicken these wings are now legendary and the reputation of these wings might just precede Mark, at this point.

    I love this particular recipe for so many reasons. 1) it’s created by the human I love most in this world. DUH! 2) this recipe has afforded me a little more opportunity to actually enjoy dinner guests, especially in the summer months. With most of the cooking generally being my responsibility, with good reason, I usually host dinner and feel like I spend more time preparing and cooking, than I do being able to visit. Now I can craft a few sides, a salad and a dessert and leave the main up to my man! 3) being from Buffalo, I feel like it’s in my DNA to love chicken wings. However I am usually underwhelmed and left feeling crazy gross with almost all restaurant chicken wings, so I just never eat them. I can assume that likely the feeling of hot gut death is because they are submerged in hot, rancid, oxidized garbage vegetable oil. With these grilled wings cooking low and slow, they are crispy, without being dried out and there is not of those horrible, ‘what did I just do?’ feelings in your tummy. 4) We get invited to a lot more BBQs, with the request that we show up and make these. Fair enough!

    What Mark Says: Marky love wingy. They say everything in art is inspired by something else, well at least that’s what I hope they say – because I say it all of the time. The idea for my backyard Crispy Grilled Chicken Wings came from two other works of art. Years ago before Tasty Yummies was the powerhouse it is today, we experimented with the infamous Beer Can Chicken and the Butterflied Chicken (link below), these types of meals gave me a chance to give back to the woman that feeds me everyday and, if we’re being totally honest, looks after my nutrition like hawks fly around roadkill. The grill became my thing, I got good at it and for a food dummy, Tasty Yummies was proud of me.

    Meal planning for busy weeks can be at times be a challenge, to say the least. Even for someone like me, which is kinda insane considering I like I think about food well over 3/4 of the day. It takes a lot to keep things fun, fresh and interesting, while being healthy, easy and swift. This is all especially important during the mid-week craziness.

    If you are a regular reader of Tasty Yummies, you are always seeing the many, fun and unique ways that I prepare my vegetables, it is something I take great pride in, they truly inspire me. Since we eat meat sparingly around here, it’s not an every night thing, so I am always seeking simple ways to prepare different proteins that wow me, the way veggies can.

    It’s hard to think about much else these days, while visions of a Thanksgiving menu swirl around in my head. This year we have a pretty big “Friendsgiving” planned, could be as many as 10 people for dinner. All of our other California transplant friends are coming to our place and I am making a huge feast.     It’s rare that I have a morning with enough time to make a big breakfast. Most days I start with my warm lemon water, a home yoga practice, then I make a quick smoothie and get right into my work for the day.

    On the rare occasion where I don’t have to rush to my desk or to some sort of commitment, I love making a scramble or frittata of some sort, or on the extra special days, a delicious and comforting waffle.

    I have been playing around with a different waffle recipe from the ones I have used in the past. I was looking for a lighter waffle, that wasn’t dense and heavy in the center, but would also get a nice crispy outside to it, which is my favorite part. I have made several variations to this waffle recipe and they always come out amazing.

    I happened on this recipe from Aretha Frankenstein a while back and I adapted it to make it gluten-free. Since I had picked the last of the beautiful oranges from our tree, I also updated the recipe with a fun new flavor combination. The orange spice flavor is subtle in the actual waffles, but it is brought out and complimented nicely by the little bits of dark chocolate chips. Two things that go so perfectly together, if you ask me.

    The specially made Orange Spice Maple Syrup I created to compliment these waffles is a very simple-to-make addition, that shouldn’t be overlooked if you have an extra few minutes to spare. To me, that delicious unique maple syrup really sets this recipe over the top!

    My waffle iron makes two massive waffles with this recipe and usually hubby and I share one and save the other for the next day.
