I have a deep, deep love for cookies. Besides cupcakes (my weakness), I always choose cookies when I have an itch for baking. These pumpkin chocolate chip cookies have great texture from the pumpking and the gluten free. Plus, the mix of cinnamon and chocolate…it’s simply perfection.

I love this bread because it is so simple to make and the end result is a beautiful loaf of pumpkin yumminess. There were many desserts that I never thought I would be able to enjoy again after I went gluten and dairy free. I was deeply saddened when I tried to imagine my life without cheesecake. Oh, sweet luxurious cheesecake. The first time I attempted a dairy free cheesecake using raw cashews, I was completely amazed! It was so creamy, dreamy and delicious. This pumpkin cheesecake has everything you love about the classic cheesecake, but has such a deeper flavor. Embrace the dairy free cheesecake. You won’t be disappointed.

I’ve saved the best for last. The first time I made these pumpkin spice cupcakes was for my friend’s baby shower. All of the girls couldn’t believe that these were gluten, egg and dairy free. So moist and topped with what I believe is truly the best vegan buttercream ever. There is no need to wait for a special occasion or celebration to give this recipe a try. Everyday is a good day to bake cupcakes!

How perfect does that pumpkin bread look?! I’m a sucker for raw cheesecake too so I bet I’d love this pumpkin version.
Sarah, you mentioned pumpkin pie spice in the directions yet it isn’t listed as an ingredient….how much do we use?

I tried the cookies a few days ago and they are probably the best gluten free cookies I have ever had! I literally hate being allergic to gluten so it makes me happy when I get great gluten free recipes! Thank you so much for posting, found this on pinterest!
