    How-to Make Sheet Pan Baked Eggs

    With Easter this Sunday and Spring in full effect, brunch season is fully upon us. These Sheet Pan Baked Eggs have become a staple around here, especially when we are serving brunch to a crowd. What I love about is how simple it is to make and just how versatile a dish it can be – which is great for optimizing for the season and the crowd and it’s the ultimate in customization and creativity for those of you that love playing in the kitchen.

    Much like many of the other recipes I share around here, I am offering you the formula and base for the perfect baked eggs and how you customize these – that’s up to you. For the baked eggs pictured here, I went with caramelized onions at the bottom and mixed into the eggs, which were whisked with unsweetened unflavored homemade coconut/almond milk, we added cooked pasture-raised bacon, roughly chopped baby spinach, shredded goat milk cheddar cheese, chives and micro-greens for serving.

Drop in your favorite veggies and leave off the grain-free, nut-free biscuits, if you prefer.

    Tuesday: A seasonally-inspired meal, this Slow Roasted Citrus Fennel King Salmon with Crispy Fried Lentils (leave off the lentils if avoiding legumes) features winter citrus and beautiful, aromatic fennel for any easy but luscious weeknight meal. Serve with your favorite green veggie on the side!

    Today I am celebrating another trip around the sun! 37 glorious trips around, to be exact. Birthdays, for me, are always a really wonderful reminder of my ongoing health journey. It was on this day 7 years ago, after my surprise 30th birthday party, that I made the choice for quite possibly the very first time, to put ME and my health first. (You can read a little bit more about that in this post from 2013) While this choice initially stemmed mostly from an ego-driven place, being unhappy with my appearance, I also made the choice at 30 to no longer be OK with feeling OK! I deserved so much more than that. Every year, as this day marks another year gone and as my healing journey continues, so does my commitment to myself and my self care. This day provides an incredible opportunity to check in with how I am feeling, to compare to years past and to be reminded that my hard work is not for nothing. And while this body may be aging, it is always apparent to me that it is more than possible to continue feeling better and better with each passing year, as I continue to prioritize my vitality and my wellness.

    If you ask me, birthdays are just as much a cause for major celebration as any other major holiday and what better way to celebrate than with a grain-free sweet treat! But, not just any sweet, this year I’m celebrating with Grain-Free Churro Cupcakes!     With the end of summer not too far off, it’s time we start planning our graceful exit strategy, for me this usually includes preserving as much of the summer flavors as possible. Besides preserving fresh herbs in olive oil, I find quick pickled veggies to be an excellent way to hang on to the tasty abundance of summer, just a little bit longer.

    Sure, canning, fermentation and other more long-term storage options are always available, but this is a super quick method, that you can throw together in a mere 15 or 20 minutes. No mess and no fuss.

    This is a recipe that I have wanted to share with you all for many years, but my disdain for photographing meat has kept me from it. I know, I know. I’ve been holding out. Don’t hate me. But I have long struggled with how to make charred, brown meat look appetizing, I dunno if I did it – but who cares? I did the best I could and this is far too delicious to keep from you any longer.

    This is another Greek recipe I grew up eating. My Dad has perfected his Greek Marinated Leg of Lamb. He has done it bone-in and boneless on the grill, in the oven and even over an open fire pit. Every summer when the Greek side of my family has their big family reunion out at the lake, my dad is always in charge of the lamb and it’s a spectacle for everyone. In all honesty, I feel like half of it gets eaten right off the grill.

    With today being Cinco de Mayo, I was feeling inspired to create just one more Mexican-inspired recipe. But as usual, I couldn’t leave well enough alone and I had to put a little nutritional spin on this one, too. Classic Mexican horchata is obviously crazy delicious on it’s own, there is no denying that, but often it’s loaded with tons of refined sugar and traditionally it’s made with run of the mill rice and almonds – so, there really isn’t much nutrition happening here. What else could I do except boost it?

    This recipe takes a little time to prepare and you may need to do a little searching to find the right ingredients, but none of it’s difficult and I can tell you, it’s more than worth it. The end product is delightful. Full of creamy, rich, sweet and spicy flavor and depending on how you boost it, tons of health-containing goodness, too.

    Despite the fact that we are well into spring now, Southern California has had it a bit twisted. Since I arrived back home from my travels to NY last week, it’s been mostly grey, rainy and cool. While I would have loved this weather in December and January, I will take it now. It’s a really nice change of pace. A great reason to pull out some sweaters and it’s also a great excuse to enjoy some real comforting foods.

    Of all things I was craving a casserole. I know. What is it 1985? There is just something so comforting and cozy about a meal you can dump into a pan, bake and enjoy. It’s childhood for those of us in our 30s. I was also dreaming of a good creamy spring risotto, one of my favorite foods. While rice isn’t off limits for me, I do try to be mindful of how many grains I consume. I just feel better when my belly isn’t bloated from the carbs. Hence why I am OBSESSED with cauliflower rice. It’s so crazy versatile, so super easy to make and it’s incredible how delicious it is. If you have a Trader Joe’s near you, the Organic Frozen Cauliflower Rice is an amazing quick option for when you don’t want to lug out the food processor. I have used it in this recipe before and it’s perfect!

    We are officially through the winter, onto the other side and into the spring. I absolutely adore this time of year. It’s so refreshing and inspiring. Spring brings so much fresh newness and light. Despite being nearly 4 months from the start of the new year, to me, the springtime truly feels like birth of the new year. We welcome the light back into our lives and there is a very palpable energy floating amongst us. I feel rejuvenated and ready to take on the world.

    From a food standpoint, there is so much beautiful produce popping up, once again. So much is in bloom and there is much greenery. I feel so inspired to create in the kitchen this time of year. While I won’t be hosting a big Easter brunch this year, I am very much in the mood to think about beautiful spring-inspired brunch foods right now. More than the typical omelet or scrambled eggs, these baked eggs incorporate the best of the season and they can become a meal in and of themselves. They can be made in single servings, so you can prep everything and just place the ramekins or crocks into the oven. What comes out are these beautiful little baked eggs with an elegant vernal twist. The perfect dish for guests. Asparagus and green peas are stars of this show, making their first appearance of the season, in the first of many delicious dishes.

    Sometimes, my Type-A, control-freak brain comes in very handy, I can be so organized when it comes to certain things and I can also be so obsessed with being in control and ahead. I am competitive with myself and I am always striving to do better than the last time. But, there is still that little hippie type-B inside of me, that likes to be relaxed and fly by the seat of my pants, go with the wind and whatever my mood and the energy of the day dictates. This post is a culmination of all of this. Let me explain why.

    I was lying in bed Monday night thinking about all those silly “National Food Holidays”, that have become such a thing over the past few years. If you are on any social media platform, I know you know about it. There is National Donut Day, National Red Wine Day, Chocolate Cake Day, Pizza Day, last week there was National Margarita day and National Toast Day… the list goes on and on and on. I have no clue where these come from, nor who created them. Mostly I think it’s fun. I like the excuse to be reminded of something in the TY recipe archives that you guys might like to know about it, after all I have nearly 6 years of recipes just hanging out here.

    I have to be totally honest with you, after I passed the age of giving out Valentines at school (which I always adored), I have always found the fact that Valentine’s Day has become a day generally so focused on giving gifts, to just be a tad bit silly. I grew up with my mom saying to us kids every single year without fail, something along the lines of: “I don’t need one special day or any fancy gifts to show my love to you or your dad, I love you each and every single day of the year”. I have to say, I couldn’t agree more with my mother. I have always felt like the holiday was less about love and more about the greeting card industry, the jewelry stores and florists make out like bandits, and besides Easter, I have to imagine this is the biggest day of the year for chocolatiers. I also have to be real here for a sec, I kinda resent that this day has been somewhat stolen by those in monogamist romantic relationships! If it’s a day about love, then shouldn’t we celebrate ALL love? That of the romantic variety but also plutonic friends, parental, puppy-love (like I’m talking your actual pooch), your favorite co-worker, anyone and everyone that you have love for?

    Don’t get it twisted, I don’t at all frown upon a day focused on love, how could I? What kind of V-day scrooge that would make me? It’s far from this. Nothing in this world makes me happier than love and I can only wish and hope that every day, every person has the pleasure of experiencing some love on some level, even if just that sweet look of adoration from their pooch on their morning walk. Love should be celebrated each and every day, so a day that puts it at the forefront, this certainly brings a smile to my face. But I say, collectively, we take that energy so many focus into this one single day and we extend it out throughout the year. Do sweet things for one other, share sweet thoughts with the people you love most, tell them you love them, surprise someone with homemade chocolates – these acts of love are are even better on a random Tuesday, not just on February 14th, one time a year.

    There are two things that I will never tire of when it comes to food. The first is roasting. It quite literally is my favorite preparation for most veggies, bringing out their inherent sweetness and an unmatched level of comforting flavor. Second, I absolutely adore tahini. I want to put it on everything. Always.

    Cabbage, now that’s a food I haven’t always been such a huge fan of. Admittedly, I used to hate the stuff. If you ask me, steamed cabbage gives this delicious, nutrient-dense veggie a very bad name. But times have changed, I love cabbage these days. Big fan. I like it in sauerkraut, that stuff has become a huge part of my every day. I also really love cabbage in a good homemade spicy slaw. But roast cabbage, this stuff is a total game changer, especially for those who swear they don’t like it.

    This tutorial falls under the category of simple, yet sweet. Or should I say, simple, yet savory! This is the perfect weeknight meal solution and as of recent, it is a near weekly occurrence in our house. I grab a fresh 3-4 lb whole pasture-raised chicken at the farmers market or Whole Foods, I rub it down, season it up, pile it atop some root veggies in the Crock Pot and voila, 4 hours later, dinner is ready.

    The best part of a weekly whole chicken is how many meals we get from it. The meal from the whole roasted chicken is good for at least 2-3 meals, we enjoy it with the potatoes, as chicken salad, on top of big green salads, etc. Then I make a big pot of stock from the leftover bones and we get another 2-3 meals from that. This is truly a must for any busy family.

    The seasonings on your chicken can vary with your preference and your mood. Generally I use this all-purpose herb and seasoning blend, that I love, occasionally I will opt for a spicy, chile pepper rub, it’s also great with lemon zest, garlic and freshly ground black pepper. The possibilities are endless. Seriously, you will never buy that rotisserie chicken from the store, again.

    To know me, is to know my insane love of dark chocolate. As long as I am not on any elimination diets or protocols, it’s nearly always part of my daily routine, whether I am on the road or at home. In the freezer, I nearly always keep a bar or two of the best, darkest, organic fair-trade chocolate that I can easily get my hands on. It’s rare you’ll see me crushing on a cake or cookies, but if I pass by a good bar of dark chocolate, it will most certainly stop me dead in my tracks. Generally, I simply need a square or two of the good, dark stuff and I am a happy girl.

    Dark Chocolate Bark Bites

    Naturally lower in sugar than milk chocolate or other candy and certainly less than most baked goods or other treats, it’s just the right amount of flare at the end of a well-made savory meal. Besides being the most perfectly created food, chocolate with a cocoa content of 70 percent or higher contains resveratrol, which has been found to lower blood sugar. Dark chocolate also has positive affects on lowering “bad” cholesterol levels. Dark chocolate is rich in Flavonoids that help protect plants from environmental toxins and help repair damage. You only need about 1 to 1.5 ounces dark chocolate per day to see the heart healthy benefits.

    Flavonoids, which can also be found in green and black teas, cherries, apples, red grapes and other deeply colored fruits and vegetables, have also been known to help with digestion, improve kidney, bowel function and sexual performance, and treat anemia and gout.

    If I am traveling, you better believe that dark chocolate is my co-pilot. An integral part to any good trip, it’s an instant way to bring a smile to your face amongst the crazy hustle and bustle of an airport and the long and sometimes tiring long drives.

    Surely you can just pack a dark chocolate bar, but I find these Dark Chocolate Bark Bites are a fun way to indulge in additional superfoods, your favorite goodies or just the stuff in the pantry you need to use up. Dried nuts or seeds, dried fruit, spices, sea salt – if you like salty or savory, add some crispy bacon, crushed pretzels or potato chips.

    These little bark bites travel so well and you can really have fun with the toppings, making a little something for everyone.
