    Are you curious how-to make delicious cashew milk? While nut milks and other non-dairy milks can seem intimidating and like far more work than they are worth, this definitely doesn’t apply to my Easy No-Strain Cashew Milk.     In typical “food blogger” fashion, by way of photos and personal anecdotes it make appear that this recipe is far more complicated than what it actually is. Don’t get it twisted, this is THE MOST simple recipe I may have ever posted. Spoiler alert: to make cashew milk, you need raw cashews and filtered water. THAT’S ABOUT IT! I generally prefer to add a pinch of quality sea salt, sometimes I will sweeten it or add vanilla and I really love my homemade Chocolate Cashew Milk – but in all it’s simple glory you just need water and raw cashews.

    I particularly love this cashew milk recipe, because it’s no-strain! No need to fuss with filtered or straining, no nut milk bags. Just blend and enjoy. It’s creamy, rich, silky and super versatile.

    You all have known for years that I generally prefer to avoid dairy, I don’t have an intolerance or allergy, I simply feel much better without it. I do OK with some cheeses in small amounts, along with sheep and goat’s milk from time to time, but there is nothing in me that ever feels a desire to sit down with a glass of cold dairy milk. We were never allowed to drink milk as children. My mom was ahead of her time. She knew that dairy can be inflammatory, that the lactose can be troublesome for most folk’s digestion and it can also exasperate respiratory issues.

    This Lemon Tahini Dressing is a kitchen staple food for us. It’s naturally paleo, vegan, keto, nut-free and Whole30-compliant, so it’s a really great option for entertaining. Creamy, flavorful and so quick to whip up it makes an amazing dressing, dip or sauce with just a few ingredients.

    If you haven’t sensed the theme, this year on Tasty Yummies, it’s been all about getting back to basics. Both with the foundations of cooking and in our health. I think both have gotten somewhat unnecessarily complicated. I find that having a solid base of pantry staples, meal prep and batch cooked recipes, sauces and dressings that you always have on hand –  this is key to being prepared and ready to take on the busy weeks with your health and well-being at the forefront. No excuses.

    I have been taking notice of the kinds of foods we make week in and week out, in our house. The uncomplicated, not-so-fancy, easy-to-make foods that keep us organized and feeling in control. We have several non-negotiables around here, top of that list, is always having a solid, super tasty, homemade, dressing on hand. Since we have Big F-ing Salads just about daily around here, having a tasty dressing already made and waiting, makes it even easier to make good choices.

    For us, it goes between Dad’s Greek Dressing, Homemade Dairy-free Ranch Dressing, 5-Minute Green Goddess Dressing and this tasty Lemon Tahini Dressing. This thick and rich dressing is one of my personal faves, because I will forever love a good creamy dressing, but definitely prefer to avoid dairy. Not only does this Lemon Tahini Dressing not have any dairy, but there’s no mayo or eggs, no nuts, just simple ingredients. Tahini is a paste made from toasted and ground sesame seeds. This dressing is paleo, vegan, keto, Whole30 compliant, nut-free, etc etc so it’s great for entertaining a crowd.

    Orange Pomegranate Smoothie

    The name of the game right now is simple and sweet. Easy peasy. The new year has kicked off strong with lots going on, I’m 5 days into a 3 week healing protocol (more on that at another time) and school is back in session for me. I am learning to balance and find comfort in the slow and steady and quick and easy. Both have their much needed place in my life right now. This week I swapped my fast paced vinyasa flow yoga classes and my intense time at the gym for yin yoga, gentle yoga and longer walks. This is what my body is crying out for. Many of our meals have been slow cooked, braised or roasted but naturally, I would run out of time if I followed this path all day every day. So whenever appropriate I have been shifting focus to easy and quick meals and snacks that are still nutrient dense and of course, yummy!

    No matter the pace, just as any other time of the year is concerned, I am all about celebrating what is fresh and in season right now, even smack in the middle of winter. There is always so much abundance to focus on, no matter where you live. We have a huge orange tree in our yard that is covered in gorgeous, vibrant juicy oranges. More than two humans could ever dream of eating. So, I have been juicing many of them, giving them to friends and neighbors and getting very creative in the kitchen, with them.

    Roasted Potato, White Carrot and Garlic Soup

    Hey guys! Happy New Year! I hope your holidays were perfect and amazing. After a busy final few months of the year, I decided to take the holiday time away from all the work and projects and simply enjoy my husband and our life. Really relish in the magic of the holidays, one of my favorite times of the year. We went to Palm Springs for a few days, went on hikes, to the beach, lots of walks and bike rides in the neighborhood and all that good stuff. It was a break I needed very much and I was happy to get grounded in what really matters this time of year.

    I came back to it all yesterday feeling refreshed and excited for this new year ahead. I had time to get organized and focus on what my goals are for this new year. It always feels good to step away and bring an awareness and clarity to the important things in life.

    I made lots of comforting and healthy food during the break, with just a little indulging here and there. We worked our way through all of our CSA (Community Supported Agriculture) goodies from our box from Beachgreens. With these beautiful organic Russian banana fingerlings potatoes and the unique organic white carrots, I was simply going to roast them, one of my favorite ways to enjoy veggies this time of year, but with the cooler weather a bowl of comforting soup was calling my name. I had some chicken bone broth in the freezer from one of the chickens we got from our farmer a while back, so it was perfect.

    As summer’s end nears, we are left with the last few bites of the season to savor.  I feel like a bit of a hoarder whenever I go to the markets this time of year and I see the beautiful heirloom tomatoes, the beautiful Hatch chiles, fresh herbs and all the other goodness. I can’t help myself. I want it all.

For me, though I love a chunky, classic-style pico de gallo, what I don’t love is the amount of time all of the chopping takes.
