Apple, Tahini Toast with Honey and Thyme

I realize that this is less a recipe and more simply, instructions. It is after all – just toast. So let’s just consider this a how-to on making some of the tastiest, most kick-ass toast you will ever eat. Trust me.

I know we are all aware and obsessed with avocado toast, but let’s branch out a bit, shall we? As someone that doesn’t care much for simple toast and jam, I say we all need to put more things on our toast.

These days it is rare I eat toast or really, have any bread in the house, even. I tend to avoid grains much of the time, but on a rare occasion I want a little something of comfort and something easy – Hello there toast! Toast is another one of those things that I have a weird emotional tie to, it always reminds me on my grandmother, my Yia Yia. Her kitchen would always smell of slightly burnt toast and tea. I can’t ever help but think of her whenever the smell of toast is wafting through the air, so there is always a sense of comfort around that crispy, browned, morning goodness!

The great thing about this simple Apple, Tahini Toast with Honey and Thyme, is that you can make it on whatever your favorite bread is, whether you make your own gluten-free bread at home or you like store bought or you possibly you opt for some sort of grain-free paleo bread, maybe you are more of a sprouted vegan bread type or maybe just some regular ‘ol wheat bread is your bag! Whatever you prefer – this toast will be your new jam! (Pun not intended, but it works oh so well here!)

This time around I made it on some Gluten-Free Prairie Bread that I happened to have in the freezer, a quick loaf I made a while back by adding some oats and seeds, to this amazing gluten-free classic sandwich bread.

This sweet and savory treat is really a meal on it’s own. For me, the perfect breakfast, after some super early morning yoga – when I am looking to refuel quickly and start my work day as quickly as possible.

  • 4 slices of your favorite bread
  • 1 apple, cored and thinly sliced, I prefer Honeycrisp Apples
  • 2 tablespoons organic tahini, your favorite brand or made yourself
  • 2 tablespoons local raw honey
  • a few sprigs of fresh thyme
  • sea salt, optional

Toast your bread accordingly.

Spread a layer of tahini on each slice of toast. Top with apple slices and a drizzle of honey, top with some fresh thyme and a little sprinkle of sea salt, if you’d like.

NOTES:

if you are vegan, sub maple syrup for the honey, it’s also amazing

try other nut butters in place of the tahini, almond butter is especially tasty

try other herbs instead of the thyme, rosemary is delicious with almond butter

the above measurements are just a guide, feel free to use as much or as little of any of the ingredients as you would like.

try making your own tahini, it’s super easy and SO tasty:

 

*Homemade Tahini: preheat oven to 350F. Spread 1 pound raw sesame seeds evenly across rimmed cookie sheet. Bake for 10-12 minutes, until lightly browned, tossing around every few minutes to avoid burning. Allow the sesame seeds to cool. Add the toasted sesame seeds to your food processor fitted with the S blade. Process for 2 to 3 minutes until the sesame seeds form a crumbly paste. Add olive oil, drizzling in slowly while still processing, 2 tablespoons to 1/4 cup will be enough. Process for another few minutes, scraping down the sides as necessary, until the mixture forms a thick and fairly smooth paste. Add more oil to make thinner. Finish processing. Add sea salt to taste, if you’d like. Store in an airtight container in the fridge for a month, or longer.

  2. I am in the same boat with the occasional toast craving! It’s so quick and comforting all at the same time. We actually have bread in the house this week, so maybe I will pick up an apple at the grocery store…

  3. This is hardly JUST toast. This looks like fancy toast you could definitely charge $4 a slice for when you open a cafe:) I love the apple, honey, thyme combo here!

    Such a simple but delicious looking idea. Im just starting to get into tahini myself, but i can already tell that its going to be a favourite of mine. Ive never thought about making it from scratch, which is silly since I make almond butter from scratch.
