    It’s certainly very easy to go a little too hard and overindulge a bit during the holidays. We’ve all been there. You may feel the guilt of not following your usual, more conscious way of eating, but usually more-so you end up feeling the actual physical pain of loosening up a little and not being mindful of the type of food you are consuming.

    I am a big fan of balance, having your fun and letting go, but not at the cost of your health, or the healing you work so hard to maintain the rest of the year. I think with the holidays coming but once a year, it’s important to be kind to yourself, honoring your health and your hard work, while also acknowledging that depriving yourself isn’t the real answer. While it can be easy to use this time of year as an excuse to overindulge, it is also very important to cultivate and hone that same balance you honor throughout the rest of the year. To pick your battles wisely, yet to still allow yourself to indulge a little in your favorites. Rather than spending the first few weeks of the new year detoxing, cleansing and working to reverse any damage caused by going too far during the holidays, I find it helps to simply reach for healthier versions of your favorites, whenever possible. Less sugar, less refined, processed foods and instead more nourishing, whole foods.

    By now you have probably heard from myself and other bloggers about collagen and gelatin and of course, the fanfare around bone broth, etc. Some of you may already know the many benefits of collagen, but even I didn’t know it’s full potential until earlier this year. Collagen is vital for our body and is the basic building block of skin, hair, nails, bones and joints and it plays a very important role in gut healing protocols.

    Our ancestors utilized sustainable whole animal nutrition, which provided an abundant amount of collagen.  Over the past century however, modern food processing has removed this natural and healthy protein from our diets.

    Looking at the foundations of optimal health and overall well-being, it is safe to say most of us, whether having endured chronic illness or not, understand that it’s more than just the food we eat and the exercise we choose. Our physical body and the structural state of our person, the environment we reside in, our emotions – they all play a role in the delicate balance within our body. Just as important and often underrated, the subtle body, or our energetics, also contribute to our health and vitality. In a perfect world, these factors all come together in harmony, to allow us to be the healthiest version of ourselves. Balanced, happy, well and at peace.

    When our health is out of balance, we can’t expect to simply change our diet, take some supplements and hit a yoga class or the gym and BAM we’re back to 100%! Sadly, it is never that simple. We are complicated beings, with many layers and levels of complexity that come together to create a unique and very special bio-individual. Ultimately, we seek to maintain balance within our body, but if we are holding onto anything, energetically, it can create blockages which keep the free-flowing nature of our truest self, challenged.

    As part of my current healing plan, I have been approaching my health from all avenues, honoring every modality presented to me and every opportunity to heal. Beyond my yoga and meditation practices, recently I have added reiki to the energetic side of my healing protocol and I am so very fortunate to have an incredible friend and reiki master, Brook Albrigo  living very nearby. I have been spending time celebrating the moon cycles each month, at Brook’s sound healing ceremonies here in Long Beach and now seeing her for one-on-one reiki sessions.

    Gluten-free Thanksgiving for Two

    We are a little more than a week out from Thanksgiving and I am, of course, so excited for the big day. Each year since we have moved out to California, our Thanksgiving celebration has been a bit different. We haven’t exactly created new solid traditions, yet. Often this was even the case back home in NY, too. Most of the time we are surrounded with friends and/or family, but there have been years, due to schedules, travel or other situations, where Thanksgiving dinner was just the two of us. This year we are headed just over the border to Mexico to celebrate the holiday with our friends and their families, where we’ll be together with tons of incredible people, fully submerged in the good vibes of the holiday.

    As much as the holidays are about gathering with family and friends, we have all found ourselves on those less than busy holidays. Just two of us. Your spouse or your partner, a parent, your best friend, a loved one or neighbor you are caring for. I find while not as abundant in people, these more low-key holidays are really nice in their own right, quiet and simple – where brand new memories and traditions are created. I thought creating a feast of a meal, focused on this idea of less, might be useful to many of you.

    Additionally, some of you may be joining a larger feast, as someone gluten-free, or serving a feast with one or two gluten-free guests. It can be scary being that person (and even the person serving them), when you aren’t sure of the food being made, if it’s safe for you, how it was prepared and so on. These smaller-serving sizes free from gluten, would be the perfect way for you to make and bring along a small dish just for you or as an option to serve to your guest.

    Gluten-Free Whole-Grain Dinner Rolls

    Do you miss those fluffy dinner rolls from your previous (gluten-eating) life? Truthfully, I kinda do sometimes. Mostly I have learned to stay busy when the bread basket gets delivered to the table. I engage myself in an interesting conversation, I sip my water or tea and most of the time, I could really care less that I am unable to fill up on all those starchy carbs. 10+ years of not having something, you tend to not be too bothered after a while. I’ve created new habits and I enjoy my meals so much more without having a tummy full of carbs before I have even started the main event.

    But, at holiday meals, a time of traditions and coming together over food, you let go a little, you eat a bit more than you usually would, you indulge in your favorite, classic dishes (gluten-free versions, of course).     Often when I find myself traveling new cities and towns, seeking out new dishes and popular local delicacies, I feel left out from being able to fully savor the flavors of the region. When you have dietary challenges, whether it be allergies, intolerances or choices, it can make dropping into a new city a little bit less than spontaneous. You can’t just stop by the most popular restaurants, the hot spots featured time and time again in magazines and TV shows, instead you have to plan ahead, do your homework and find places that will support your restrictions. This salad celebrates the best of the season and not only is it beautiful, but it packs a punch in the flavor department. It is sure to impress anyone you serve it to and I can promise this salad will be the Knight in shining green armor at any carb-heavy holiday meal.

I find many people think that they don’t love raw kale, I agree, it’s not super palatable in it’s raw form. It’s rough, fibrous, strong and often times bitter, but you would be shocked what a 5 minute rub down can do for this popular superfood.     This tutorial falls under the category of simple, yet sweet. Or should I say, simple, yet savory! This is the perfect weeknight meal solution and as of recent, it is a near weekly occurrence in our house. I grab a fresh 3-4 lb whole pasture-raised chicken at the farmers market or Whole Foods, I rub it down, season it up, pile it atop some root veggies in the Crock Pot and voila, 4 hours later, dinner is ready.

    The best part of a weekly whole chicken is how many meals we get from it. The meal from the whole roasted chicken is good for at least 2-3 meals, we enjoy it with the potatoes, as chicken salad, on top of big green salads, etc. Then I make a big pot of stock from the leftover bones and we get another 2-3 meals from that. This is truly a must for any busy family.

    The seasonings on your chicken can vary with your preference and your mood. Generally I use this all-purpose herb and seasoning blend, that I love, occasionally I will opt for a spicy, chile pepper rub, it’s also great with lemon zest, garlic and freshly ground black pepper. The possibilities are endless. Seriously, you will never buy that rotisserie chicken from the store, again.

    My Path to Becoming a Certified Nutritional Therapy Practitioner

    When I started Tasty Yummies, I was never inclined to create a journal of my own personal health journey, so I often refrain from getting super personal with my healing protocols and health challenges. I have consciously avoided flooding these pages with every discovery in my own ever-evolving health and dietary challenges or with every personal plan of action. Without any certification or credentials I often found myself feeling restricted from sharing too much of the self-initiated research I was doing, as I am hyper-aware of the barrage of claims made by bloggers without credible research or science to back it up. Mostly, I have always wanted Tasty Yummies to simply be a safe space to celebrate delicious, nourishing real food, and hopefully, a place to provide inspiration to empower others to take control of their health and to be open to discovering new foods themselves, whatever their restrictions or personal path may be. I have always sought to create a place to share my personal stories when appropriate and to cultivate a virtual connection among a supportive community of open-minded souls.

    The fact remains however, that this website and my recipes wouldn’t exist without the many challenges I have experienced in my ongoing journey towards healing. Hidden within my own personal struggles emerged the desire to share, share, share! While none of my issues, in my mind, should be classified as “severe” or life threatening and while I don’t have epic before and after photos from an intense and acute health transformation, I would certainly still consider many of my health struggles to be chronic and some still unresolved. I am quite literally learning right along side many of you.

    The Challenges.

    As a child I dealt with a weakened immune system, allergies and asthma, migraines and troubled digestion. As life moved on, I discovered a severe gluten intolerance, and have now been gluten-free over 10 years – while this major dietary adjustment has certainly helped with some of these symptoms, I continued to suffer. In the early years of my adult life, even after going gluten-free, I struggled with weight gain and acne, chronic sinus infections, lack of energy and so much more, further adjusting of my diet has tackled much of this, but last year I was also diagnosed with IgA nephropathy, an autoimmune form of kidney disease. Consequently in the process of treating the kidney disease I also discovered through the help of my naturopathic doctor, that I was struggling with what we believe to be leaky gut, likely from the months of pharmaceuticals prescribed to me for the kidney disease. While I am still smack in the middle of this ongoing work to get my kidney disease in remission and my body to a point where I can feel good each and every day, I continue to share the recipes I am creating in my own kitchen, often part of my own healing path, in hopes that they may inspire some of you, within your own individual health journey, to feel less overwhelmed as you reconfigure your diets.

    Why I want to Know More.

    As a result of my own individual research and constant trials with nutrution, diet and supplementation, through my lens of seeing food as medicine and knowing that real food heals, I have come to the understanding that we are all bio-chemical individuals and there is no one protocol, diet or plan for all of us, there can’t be, we are all such beautiful and unique beings. I myself have always refrained from labeling my diet or pushing myself and this blog towards one specific label, as I find this to be ever-evolving process and for me, labeling my diet is not something I have ever felt called to. As with most everything in my life, my intuition instead constantly leads me towards balance and simplicity and learning to listen to my body’s innate cues, rather than adopting a static list of firm Do’s and Don’ts. I have found myself on a path of constant independent learning, research and exploration to find what works for me and through my search to help myself, I have oftentimes found I am able to help others as well, something I have learned I truly love and now feel called to do even more.

    I have come to realize that in sharing my recipes, through instructing yoga, hosting retreats and teaching cooking demos, these are all amazing ways I am able share my passions and hopefully empower others to take control of their own health and their well being. But, I have been feeling that when it concerns food and our health, that I wanted to make an even bigger impact, I want to be able to host cooking demos and speak with conviction and credibility about how we can deal with chronic comprised digestion, blood sugar regulation issues and I want to share the precise scientific reasons why certain ingredients are making an appearance in my recipes. I want to be able to better respond to folks seeking to make recipes fat free and explain to them in a concise way, why it is so important to include healthy fat in our diet and the list really just goes on and on. Finally, I have met so many incredible, yet desperate people over the years looking for answers, I have many family members and friends that struggle with their health daily and I want to help however I can, anyone who comes to me inquiring. I want to crush these old, antiquated myths surrounding eating and our diets and reveal the truth about food and it’s healing powers.

    Thai Pumpkin Curry with Salmon and Shrimp

    There is something so comforting about a warm bowl of homemade curry. Though it isn’t a food I grew up with eating, I often find myself craving it, seeking that warm hug in a bowl feeling. More importantly, one of my very favorite things about homemade curry, beyond the delicious flavors, is that it’s a quick meal that can be whipped up in under 30 minutes, tops! Great for using up whatever seasonal vegetables you have on hand and super versatile when it comes to your protein choice.

    Thai Pumpkin Curry with Salmon and Shrimp

    This is a good fool-proof, quick meal to whip out on those busy school/work nights, when you can’t be bothered with too much else. Like many of the recipes I share, you can also be quite liberal with the substitutions on this one, choose your favorite squash (just adjust cooking time as need), opt for sweet potatoes instead of squash, add broccoli, greens or whatever you have on hand. If you aren’t a fan a seafood, leave it out, add more veggies, try chicken or tofu. (FYI chicken will take much longer to cook, so adjust accordingly)

    I serve this in a big cozy bowl on it’s own. You can also serve it over rice, if you’d like. It’s unique, beautiful in color and full of robust and well rounded flavors. The creaminess of the coconut milk, the vivid color and texture from the pumpkin puree, the hint of brightness from the lime, a subtle heat from the red curry and the aromas will have you drooling before you even sit down to eat.     The last remnants of summer have all but disappeared, the sun is setting early, leaves are changing colors and the smell of fall is definitely in the air. Or maybe it’s the cloud of the pumpkin-spiced-everything obsession always wafting just above us. Either way, this is one of my favorite times of year. Jack O’Lantern carving, houses all throughout the neighborhood are decked out in their spooky accoutrements, and the very visceral excitement from all the kids for this year’s costume can be felt no matter where you go. Though it’s been quite sometime since I’ve thrown on a mask and taken to the streets for some good old fashioned trick or treating, I do still find myself wanting to indulge in the treats. I am only human, after all.

    I am not so extreme or excessive in my approach to eating and food to that I think that Halloween should be celebrated with raw veggies and dollar store toys, rather I try to encourage the idea of homemade, real food options wherever possible. So, I thought a list of some of my favorite Real Food Halloween Treats would be a great idea and it might inspire you to try a few homemade options this year, rather than the creepy, scary packaged stuff, loaded with high fructose corn syrup, hydrogenated oils and artificial colors and flavors! Also, I am really showing my cards here and you’ll clearly spot my obsession with chocolate.

    There is something about the fall and the winter and the cooler weather they bring, that not only elicits those feelings of cozy comfort, for me it also brings a desire to gather and share nourishing food, with others. With the holidays on the horizon, this love of community and connection is strong and needed, in these darker, cooler months ahead.

    Earlier this month I hosted Gather, a women’s retreat here in Southern California. Beyond teaching yoga every morning, I also had the wonderful pleasure of preparing all of the delicious, seasonally-inspired food for all of the meals we shared together. Mostly vegetarian and exclusively gluten-free, the meals highlighted light, comfort food, the flavors of the fall and as always when I am cooking, nutrient-rich, whole foods.     I’ve got a lot for you today. I have the first-ever pancakes on Tasty Yummies, a few life lessons, a #virtualpumpkinparty and one of my favorite healing superfoods! Here we go….

    Have you ever had a day, or a stretch of days where you are overloaded with life lessons, messages and moments that stop you dead in your tracks, to smack you upside the head with a little nugget of goodness, before sending you on your way, again?

    I have had a lot of those lately. Little lessons and hidden reminders, that bubble up to the surface within the most mundane of moments and oftentimes coming out in the midst of the most frustrating challenges. It could be that I have been attempting to be more aware in the present in the moment, being open to what’s around me, rather than living in my head and getting caught up in letting my mind wander (which is something I often do). Whatever the cause, these little reminders have been exactly what I need, lately, exactly when I needed them.

    These beautiful and delicious, Grain-free Pumpkin Spice Pancakes, they were the culmination of so many reminders for me this past week. The first attempt at making these, I found myself swearing and angry. I had wanted to make waffles but they just weren’t working out, so I attempted to just make pancakes instead, as long as I had the batter. Pancakes weren’t what I had wanted and it wasn’t part of the plan – so, at first I really let it bother me. After a few deep breaths and in realizing that I had inadvertently created really delicious pancakes, I found myself really grateful for the mistake. On the second creation, I was super happy with how the pancakes came out again, but in editing the photos I realized that I should have chosen a smaller plate, the pancakes were getting lost in a sea of pattern from the large plate. I nearly scrapped the entire recipe and I found myself in tears, at my computer! In hindsight and in writing this out, I realize just how silly and insignificant this all seems and how ridiculous I may sound, but, as usual I am finding, in the simplest of moments, the biggest lessons are learned, so I wanted to share some of these sweet lessons that were brought to me this week.

    1) Be OK with the Imperfections in Life.

    I have to admit something to those that may not know me personally, I can be a bit of a perfectionist at times. Part of why you have never seen a pancake recipe here on Tasty Yummies, is my need for certain things to be perfect (in my own mind, that is). I worried that my pancakes wouldn’t be perfectly round and that people wouldn’t make them if they weren’t big and fluffy. I feared if I didn’t have the perfect shot of the perfect stack of pancakes, the syrup ever so delicately dripping over the edge, they would  be a failure. So, although I make pancakes at home all the time, I had opted, in over 5 years of sharing recipes here on TY, to not share any of my pancake recipes, for not wanting to have to photograph them, worried that they would be wonky and imperfect.

    As I was asking my food blogger friends for tips on making perfectly round, pristine pancakes, I was reminded by my dear friend Sherrie, to just ’embrace the imperfections!’ I recalled in her beautiful reminder, that I myself am drawn to the social media feeds and the blogs where life isn’t illustrated as “perfect”. To me, the authenticity of the creator shines through in the imperfections and those are most often where I find myself relating and connecting with someone vs. the perfection so often carefully crafted and curated for viewing in the public light.

    I decided that like me, no one else reading this blog is “perfect”. You probably have lumpy, not-so-round, imperfectly perfect pancakes all the time at your house. I’d be willing to bet, however, even in their imperfections, like my homemade pancakes, that yours still taste incredible, and everyone that you serve them to are happy to eat them, just the same.

    2) Less Really Can Be More.

    It doesn’t always have to be about the big stuff in life. Bigger and more, they aren’t always better. Take these tiny, cute little pancakes – they may be dwarfed by the pretty patterned plate, they may be smaller than a traditional pancake, but these orange-hued, subtley-spiced, seasonal pancakes, they pack a punch, both in flavor and nutrition.

    Finding gratitude in the challenging moments of life, this can be hard at times. Next time you are in the midst of a challenge, stop to recognize that every moment is a given moment and that moment in itself, is a gift. We can’t buy moments, no one gives them to us, they are there for us and within each and every moment we have an opportunity to be grateful.

    In the car three days ago, in a moment of stressful errand-running after the failed waffle debacle, I flipped the radio to local NPR affiliate and I caught the end of the TED Radio Hour, this past week’s theme was “Simply Happy”. I heard the end of this beautiful speech from David Steindl-Rast, that I have heard so many times before and the feelings of gratitude for the timing of this story, immediately flooded over me.  Suddenly where I was struggling with feelings of failure and feeling stressed about the imperfections, my focus shifted to being so grateful and so happy that I get to do what I love every day, even in the moments of stress and challenge. When I left the house I was agitated and frustrated and by the time I returned home, my face was filled with a smile and my heart nearly exploding out of my chest.

    Savory Herbed Cashew Pumpkin Dip

    I am all about the simple lately. Quick fixes, simple snack, meals without fuss. I want to enjoy the flavors of nourishing whole foods, with the seasonal ingredients I have on hand and minimal prep. It’s been a hectic month or so.

    I haven’t had a moment to tell you guys, but I am back in school! As of this month, I am enrolled in the Nutritional Therapy Practitioner Program with the Nutritional Therapy Association to become a Certified Nutritional Therapist. I have long dreamt of finding the proper program where I could continue educating myself in a manner that would certify me to work even deeper with people, seeking to heal their bodies through a real food diet and a more foundational perspective.

    I myself have been on a long and continued path towards healing my body. 10 years of trials and tribulations, ups and downs, diagnoses and at times, challenged guidance. While my own healing journey is far from over, with new discoveries on what works best for me still being made weekly, I have so much I want to share and yet, so much still I want to learn, both for myself and for the countless others whom I meet and want to help.

    While this fall has been one of the busiest I can recall, I have also been fortunate to be traveling a ton, living life to it’s fullest and doing my best to enjoy each and every moment. While visiting San Diego county a few weeks ago, in the adorable town of Julian, my husband, Mark, and I were walking the Main Street of this quaint old gold mining town. Julian is an enigma of Southern California, experiencing all 4 seasons, even including snow in the winter. It’s unlike any other place I have been out here. It was an instant love-connection for this east coast girl.

    We went at the start of the fall season and autumn was already in the air. Crisp cool breezes, chilly nights, the leaves of many of the trees already changing color and the sweet scent of apple pie in the air. This town doesn’t mess around when it comes to apples. After the gold rush was over, the pioneers remained in Julian, as they began farming the rich land. While many crops were planted and animals raised, apples seemed to be their new “gold”. To this day, during apple season, you will find fruit stands filled with fresh organic apples, locally pressed real apple cider and pies galore. Oh the pies! Quite literally, Main Street in Julian is filled with the aroma of this spiced comfort food.

    As we strolled the tiny Main Street, Mark was seeking out what he deemed to be “the perfect slice”. I am pretty sure we walked into every single bakery and he looked on as if he was making a major investment purchase. Only a few city blocks long, Main Street had near 10 bakeries, all specializing in their version of this American classic. I was convinced, being gluten-free, I would only be experiencing this as an observer, enjoying the smells and the smile on my husband’s pie-loving face. But alas, I found one amazing bakery, tucked away a bit off the beaten path, Apple Alley Bakery. The only bakery in ALL of Julian offering gluten-free pies. I opted for the Apple Boysenberry Crumb Pie and as soon as my slice was gone, I wanted more.

  18. The Benefits of Travel

    The Islands of Loreto, Baja California Sur

    If you follow me on social media, you have probably noticed how much traveling I have been doing this year. Being on the road, exploring and discovering – this ignites my soul in a way that I can’t even express into simple words. Just this year alone, I have been on-the-go in bustling cities, I have ventured home to experience the comforts of family and my old stomping grounds, I have hosted and experienced retreats in the forest of Northern California, amongst the mighty sequoias and at an ashram in the desert and I visited a bison ranch run by an inspiring family, following traditional and sustainable practices. However, one of the most relaxing trips I have taken this year, was the luxury and rejuvenation I experienced in Loreto, Mexico, in the Baja California Sur. {You can read a bit about this incredible trip and the delicious food, here}

    In the Indian culture there is a tradition of taking retreats to rejuvenate and revitalize the body, mind, and spirit. This is time away from work and responsibilities to focus on the self, to gather strength and wisdom so that we can return to society with new energy and enthusiasm. Yet here in the west we rarely allow ourselves such a luxury. We work too hard, too much, and don’t allow enough time in the day for contemplation, let alone an entire day to devote to our spiritual growth. And we feel it – maybe over time it happens so gradually that we get used to the sluggishness and struggle – but that’s not the way life is supposed to be.

    Sometimes, less really is more. I feel like there can be a lot of pressure in the recipe developing world, to go further, to come up with super crazy flavor combinations, to mix unsuspecting ingredients together or to be the first to come up with the next big food idea. Those big ideas and crazy creations often spread like wild fires amongst other bloggers, some ideas may become infamous on Pinterest, but ultimately I find for me it can all just be a thankless rat race. When I am cooking for myself or others, I always come back to the idea that less is more, don’t over-think it, K.I.S.S. (keep it simple, stupid). The most simple recipes here on Tasty Yummies are typically the most popular. I like to be able to cook recipes with ingredients that I already have on hand, on a week day, I don’t want to run to 45 stores to get all the ingredients for one dinner. I like easy, smart and quick.

    Life has been busy this month, one of the busiest I can remember in a long time. There have been countless trips, more hotel rooms than I can count, flights, visits with family, conferences, events and so much more. When I come home and I look at my to-do list and the next round of travels, I feel overwhelmed, so the last thing I can imagine doing is developing some epic creation in the kitchen. If I feel that way, I have to imagine that many of you do, as well. The last few weeks have been about easy meals, bone broth and homemade soup, crock pot meals, grilled local grass-fed meats, ALL the veggies and lots and lots of salads.

    As life has me spinning and the message to “Honor Yourself” has continuously presented itself to me over the past few weeks, I have been trying very hard to give myself the space to do this. This isn’t an easy feat when life is feeling wildly out of control. I found myself fighting a cold last week, likely from all of the going and not properly taking care of myself and I am sure being on planes and in hotels with lots of germs, didn’t help either. Since I didn’t have the space to fully allow my body to heal, earlier this week I felt myself fighting off a sinus infection. I realized no matter how hard it would, I had to stop. Breathe. Give myself space to ground in. I found time to meditate, I sat with my feet in the sand at the ocean, I took a walk with my hubby and our pooch.

    It isn’t easy to stop going when life is crazy and it doesn’t always feel good to say no to the bigger and “better” things in life, but ultimately when we can nourish ourselves, we are in a much better place to then nourish those around us, in our family and in our community.     Let’s just get this out of the way right now, yes I ironically used a z in the word cheese and yes, I also put quotes around it. That’s happening and I am totally into it. OK onto the show.

    My hubby is like most, a meat and potatoes man. He’s a no-frills, gimme what’s easiest, fastest and tastiest – kinda guy. Of course, being that I make most of the meals around here, I can keep his poor decision making and junk-food loving ways in check. Over the years I have proudly gotten him off soda, I have proven that a piece of good quality dark chocolate after dinner can be just as satisfying at 4 Oreos, I have convinced him that it’s possible to eat more than just meat and still eat well and my latest feat, showing him that we don’t necessary HAVE to have a starch or grain at every single meal.

    Football season however, this is a tough time around here, it can be a hard sell on the plant-based, less processed foods. Mark LOVES football and he LOVES eating the worst foods while watching it. If he had it his way, he’d be munching on fried chicken, eating a pile of nachos, diving face first into pizza and Buffalo wings and I don’t even want to think about what sweet he’d finish it all off with. He’s always asking me to come up with fun football snacks for him and of course, I try to always deliver him a much more mindful, yet still comforting treat. He never asks me to make him something “healthier”, per se, but I am smart enough to read between the lines. He could easily go to the store and get the junk for himself, he certainly knows how to pick up the phone and order a pizza. I think deep down, though he may never admit it, he wants me to take care of him and make these better choices for him. No complaints here!

    If you follow me on social media, on apps like Instagram or Snapchat, you may have noticed that after nearly 3 years of living in California, I am back to traveling again. The travel-bug has bit this girl and this is an itch that must be scratched. I absolutely love adventure and I live for that joy you get when discovering new places.

    The hardest thing about traveling, however, is doing so with dietary challenges. With limitations on my diet and wanting to maintain a healthy, mindful lifestyle, this can be hard while I am away from the comforts of my own kitchen. While challenging, it is also totally possible and I want to share with those of you living a life similar to mine, that with a little research and planning, your wanderlust can certainly be quenched, too! In the past, after first changing my diet, discovering my gluten intolerance and making other changes to my lifestyle, I had found myself scared to travel, worried that I wouldn’t be able to eat. But I always more than make it, I eat well on my travels and I am able to honor my body the way I choose to, while still being able to explore new cuisine, experience new restaurants and travel a city the way everyone else gets to. I want to encourage you guys, to get out there, to have fun, explore and travel.

    For me, a big part of my travel routine, relies heavily on planning ahead and of course, packing food. Though with every passing year it gets easier and easier to find restaurants that truly support gluten-free, I also like to know that I am covered. Plus, when flying, let’s be honest, most airlines haven’t quite received the memo that gluten-free is a thing! Homemade energy bars, trail mix, dark chocolate and other healthy snacks, these are always a must for me. Plus, I don’t ever leave home without some green stuff. This girl’s gut needs the green stuff to keep things moving, if you know what I mean.
