    How-to Build an Epic Grain-free Cheese and Charcuterie Board

    When it comes to entertaining, boards are the ultimate in wow factor without a ton of fuss. More specifically I am a HUGE fan of cheese and meat boards. Selfishly when entertaining, since I prefer to avoid grains and greasy chips and snacks, cheese and charcuterie boards offer a great, pretty low maintenance way for me to have everything that I want, while still making all of my guests happy.

    My cheese and charcuterie boards are generally focused around being totally grain-free and then depending on my guests, I will often have a generous pile of toasted crostini, that I serve to the side, separately for the non gluten-free or grain-free folks. I simple arrange sliced crostini in a single layer on a cookie sheet, brush both sides with olive oil and toss under the broiler for a few minutes on each side. Add a sprinkle of sea salt. It’s the fastest way to lots of toast.

    Truth me told, the loaded fries and the chicken wings, those are more my husband’s football food. He begs and pleads for junk food on football Sundays, so I have always caved by simply recreating the classics for him, but in a healthier way. It’s a good deal for both of us. Me, I am a bit more uppity when it comes to what I want in a party spread. Give me an epic charcuterie or crudités platter, a little homemade roasted red pepper and feta dip, some tasty, fresh homemade salsa and chips (I reach for the plantain chips these days), a simple, but flavorful chili, the best darn gluten-free soft pretzel bites or these…tasty, crispy salmon cakes!

    These Grain-free Salmon Cakes with Old Bay Aioli may seem a more fancy option at your Super Bowl spread, compared to the chips, fries or wings, but don’t let these fool you. They are whipped up in a mere minutes and they are the perfect small bite, party food. A little crispy on the outside with a soft, fluffy, perfect interior. Do not, I repeat do not skip out on the Old Bay Aioli. It’s a must here.

    Though salmon cakes aren’t a food I grew up eating, these are comfort food to me. They are totally fuss-free, so they actually make for a very simple weeknight meal or a quick lunch or brunch, even. We almost always have canned salmon on hand, but this recipe is also great for leftover cooked salmon, as well. I love these served over a mixed baby greens salad, but they make an amazing appetizer, as well. Make the patties even bigger and go for more of a burger vibe, if you’d like.

    It’s been a tad quiet here on the website and my social media outlets while I enjoyed the magic of the holidays with my family in NY. I took a little break from the constant posting and checking all the social channels, while allowing myself to be fully submerged in the short time I had with my family. Those trips back home are never long enough, they fly by in the blink of an eye and I find myself packing my bags up to come back to our home in California, in what feels like mere hours after we had just left.

    I know I am repeating myself when I share this thought, but whether traveling and visiting family or in my own home entertaining guests, I very much subscribe to the notion that just like the rest of the year, the holidays should be about balance. Making mindful choices, but also not limiting yourself to such an unhealthy degree that you wander through the season feeling deprived, left out, unhappy or unable to relax and enjoy your loved ones. A few extra starchy carbs or a little extra unrefined sugar, by way of those tasty homemade gluten-free cookies or maybe a little extra dairy than normal in those traditional homemade meals your family makes, I can promise you that it won’t kill you (this is all outside of any existing allergies, of course). If you eat a little off your usual plan, doing so knowing it’s a treat, it won’t derail your hard work from the rest of the year. It’s not only about the balance but also, the energy and the emotions you harbor when eating. Dropping the guilt and the feelings of “doing wrong”, this matters and it certainly affects how your body chooses to respond to the treats, as well.

    Guess what today is? Today is baby shower day! A bunch of us food bloggers got together and we are throwing a surprise virtual baby shower for our friend Emily of The Pig & Quill, who is anxiously awaiting the arrival of  her first little piglet in the next month.

    First off, I want to talk about how jealous I am of their new addition. I am pretty sure this is going to be the most well-fed little one, ever! That Emily sure knows her way around a kitchen and she doesn’t mess around when it comes to combining flavors and creativity in her recipes. When it came time to create a dish to bring to our little virtual gathering, I quickly realized that couldn’t just bring any ‘ol pink cupcake or some chips and dip, I had to step up, bring my A-game and get serious with my offerings. But, as you guys know I am still smack in the middle of an elimination diet (it was 10 weeks this past Friday, but who is counting) – so with lots of restrictions and true to the real life, selfishly I also wanted to bring something to this party that I could eat.

I’ll be honest, the concept of this recipe came straight from me looking for a savory dish I could incorporate the color pink, given that Emily and Chris are expecting a girl! Though salmon isn’t exactly that pale baby girl pink color we all know, I still think I should get major bonus points on sticking with a theme! Thank you.

    One of my favorite things about blogging has been connecting and making friends with people who I not only have so much in common with but who I also adore, so much, too. Who knew it was possible to have, what some people would consider to be “perfect strangers”, as some of your most favorite people and some of your closest friends.

    Since most of us bloggers are scattered all over the country world, it would be nearly impossible to get everyone together to throw a party in someone’s honor – so the next best thing is a virtual party and today a bunch of us teamed up to do just that!   6. Photo Fun Day Friday

    I have been busy bad and I totally spaced on my Photo Fun Day Friday posts the last couple of weeks, so this is a bigger one than usual. I flew home to Buffalo this past weekend for the first time since we moved to Southern California six months ago! It was my niece Teagan’s 4th birthday and I hadn’t seen her since we left at the end of February. I missed her (and everyone) sooo much! It was a wonderful trip home, I crammed in as much time with friends and family as I could and just enjoyed every single bit of it.

    Dark Chocolate Peppermint Truffles - Gluten-free + Vegan

    What better gift to give than the gift of chocolate, right? These dark chocolate peppermint truffles are sure to leave a smile on any chocoholic’s face. Especially when they find out you made these just for them.

    Dark Chocolate Peppermint Truffles - Gluten-free + Vegan

    These truffles are simple to make and they are naturally both gluten-free and vegan. Additionally, they are low in sugar and very simple to make. A few ingredients, a few minutes at the stove and that’s about it. You can even play around with the recipe and leave out the peppermint and roll them into other goodies, like chopped nuts, coconut, melted chocolate or chocolate bits, etc. Make this recipe your own and customize it for whomever will be receiving it.
    Dark Chocolate Peppermint Truffles - Gluten-free + Vegan

    [print_this]Dark Chocolate Peppermint Truffles – Gluten-Free + Vegan
    makes about 24+ truffles (depending on their size)

    • 1/2 cup full-fat coconut milk (the canned kind)
    • 2 tablespoons coconut oil
    • 10 ounces high quality vegan dark chocolate (70% cocoa) – chopped
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon peppermint extract
    • dash of sea salt
    • 1/4 cup cocoa powder

    In a double boiler, heat coconut oil and coconut milk over a low/medium heat, whisking until just melted and well incorporated. Add the chocolate, stirring continuously, not allowing it to heat too quickly. Just as soon as it is melted, remove from the heat and stir very well to make sure it is all well incorporated. Add in the vanilla and peppermint extracts and salt.

    Pour into a 8″ baking dish or a pie pan and refrigerate until the mixture is mostly set , but still pliable. Using a 1″ melon baller or a tablespoon, scoop out the chocolate and roll into balls using your hands, set them on a parchment paper lined cookie sheet. Once all have been rolled, place the sheet into the refrigerator for about 10-15 minutes, up to overnight.

    Place the cocoa power onto a small plate and roll the balls in the cocoa powder to coat, you can also put the cocoa powder in your hands and roll them around that way. Store the finished truffles in the refrigerator.

    These truffles will keep up to two weeks in an airtight container in the refrigerator. Allow to come to room temperature for about 15 minutes, just before serving.

    Mint Chocolate Chip Brownie Bites - Gluten-free + Vegan

    I feel a little bad, because I really haven’t addressed the running thing in about two weeks. So many of you offered really great advice and I was really feeling great about it all.  I went on a total of three runs and I really took each one very easy, trying not to go too hard too fast. Because I was using an iPhone app that basically was helping me ease into running, it had me on a program where I would walk for about 90 seconds then run for 45 and so forth, including a warm up and a cool down. The workouts were 30 minutes long and I was “running” about 2 miles each time. After my third run I was experiencing some very severe inner knee pain almost immediately afterward. I hesitate to even call it knee pain, as it was far more like leg pain, than knee pain. I wasn’t having any pain in my knee caps, I could kneel on them, etc. It was more any amount of pressure was seriously irritating both of my inner legs near the knee. Going up and down the stairs was horrid. I decided I need to take a break from running before I did any major damage to my body. Shortest running career, EVER! I kept up with my daily yoga practice and I did a ton of icing and I was taking ibuprofen, as needed. All of those things helped, but it took a solid 2 weeks for my legs and knees to stop hurting as much as they were. I wouldn’t say that now I am back to the way I was before this happened, but I am very close. So yeh, that was seriously upsetting and totally a let down. It is partially why I haven’t really mentioned it, because I was a little let down that only 3 runs in, I was already forced to take a break.

    In talking with my friend Elyssa, who is also my amazing chiropractor and one of my yoga teachers, and in her looking at my knees, she explained that it seemed to be a tracking issue. My knees just aren’t tracking straight, so when I bend them, they tend to want to fall in, instead of staying in line over my toes. Not caused by the running, something that was already there, but aggravated by the running. Now that I am aware of this, I notice all of these things I do, even in yoga, where I allow my knees to fall in. So she gave me some strengthening exercises to do and I haven’t given up all hope, just yet. I do feel like I need to do some work on my body before I jump back into running. That knee pain honestly scared the crap out of me and made me quite sad that I was never going to be able to enjoy running.

    At any rate, the running stuff really has very little to do with these brownies, but I felt the need to share the status on my newfound and short love affair with running, since I had left everyone high and dry after you all offered so much incredible advice and encouragement. Thank you again, seriously and hopefully I will need more of that advice again soon, when I feel ready to go back.

    I guess what these brownies do have to do with this story is that I made them over the weekend for a Sip ‘N See party for Elyssa, her husband Aaron and their brand new baby boy, Oliver! The party was a bit of baby shower, but everyone got to meet the amazing Oliver and welcome him to the world. Elyssa and Aaron adopted baby Oliver and the party was one of the nicest celebrations I have ever been to. It was a very casual and laid back get together with lots of people from our yoga studio and obviously some of their other family and friends. Everyone just got to visit, swoon over the baby and just enjoy each other’s company and lots of yummy food. Since a handful of other people there are also gluten-free, a few are vegan, some are just dairy-free or just vegan, etc – my friend Kathleeen (hi, Kathleen! 🙂 ) asked me to make something sweet for a dessert! I was all over that. I love making sweets for people, especially when I know they will appreciate them being gluten-free and vegan!

    It took me a couple of days to decide what to make for a good amount of people, in a casual grab-it and go kinda setting. It had to be small, bite-sized and easy to just pick up and eat. I was thinking about cupcakes for a while, but I am not much for the decorating part of cupcakes. It just isn’t my thing. That’s when I realized a brownie bite would be perfect. When I made these for the party, I wasn’t sure everyone would love the addition of mint, so I made half of them mint and half just classic chocolate. It could have been their placement on the plate, or coincidence, but the mint ones went so quickly. They were gone long before the classic ones. Since it was the first time I had made them, for the party, I did decide that I wanted to change a couple things about the recipe, so I made them again a few days later, to try to perfect them. The second time was definitely the charm, I seemed to get the ratios more on point and they were exactly right.

    Mint Chocolate Chip Brownie Bites - Gluten-free + Vegan

    The fact that I have an overabundance of fresh mint growing in my yard, is the reason why I wanted to had to include some fresh mint in these brownie bites. I couldn’t resist. If you don’t have any on hand, no worries, you can simply leave it out. If you don’t like mint flavor, just leave out the fresh mint and the mint extract and add in a little more vanilla and you are left with classic chocolate chip brownie bites.

    These tasty little nuggets are filled with flavor, they are the perfect size, they are easy to eat and the mint and chocolate combination is really to die for! They are fluffy and moist, while being chocolatey and gooey from the chocolate chips and for me, they are the right amount of sweet.

    Mint Chocolate Chip Brownie Bites - Gluten-free + Vegan

    makes approximately 30 brownie bites
    Loosely adapted from this recipe

    • 1/2 cup coconut oil, melted, plus a little more for the pans
    • 1/2 cup garbanzo and fava bean flour
    • 1/2 cup almond flour (aka almond meal)
    • 1/4 cup potato starch
    • 2 tablespoons arrowroot starch
    • 1/2 cup maple syrup
    • 2 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1 teaspoon salt
    • 3/4 cup unsweetened cocoa powder
    • 1/2 cup mashed ripe bananas
    • 1 tablespoon pure vanilla extract
    • 1/4 – 1/2 teaspoon mint extract (I used just about 1/2 teaspoon and the mint flavor was perfect, not too overpowering at all)
    • 1/4 cup hot water
    • 10 ounces vegan, gluten-free semi-sweet chocolate chips (mini chocolate chips would also be good)
    • 1/4 cup firmly packed, fresh mint, very finely chopped

    Preheat oven to 325 degrees. Brush 3 dozen mini-muffin pans with oil; set aside. You can also just use one pan and wait until each batch cools to unfold them and then regrease the pan to make the next batch (this is what I did).

    In a medium bowl, whisk together garbanzo and fava bean flour, almond flour, potato starch, arrowroot, baking powder, baking soda, salt, and unsweetened cocoa powder; set aside. In a large bowl, mix together banana, maple syrup, coconut oil, vanilla and mint extract. Slowly add flour mixture, stirring to combine. Stir in water until it forms a batter. Fold in chocolate chips and fresh mint.

    Place approximately 1 tablespoon batter into each prepared muffin cup, you want them about 3/4 of the way filled. Transfer muffin pans to oven, and bake until a toothpick inserted into the center comes out clean, 18 to 22 minutes. Let cool completely in the pan on a wire rack before unmolding.

    Arugula, Fennel and Orange Salad

    Once the fall really sets in, I already start missing my green veggies. I know we are blessed with squash and root vegetables aplenty throughout the winter, but I really start missing all the beautiful local green stuff from the peak of the summertime. I love that at this point that we are still able to get our hands on arugula, kale, spinach and other leafy greens, but I know soon those will be hard to come by. So, I try to get in as much as possible. I grabbed the fennel, arugula and red onion at the farmers market this past weekend along with some potatoes, bok choy, peppers, beets, carrots and as many other vegetables as I could get my hands on. Gotta get it all in now.

    I absolutely love salads, any type really. I rarely meet a salad I don’t love. This cool-weather winter salad has so much vibrant flavor. The peppery crisp from the arugula, the subtle hint of anise from fennel and the tangy sweetness of the oranges all come together perfectly. If I had some in the pantry, I would have topped this salad with some toasted walnut pieces.

    Arugula, Fennel and Orange Salad
    serves 4

    Vinaigrette
    1 small clove garlic, minced
    1 teaspoon wholegrain or stoneground mustard, no salt added
    1 1/2 tablespoons olive oil
    juice from half an orange (or lemon) – approximately 1 1/2 tablespoons
    1/2 teaspoon kosher salt
    1/4 teaspoon freshly ground black pepper

    Salad
    5 cups baby arugula, trimmed and roughly chopped
    1 small fennel bulb, trimmed, cored and thinly sliced crosswise
    1 1/2 oranges, peeled, white pith removed and cut into segments (use the remaining half for the vinaigrette)
    1 small red onion, thinly sliced

    In a small bowl combine all dressing ingredients and whisk to thoroughly combine, set aside.

    Place the arugula in the bottom of a large serving bowl, scatter the orange segments, fennel slices and onions over the arugula; drizzle the dressing over the salad to serve, toss gently. Serve.
