    Chocolate mouse is one of my favorite desserts…well basically anything including dark chocolate will get you an A+ in my book. This is one of those desserts that is so simple but tastes so decadent you and anyone who tries it will think that it was made by a professional baker.  No need to tell anybody that this is dairy free and gluten-free, that’s how amazing it tastes! This recipe is can easily be made grain-free and refined sugar free, depending on the cookies you use or how you make the crust. We love a good dessert, but we also like to ensure that we use the highest quality ingredients within our budget and still making sure that the recipe is amazing.

    First, you want to make sure that you have a good can of coconut milk. We want the cream on the top because that will help the pie stay more solidified. If you can shake your can of coconut milk and hear everything move around, you’re going to want to put it in the fridge for a few hours and if you think about it ahead of time, put that can of coconut milk in the fridge the night before. When you open your can of coconut milk you’re going to want to scoop off the solid part on top, that’s the good stuff! You want to measure out one cup of coconut cream. You can also purchase just canned coconut cream, too, if you’d like.

    Next you want about 1 cup to 1 1/2 cups of dark chocolate chips, bittersweet chocolate chips or roughly chipped dark chocolate. We used dark chocolate chips that were sweetened with coconut sugar. We recommend using a double boiler to melt the chocolate down, it is the easiest way to melt down the chocolate without burning it. If you do not have a double boiler you can also use the microwave heating for 1 minute to start then 30 seconds at a time stirring every time you need to add more time.

    These gluten-free Dark Chocolate Crispy Peanut Butter Balls are literally ALL of my favorite things in one. Dark chocolate, peanut butter, they’re a little creamy, a little crunchy and they have the perfect bit of salt on top. WHAT? Did I dream these?

    We had a small outdoor, safe, Thanksgiving celebration here at out house with our little “Pandemic Pod of Pals” and I made a full spread of classic, Thanksgiving food w could enjoy outside on our deck. Our friend Audrey offered to bring her famous Chocolate Peanut Butter Balls to share and when dinner ended and I pulled them from the fridge, made sure they were gluten-free and then promptly popped one into my mouth. After I yelled a few overly excited expletives I realized for me, it was love at first bite!! I believe while I was dancing with one of these in my mouth, my exact quote was (and I will leave out my excited use of the F-word) – “OMG, what is this magic? This is all of my most favorite things in one bite!!!”

    After getting Audrey’s original recipe, I made a few small tweaks to the recipe, swapping powdered sugar for coconut sugar and maple syrup, leaving out vegan butter and cutting it in half and opting for salted grass-fed butter instead (you can also use ghee or coconut oil here, too) and the box of sprouted brown rice cacao crisps I already had in the pantry made for the perfect crispy crunchy interior.

    There’s just something about the classic flavors of dark chocolate and peanut butter that I will never tired of and while there are so many nut butter alternatives and yeh, sure, they are good, they just don’t quite do it for me the way that peanut butter does (see below for options and alternatives for other options, if you must).

    Making these Dark Chocolate Crispy Peanut Butter Balls was a therapeutic baking session (sans actually baking) thanks to the sadness of my cancelled plans. There’s something about being in the kitchen, Christmas music blaring and making something sweet that is instantly soothing to the soul.

    The best part about these, since they make well over 4 dozen balls, they are perfect to portion out and share with people you love, especially for the holidays. Leave a small box for your neighbors, give some to your trainer in an effort to bribe him to go easy on you in your workout (I might have done that) or just keep them ALL for yourself.

    I have since learned, thanks to Google that these Rice Crispy Peanut Butter Balls are a classic recipe, though many of the original recipes include half as much cereal and peanut butter and a full cup of powdered sugar, plus milk chocolate. I can’t even imagine how overly sweet those are. I really love that these Dark Chocolate Crispy Peanut Butter Balls are the perfect amount of sweet without hitting you over the head with it.

    By the way, in other circumstances I would have loved to share process photos while I made these, but to be fair, I did make them at like 8pm on a Sunday night after we found out our Yosemite trip had been officially cancelled because our campgrounds had closed due to this secondary lock down in California. So it is what it is, like the rest of 2020!

I generally just stick to my daily dark chocolate. A square or two of 85-100% dark chocolate and I am a very happy girl. Chocolate truly is my love language.

    Hubby is a little bit different than me. The man grew up on sweets. The really sweet sweets! They are his comfort food, so I am always looking for ways to please both our palates.

    This Keto Chocolate Avocado Pudding is a creamy, whipped mousse-like dessert that comes together quickly and it really hits the spot. The best part, as like most recipes you’ll find here on Tasty Yummies, SO many fun flavor options. Add in a little nut butter and some sea salt and it’s delightful. Bump up the coconut flavor with shredded coconut, toasted coconut flakes or maybe a little coconut extract. Mint Chocolate pudding is nice, add a little mint extract and/or fresh mint leaves.     These Keto Chocolate Muffins are little bit different of a recipe for me. I am not big on baking or sweets and I am also not generally one for using alternative sweeteners, not that there is anything wrong with some of them, necessarily, but it’s just not my scene. Most of the time, if and when I am going to have a little something sweet, I will use a very small amount of maple syrup or honey or a little coconut sugar. We’re talking a small amount, because it’s totally fine and I will be fine and honey and a little sugar won’t kill me.

    When I developed this particular Keto Chocolate Muffins recipe, however, I wanted to make a low carb muffin recipe that would be versatile for my different readers and their different needs. I know for many folks eating keto or a low carb diet, they find themselves there due to diabetes or a metabolic condition of some sort where tracking their blood sugar becomes of high importance, so they do have to be more mindful and aware then those of us just choosing this lifestyle to feel good. Having several people in my life, close to me, that are diabetic, I love creating recipes that I know they can enjoy, too and I can feel good knowing they aren’t shoving those super scary artificial sweeteners into their bodies (splenda and the like).

    These Keto Chocolate Muffins can be made several different ways. To be fully low carb and low glycemic, I tested the recipe with this Monkfruit Maple Flavored Syrup, which I have found is a nice replacement for baking recipes that use maple syrup or honey.  There is a very subtle maple flavor, however, so you are aware, but I find that flavor pairs so nicely with these muffins. It’s not too distinguishable in this recipe, but in other recipes it can be more prevalent.

    By using the monkfruit, these Keto Chocolate Muffins (by my calculations) clock in just over 5 net carbs per muffin! Not too shabby. Read the rest of this entry »

    Cravings are a strange phenomenon. Many times cravings are driven by a nutritional deficiency of some sort, for example, often when people are craving super dark chocolate it can indicate a magnesium deficiency. For some, craving a soda can indicate a calcium deficiency, craving sweets (beyond blood sugar disregulation) can be a sign of deficiencies in chromium, carbon, phosphorus, sulphur and beyond. And the cravings to deficiency list goes on and on. But, if you can really listen to your body and the many cues it send, often times these cravings also come from a highly emotional place. Food memories can certainly impart their own cultivation of cravings, foods that remind us of our childhood, things that bring back a flood of times gone by.

    Weirdly one of those cravings for me, that happens a few times a year – I get a highly emotional craving for a bowl of cereal. The comfort of a crunchy bowl of cereal, drowned in milk, eaten on the couch. It reminds me of being a kid. Of mornings before school. That time before the day got busy and hectic, to look forward to what lied ahead, to go over the flashcards for that day’s tests.

    I didn’t grow up eating sugary cereals. My mom had it all pretty dialed in. The extent of our cereal selection was generally things like Kix, Corn Flakes, Honey Nut Cheerios, there weren’t marshmallows and colorful characters. In fact my mom was so mindful that we never drank milk and while milk was allowed on cereal, since I spent a great deal of my childhood not well, my mom went through a period of not allowing us any milk on our cereal an rather apple juice was the liquid of choice (surprisingly quite delicious on Honey Nut Cheerios I might add).

    It’s truly been years since I have had an old school ice cream sandwich, ya know the ones, soft chocolate cookies, vanilla ice cream filling. While working an event a few years back, I came across a food truck that specialized in just ice cream sandwiches and they actually had a gluten-free and dairy-free option for someone like me. YAY! It was delicious and messy but probably loaded with sugar and lots of other stuff I prefer not to eat. It immediately got the gears turning in my head. I wanted to make a more healthful ice cream sandwich myself and I of course just needed to find the time to actually play with some recipe ideas.

    I know we have all seen the one or two ingredient banana ice cream that has been making it’s rounds all over the internet for the last few years. If you haven’t tried it yet, you must. Stop what you are doing right now, put those bananas in the freezer and make some yummy dairy-free ice cream alternative. It is simple to make and sooo surprisingly creamy and delicious. I realized it would make the perfect ice cream sandwich filling since it is creamy, simple to make and literally has nothing more than bananas in it. A great compliment to some grain-free, dairy-free cookies!

    It wasn’t too long ago that I snuck a little cauliflower into some popsicles here on Tasty Yummies.  I’m hoping if you tried that recipe, you still trust me and know that despite these strange ingredient combos, I will never lead you astray. It was a fun surprise to find that the cauliflower brought another level to the treat, with creaminess and also of course, nutrients. While I don’t feel that every dessert should have a veggie snuck into it, I do love the unexpected nutritional boost that this provides. And why not?

    So, I am back at it again today with these Red Velvet Pudding Pops. As traditional Red Velvet Cake is simply a subtle amount of cocoa with red food coloring, it’s actually a cake flavor that has forever eluded me. I never really understood it. It’s not chocolate and the red color has nothing to do with flavor. But not too long ago I tried a gluten-free Red Velvet cupcake and I am not gonna lie. I was into it. But, ya know, it was loaded with sugar and grains.  Additionally, red food dye used in baking is almost always derived from Red #40 (Allura Red) an artificial food dye. According to a CSPI report, some of the most commonly used food dyes may be linked to numerous forms of cancer, along with hyperactivity and other behavioral problems in children.1http://articles.mercola.com/sites/articles/archive/2011/02/24/are-you-or-your-family-eating-toxic-food-dyes.aspx The European Union has recently placed regulations on labeling food dyes to inform consumers of the health risks, but the United States has no such requirement.

    Well, I might just have to quit after this. This Boosted Chocolate Tahini Fudge features two of my favorite things together in a marriage so perfect I am not sure any treat can ever compare. At least for this girl. As if it couldn’t get better, this treat features the bonus healing powers of one of my favorite daily supplements.

    This fudge is dreamy. It’s rich and decadent, it’s unique and “mmmmm”-inducing. Here’s the thing though, if you don’t like tahini, it may not be for you (though you could likely swap in some almond butter or sunflower seed butter). But if you are a lover of all things tahini, you’re in luck. MAJOR luck. The tahini flavor shines bright and in it’s prominence it’s complimented so perfectly by the decadent, rich super dark chocolate. Don’t skimp here, quality is of key. Better yet, use homemade dark chocolate if you’ve got some. You guys already know how I feel about dark chocolate, a square or two a day of this magical superfood and that’s about all this lady needs to be satisfied. It doesn’t take much.
