    If you keep up with me on social media you may probably already know that I not only finished the Nutritional Therapy Association Program in June and graduated, but I totally aced my exams and I am now an officially certified Nutritional Therapy Practitioner. Woohoo!! I have also already begun seeing a small amount of clients. It’s been a whirlwind of a year and I went ahead and just hit the ground running since graduation – then I realized that I never updated and finalized this series. This is the last post chronically my journey to becoming a Certified Nutritional Therapy Practitioner with the Nutritional Therapy Association, speaking to the final 3 months of the program. I plan to, from here, create one final post that is an FAQ of sorts, that I will continue to update as people reach out to me with questions about my experiences, since sadly I don’t always have the time to reply to each and every email, as much as I would love to. If you have any questions in regards to the program or my certification, please feel free to leave a note here in the comments or reach out via email.

    If you have been reading Tasty Yummies for sometime, you know since moving to California 3 years ago, my infatuation love of figs runs very deep. The beautiful, big fig tree that we were blessed with, when we moved into this home, is one of the most magical gifts mother nature has ever given to me. The fig tree is a actually a long-standing symbol of abundance, fertility and sweetness, which is obviously quite fitting. Boy, does this tree produce in abundance! The only bad thing however, is just how short the season is. It’s over in a flash. Middle of the summer and that’s it.

    While we are still a month or so off from fresh figs, it doesn’t mean that I don’t crave those lusciously sweet fruits. Which is why California dried figs are the very next best thing.     This post continues to share my journey of becoming a Nutritional Therapist with the Nutritional Therapy Association, covering Months 5 and 6, February and March.     Month 5

    The fifth month of this program was by far the most challenging for me, the content continued to roll in and simultaneously we were preparing for our mid-term examinations, the first weekend of March. Being a self proclaimed perfectionist I wanted to ace the exams, while of course, I also really wanted all of the content to be very clear to me. That meant lots of studying, lots of flash cards, memorizing and generally freaking myself out! It worked! I missed one tiny little thing on my written mid-term examination and had 1/2 point taken off on my functional evaluation practical exam. ACED!

    Month 6

    The first weekend of month 6 was our second workshop weekend, 4 long days. First we had our exams and then we spent the remainder of the weekend going over the content we had covered since our last meeting as well as continuing to practice the functional evaluations (you can read more about function evaluations here).     My Path to Becoming a Certified Nutritional Therapy Practitioner – Month 4 

    This post continues to share my journey of becoming a Nutritional Therapist with the Nutritional Therapy Association, covering Month 4, January.     Month 4

    After our first workshop weekend and the holiday break, we hit the ground running at the start of January. We dove straight into Mineral Balance and then Hydration, the final two modules focused on the foundations. The foundations being, Digestion, Blood Sugar Regular Regulation, Fatty Acids, Mineral Balance and Hydration and of course, a properly prepared nutrient-dense, whole food diet. It was nice to finish with hydration, really honing in the classic “last but not least” cliché.

    As we have continued to submerge ourselves into the content with the Nutritional Therapy Program, especially the foundations, I am continuing to connect deeply with the NTA’s individualistic approach to nutrition. Honoring that we are all bio-chemical individuals, means that there is no one catch-all diet, plan or protocol for every person. We are all very different.  There are certainly constants and research that suggests specific nutritional approaches to be ideal, such as the avoidance of refined sugars, processed foods, hydrogenate oils, etc. As my intuition has always directed me to suggesting that people “nourish their own individuality”, this program really supports my personal approach. It feels good to feel validated and to continue to hone my skills in approaching food, nutrition, and overall health and wellness in this manner.  I love that this program teaches a very foundational and functional approach to nutrition, not relying solely on on specific diet or slapping supplements on symptoms, especially those associated with the consequences, as a bandaid! This approach is not just how I live my own life, it is what I feel called to encourage others to do as well! I want to help people find their inner guiding voice and couple that with an arsenal of nutritional knowledge, to be able to intuitively navigate their way towards healing.

    I am also continuously grateful for the virtual platform that the NTA program is built on. I have discovered, that I learn so much more effectively when I am able to take in the content at my own speed, when it fits best into my life, vs. the structure of a timed class-setting. I also love that in addition to a virtual class setting, with multiple platforms to reach out to each other, there are three times throughout the program where we gather to have in-person workshop weekends, where we can connect with our fellow students, instructors and previous students, which really gives me something to look forward to.

  5. GATHER // Women’s Empowerment Retreat // Southern California

    This Spring, Wild Spirit Retreats hosted RISE, our first women’s retreat of it’s kind. We were blessed with an incredible group of women who came together to cultivate a magical weekend of healing and deep connection. We moved together, we created, we feasted, we laughed those incredible heart-warming belly laughs that can fuel you for months and there were many tears shed as we dove deep into our souls, hand-in-hand with each other. I am honored to have been able to share my passions, to have nourished and shared space with those 23 beautiful souls. As a teacher, I found myself learning from my students, so much about myself and this journey we are all on together and I am still swelling with gratitude for the lifelong friendships that were formed during our gathering.

    I am so excited to announce our next Women’s Empowerment Retreat, GATHER, a sacred, women’s-only gathering in Southern California, October 2-5, 2015.

    Lemon Garlicky Rainbow Chard with Lentils

    Swiss Chard often gets overlooked as just another green and I constantly find people confused as to what it is or how to cook with it. In my opinion, chard needs far more attention than what it gets. Why is kale getting all the love, anyway? This vitamin-packed, leafy vegetable is actually part of the chenopods, a subfamily of flowing plants that beets and spinach also belong to. Like beets and spinach, chard is packed with antioxidants and vitamins and it’s beautiful, colorful rainbow stems are just perfection.

    The other great thing about chard is that you can eat all of it. Stems and leaves. It’s another, as I like to call it, “nose-to-tail veggie”! (see also my Charred Carrots with Carrot Top Pesto)

    I am super excited to share this simple but delicious recipe for these Slow Cooker Spicy Asian Portobello Tacos with Sriracha Slaw, nspired by the beautiful green cabbage in-season now.

    I feel like cabbage has to be one of the most underrated vegetables of all time. I honestly feel like it gets a bad rap. Most people simply boil it or roast it, maybe they ferment it or add it to salad. I don’t feel like enough meals are centered around cabbage – it seems it’s usually an afterthought. In comes these Slow Cooker Spicy Asian Portobello Tacos with Sriracha Slaw.  This super easy to prepare meal is all about the cabbage! From the filling of the tacos, to the tasty slaw, we use the entire head!

    We’ve been living here in Southern California just over 16 months and I still wake up everyday, pinching myself that this is where I live. Palm trees, ocean air, the beach just over half a mile away. And then there is my yard! The huge vegetable garden and fruit trees galore – we have fig, peach, orange, banana, apple and loquat trees and the avocado tree! Oh, that avocado tree! Besides that avocado tree, one of my favorite things, however are the beautiful grape vines behind the house. They span the width of the entire house and then some.

    There are several varieties of grapes growing back there – to be honest I couldn’t even tell you what they all are! I think these pictured and used in this recipe might be moscoto (red table) grapes, from the little bit of research I did online. But I haven’t a clue. I just know they are yummy and I don’t have to do much to get them to grow!

    Last year, I couldn’t seem to get to the grapes before the squirrels and/or birds did, so we really didn’t get to enjoy too many. But, this year I was determined to eat more grapes than the critters and we are definitely succeeding. The first day I went out to start collecting my bounty, I came back in with over 10lbs of grapes and that wasn’t even 10% of them. We have mostly been eating them as is, bringing them to friends and freezing them for a special frosty, sweet treat – but I have also been having fun getting creative with them. Roasting and grilling them, adding them to salads, to smoothies and juices, and more. I just have to forewarn you now, you may see a decent amount of grape recipes in the coming week or two.

    Earlier this Spring we celebrated our one year anniversary of living in California. We’re continuing to spend more and more time getting to know our new home state. There’s just so much to do and explore out here. The only thing we’re short on is the time to do and see everything on our long list.

    Mid-last month my husband, Mark, and I celebrated our 7 year wedding anniversary and the 11th anniversary of our first date. We wanted to do something special, so we decided a quick trip to Palm Springs would be the perfect romantic getaway. As a girl from the East coast that now lives less than 1 mile from the ocean, I am surprised to say there is something about the desert that leaves you feeling recharged and inspired. It’s an amazing escape from the reality of daily life, replaced by feelings of solitude. Yes, even when sitting in a hotel pool surrounded by other people.

    After hearing so many wonderful things about The Ace Hotel and Swim Club from many of our Southern Californian friends, I decided to check them out online. The photos were gorgeous, but more than that, I was really impressed with their sustainable practices. They even had a restaurant called The Kings Highway which served locally-sourced food! All things considered, we knew this was the place for us. It seemed like the perfect place to escape life for a bit. Plus, we could take our dog, Seri, with us, which really sealed the deal.

    The Ace Hotel and Swim Club caters to a very distinct crowd – the youngish, design-driven professional who has a taste for all things trendy. This meant that every detail was perfectly curated and sincere creative thought was put into even the smallest, nearly missable, finer points of each room. Nothing was left un-thought of and undesigned, yet it never felt overdone or like too much. Think bohemian camping meets Mad Men. It literally is a vintage meets modern, mid-century oasis that on one hand feels totally untouched and on the other, it feels like a place created to be the most perfect display of everything that is “it” right now.

  12. California, One Year Later – Don’t Forget to Believe in Your Dreams

    Dreams Don't Work Unless You Do // Tasty Yummies

    Today we are celebrating one year since we arrived in California from New York! It seems like just yesterday we pulled up to our new home in the moving truck, tired from a long, teary-eyed adventure across the country. Since much of the last year feels like a blur and a whirlwind, I haven’t taken much time to reflect on this huge life shift, so what better time than now?

    California - one year later

    The decision to uproot our life in New York, leaving our family and all that we had built together over nearly 10 years, wasn’t one that was brewing in all that time. It started as a pipe dream just two years prior, something my husband Mark and I lustfully talked about in a very dreamy way – “wouldn’t it be amazing if we just up and moved to California” or “one day we need to live in California”. One day we decided to stop merely dreaming and started taking the actions necessary to actually make it happen. Within a year of that decision we had sold our house, we said our goodbyes and we hit the road for the west coast.

    So much has happened in this first year of living somewhere new, we have both accomplished new and major things, we have had our struggles finding our way in a new place, we’ve seen relationships change and new ones flourish and grow, but through it all – we have always had our dreams and each other.

    Listening to your Inner Voice

    The most important thing I have taken from this major life shift, is that the biggest dreams sometime require the biggest changes, some of which may not pleasant. Part of allowing your dreams to come to fruition, is taking the time listen to your inner voice, to realize that your unique path isn’t supposed to or going to, be the same as anyone else’s.     I have to admit, I was never really one of those people that freaked out about citrus, I have never cared much about orange juice or sitting down to eat an entire grapefruit. That was until we moved out here to Southern California. The citrus here is just amazing. The oranges, especially, are just incredible, unlike any I have ever tasted before. It has really been a whirlwind of a few weeks, the holiday season seriously flew by, in a blink of an eye it went from Thanksgiving to New Years, it’s insane. So much going on!   18. Grilled Marinated Artichokes

    Whole artichokes are admittedly something I discovered late in life, I don’t think I had my first fresh whole artichoke until last year sometime. It actually makes me sad every time I think of it, all the missed years of goodness. I had canned or jarred artichokes hearts on salads or in dips, but whole artichokes aren’t a super common vegetable in Western New York and I always prefer to eat as local as possible. After living here in Southern California a few months and trying fresh whole artichokes several different ways, I quickly learned my favorite way to enjoy them is grilled.

    Preparing artichokes for the first time is very daunting. I actually attempted to make them a couple of years ago and didn’t look up any instructions and I had NO clue what I was doing. I didn’t know which parts were edible and which parts were not. However, once you figure out how to prepare an artichoke, and do it yourself a time or two, it really is a breeze.   19. Photo Fun Day Friday – A Few Days Late

    I realize this should be titled “Photo Fun Day Sunday Afternoon”. My parents’ trip ended Friday afternoon and with that came some sad goodbyes and an afternoon of loafing around for Mark and I after we drove them to the airport. We had a busy week with them, we crammed a lot in and it was really wonderful! So nice to spend an entire week with my parents. Uninterrupted by work, obligations, business meetings, events, other people, etc. I don’t know if I have ever had that much time with just me (and Mark) my parents, ever! It was nice, to say the least.

    We made lots of meals at home, we went to a few of our favorite restaurants and even tried a few new places that Mark and I haven’t been to yet. We took a lot of walks, checked out the Long Beach Flea on Father’s Day, hosted a big dinner with friends, we of course, took them for their first trip to Disneyland and lastly, the beach on the last day, to end their trip right.

  20. Photo Fun Day Friday

    I skipped my photo post last week inadvertently, the weeks just fly by way too fast for me. Here are the last two weeks of fun. Hey by the way, how the heck is it June already?

    We have had a handful of events we did for work the past few weeks and we’ve been squeezing in fun where we can. My parents get here a week from today, so we are working like crazy to be able to take off as much time as we can while they are here. I CANNOT WAIT TO SEE THEM!

    We have two events this weekend where we will be vending at, Silverlake Art Craft & Vintage and the Rose Bowl Flea, if you happen to find yourself at either one, come on by and say Hi!

  21. Photo Fun Day Friday (on a Monday)

    I realize it is Monday and I am a few days late on my Photo Fun Day Friday, but with my sister visiting, I wanted to keep all the photos for one big post and I also didn’t want to be a slave to my computer while she was here. We had an amazing time together and we got to show her all around! It was soo much fun, I just wish it didn’t go so fast and I wish I knew when I would be seeing her again! That’s the worst part of moving away from your family 🙁 My parents will be here in just over 3 weeks though, so we get another amazing week of family time coming very soon!
