    These Cassava Flour Paleo Brownies are allergen-friendly being nut-free, gluten and grain free, refined sugar-free along with dairy-free. These fudgy, rich brownies feature both cacao powder and melted dark chocolate you are gonna love these rich, ooey gooey, chewy grain-free paleo brownies!!

    Are you a brownie lover? I wasn’t growing up, but I sure am now! I LOVE a dark chocolate, fudgy, double chocolate chip brownie. Growing up my mom never made desserts from scratch. It was always a boxed brownie mix with water, eggs, and vegetable oil. There is nothing wrong with that if it’s your jam but learning more about nutrition and the value that ingredients can provide in terms of nutrients, I wanted to make a healthier version. This is a simple recipe that is allergen-friendly and more importantly delicious!  Once I realized that I don’t enjoy the overly sweet brownie recipes, I started testing with different sugars, different types of chocolate, and flour alternatives.

    Who would have thought that all purpose flour, almond flour, and cassava flour would yield such different results! The major concern for me was it needed to be gluten-free. The second concern was the amount of sugar. I really don’t do well with a lot of sugar, buttttt if you want a brownie, you need sugar to get that crinkly top. So, you will see 1 full cup of coconut sugar in this recipe but overall, it is what completes this brownie. You can always remove some of the sugar, just remember that altering the recipe will yield different results.

    Good news for you we have our very own Tasty Yummies Raw Organic Coconut Sugar! One of the other positives for using coconut sugar is that it has been shown to have a lower glycemic index. What does that mean? It means that coconut sugar has been shown in some studies to have less of an impact on your blood sugar. It may help with not getting or feeling that sugar rush and then a crash twenty minutes later. Everyone has a different reaction to sugar, but with using a sugar that is less processed can be more beneficial than using refined sugars.

    Happy Valentine’s Day, friends!! What better way to celebrate LOVE than with chocolate, am I right? I can’t get enough chocolate this month, in case you couldn’t tell. I have been seeing chocolate everything, everywhere and  I am not sure what made me think of it, but I realized the other day that I hadn’t made brownies in forever. And that made me sad! What is wrong with me?

    I mean really, brownies are happy-making, magical squares of my very favorite stuff!! Soft cocoa-y chocolate chewiness and little bits of dark chocolate in every bite. Ahhhh! It is torture just writing about it.

    Though hubby and I don’t generally celebrate Valentine’s Day, I’d like to think we celebrated  a little bit early with these beauties. It’s rare that I make a gluten-free or grain-free baked-good and my husband doesn’t tell me what about it makes it taste not quite like the “real thing”. I mean, I don’t blame him. He doesn’t have to eat gluten-free. He gets to enjoy all the “normal” bakeries and their delectable delights, whenever he wants. Jerk Generally he eats and loves whatever I make (with exceptions, of course), but I think given the opportunity he would still choose it’s gluten-containing inspiration. This time around, he couldn’t get enough of the gluten-free version. He was obsessed with these brownies and we were literally fighting over the last one. I let him have it, but I really should have told him to back-off and take a hike to the neighborhood bakery. At one point during the few days we were eating through these, he walked to the corner store to get a pint of vanilla ice cream, he heated one of these brownie squares up and served it à la mode. What can I say? He’s a sweets guy, the man sure knows how to eat his desserts.

  3. Grain-free Tiramisu Double Chocolate Brownies – Gluten-free + Refined Sugar-free

    I had a hard time deciding whether I should bring you something sweet or savory! Right after Christmas, I didn’t even want to look at sweet stuff, not to mention make anything sweet but January has been a healthy month for me so far; I have recovered from my sugar overdose and this recipe I have for you is one I have been working on for a while so it’s time to get it out there!

    These Tiramisu Double Chocolate Brownies Grain-free Tiramisu Double Chocolate BrowniesSpeaking of mascarpone; since I am a part time vegan (you know, I enjoy organic grade meat on occasions and would *never* give up cheese!!) I haven’t really made anything containing mascarpone in over 3 years – since I came to the US. And boy, was I shocked to find that 8oz of mascarpone cost $7 in this country!! That’s way too much, if I may say so. So I decided to compromise: I used equal parts mascarpone and cream cheese (instead of mascarpone only) with an amazing outcome: It tastes almost exactly like tiramisu cream except it’s a little firmer so it’s perfect for brownie frosting!
