Raw Zucchini Bites with Sun-Dried Tomatoes and Goat Cheese - Gluten-free

I’ve been trying to be super creative over here with zucchini. I planted ours from heirloom Italian seeds in our garden and they did wonderfully, they grew far better and far faster than anything else out there. We have a lot of zucchini. I have been bringing them to all of our friends.

So, I have stuffed them (look for that recipe next week), I have made muffins with them, I have made more zucchini “pasta” than I would like to admit and the rest have been getting grilled. Good thing zucchini is my absolute favorite vegetable of all time.

I wanted to make something a little bit different the other night and I was at first thinking of a raw salad, much like this one I have made in the past, when I got the idea to make more of an appetizer with them. A quick bite. I had some goat cheese in the fridge and sun dried tomatoes in the pantry, chives from the market, so it was perfect. Fresh basil would also be really nice on these.

These zucchini bites are so simple and quick to prepare and they make a great appetizer. Besides being super healthy, these are so beautiful and vibrant and they taste so amazing! I definitely plan to make these a lot.

Raw Zucchini Bites with Sun-Dried Tomatoes and Goat Cheese - Gluten-free

[print_this]Zucchini Bites with Sun-Dried Tomatoes and Goat Cheese – Gluten-free

  • 2 small/medium or 1 large zucchini
  • 1/4 to 1/2 cup sun-dried tomatoes, julienne sliced and packed in oil
  • 1/4 to 1/3 cup goat cheese or feta cheese*
  • small handful fresh chives or fresh basil, chopped
  • 2 tablespoons Vega Antioxidant Omega Oil Blend or extra-virgin olive oil
  • Sea salt and freshly ground black pepper, to taste

Slice the zucchini into 1/4-inch-thick rounds. Lay out on large serving platter. Place a couple of sun-dried tomato pieces on each zucchini round, then top each with a bit of goat cheese. Sprinkle tops with chopped chives, drizzle with the oil, season with salt and pepper and serve.

*if you are vegan, try replacing the goat cheese with a small amount of your favorite nut cheese, cashew cheese would be so amazing.     Wow I want these so much right now!! I have been obsessed with both zucchini and sun dried tomatoes lately. I feel like sun dried tomatoes are like vegan beef jerky. Though that might make me sound crazy.. I just love them!
