Every single day, the choices we make, when eating, have the power to not only impact our own health and vitality, but also that of many others. As a lover of savory and always wanting to bring everything back to meal time, I really wanted to create a dish that would not just include the REBBL Golden Milk Elixir, rather I really wanted to highlight the beautiful flavors and vibrant color in unique and practical way. This pilaf is a bit less than traditional in that it blends beautiful, light and fluffy and aromatic basmati rice with grain-free cauliflower-rice, sneaking in a veggie and stretching this side dish a bit further. The rice cooks as usual in a mixture of the anti-inflammatory Golden Milk Elixir with a little broth (or water), the minced garlic, infuses it’s flavor and aromatics into all of that goodness, then at end we add the cauliflower rice, allow that to steam a few minutes and just before serving the pilaf gets toss with toasted cashews, golden raisins and fresh cilantro (or parsley). This Golden Rice and Cauliflower Pilaf is a wonderful side to so many varying meals, it would be great at breakfast, lunch or dinner and it’s a breeze to make.

Golden Rice and Cauliflower Pilaf

Servings: 4 -6

Ingredients 

  • 1 cup organic basmati rice
  • 1 12 ounce bottle REBBL Golden Milk Elixir
  • ½ cup chicken broth, vegetable broth or water
  • 2 cloves garlic, finely minced
  • 2 cups raw cauliflower rice
  • ½ cup golden raisins
  • ½ toasted cashews
  • sea salt and black pepper, to taste
  • fresh cilantro or parsley, roughly chopped

Instructions

  • In a medium pan (or if using a rice cooker) add the rice, REBBL Golden Milk, broth (or water) and garlic. Prepare according to package instructions for the rice (cooking times can vary). Generally instructions will state to bring to a boil, reduce heat to simmer. Cover and cook for 20 minutes, or until all the liquid is absorbed. (I make mine in the rice cooker)
  • In the last 5 minutes of the rice cooking, remove the lid and add the cauliflower rice, stir well to combine. Place the lid back on and allow to cook the remaining 5 minutes, or until all the liquid is absorbed.
  • Remove from the heat and place into a serving bowl. Add the toasted cashews and golden raisins. Toss to mix. Serve warm, topped with fresh cilantro or parsley. Enjoy.

Notes

If you can't get REBBL's Golden Milk Elixir near you, leave it out and instead increase the broth to 1 cup and include 1 cup of full fat coconut milk and 1 teaspoon ground turmeric. Whisk this all together well and boil with the rice, include a good amount of black pepper. If you have the time, you can also make your own Golden Milk

  1. Oh man – I stopped by because this Pilaf looked so freaking delicious but I’m so glad I got to learn about REBBL…I’ve actually never heard of them before but excited to check them out! Their values sound right up my alley.
