Turkey Club Chopped Salad with Aioli Vinaigrette

Ingredients
  • 4 cups romaine lettuce, chopped
  • 4-6 slices pasture-raised bacon, cooked to crispy and crumbled
  • 8 ounces roasted turkey breast, thick cut, cut into ½-inch cubes
  • 1 avocado, halved, seeded, peeled and cut into ½-inch cubes
  • 1 tomato, cut into ½-inch pieces
  • 4 scallions/green onions, thinly sliced


Aioli Vinaigrette
  • 6 tablespoons homemade mayonnaise or a store-bought avocado oil mayo
  • 2 tablespoon white wine or apple cider vinegar
  • 2 teaspoons dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • sea salt and black pepper, to taste
Instructions
  1. To make the vinaigrette, add the mayo, vinegar, mustard, honey (or maple) and minced garlic in a small bowl and whisk vigorously until well blended, salt and pepper to taste; set aside.
  2. Cook your bacon however you'd like, in a skillet on the stove top, in a pan in the oven, etc. Cook until browned and crispy, transfer to a paper towel lined plate.
  3. Add the lettuce to your bowls (two large or 4 small). Top with the crumbled bacon, turkey, avocado, tomato and green onions. Pour over the vinaigrette and toss well to combine.
  4. Serve immediately and enjoy.
