Green Tahini Sauce

  • 1 cup tahini
  • 1 cup coarsely chopped fresh parsley
  • ¼ cup fresh lemon juice
  • ¼ cup Terra Delyssa Organic Extra Virgin Olive Oil
  • 3 scallions, thinly sliced
  • 1 tablespoon fresh dill, roughly chopped
  • 2 cloves garlic, crushed
  • sea salt and black pepper, to taste
  • Red pepper flakes, optional
  • water, as needed.
  1. Add all of the ingredients to a high speed blender. Process until bright green, smooth and creamy (sauce should be the consistency of sour cream or a thin mayonnaise); add water as necessary to thin to desired consistency, season with salt and pepper.
  2. Store in an airtight container in the fridge, for up to 1 week.
Add more water to make a thinner dressing, less or none at all for a thicker, more dip-like consistency.
