Matcha White Hot Chocolate

gluten-free, grain-free, paleo, vegetarian, dairy-free, egg-free, nut-free, options for keto, low FODMAP, Whole30 and vegan
  • 2 cups full fat canned organic coconut milk (or other non-dairy milk)
  • 2 ounces organic cacao butter, roughly chopped or grated
  • 1-2 tablespoons honey (you can also use stevia, monkfruit, maple syrup, etc), more or less, to taste
  • 3 teaspoons Vital Proteins Matcha Collagen (or any other culinary grade organic matcha powder)
  • 1 vanilla bean scraped (or ¼ tsp vanilla powder or 1 teaspoon vanilla extract)
  • pinch pink Himalayan salt or sea salt
  1. Add all of the ingredients to a medium saucepan over medium-high heat.
  2. Stirring often, bring to a boil then reduce to a simmer.
  3. Continue to simmer until all of the cacao butter is melted.
  4. You can serve as is, or blend in a Vitamix or with an immersion blend to make extra frothy.
  5. Top with a matcha marshmallow, if you'd like. Enjoy.
For Keto - opt for no sweetener or an appropriate sweetener
For low FODMAP - opt for maple syrup or no sweetener
For Whole30 - no sweetener
For Vegan - opt for standard matcha, without collagen and no honey
