Buffalo News - July Cook of the Month

I am very humbled to have been selected by the Buffalo News to be their July Cook of the Month. I am featured along with a couple of my gluten-free recipes, on the front page of the Taste section in today’s edition (Wednesday, July 18). I am sharing my recipe for Balsamic Strawberry Mini-Tarts with Whipped Coconut Cream as well as a new recipe for a Fiesta Quinoa Salad, plus a little background on my love of cooking, why I started Tasty Yummies and more. Thanks so much to Buffalo New Food Editor Andrew Galarneau and Buffalo News photographer Sharon Cantillon, for coming by my house to chat, and photograph me while I cook, such a fun experience! I could definitely get used to that.

    Great article! I’ve been reading your blog since earlier this year when I went gluten-free (I read that consuming gluten isn’t good for someone with Hashimoto’s hypothyroidism, so I cut it out back in March). My boyfriend is originally from Buffalo and we’re planning to move there next year (we currently live in DC). So it’s nice reading the perspective of someone who is both gluten-free AND lives in my future town (although there’s a good chance you’ll have moved to California by the time we arrive). Too bad!

    Super! Just made your kohrabi dish, it was very different, in a very good way. Loved the combi of mustard dressing and the bite of the kolhrabi and sweet cranberries. So for me you are the cook of the year, not just july.

    Hi
    I was looking at your strawberry desserts and they look great! I am just hearing about gluten free foods if you dropped 30 pounds then I know that all thins are possible. Just purchased a new blender and I will be trying some of your smoothies!

      Hi Lorrain, thank you very much for your comment. It should be noted, that me dropping 30 lbs wasn’t due to the gluten-free diet directly and exclusively, it happened after I made conscious choices to remove processed foods, refined sugars and flours, dairy, etc. In fact, after discovering I had an intolerance to gluten and removing it from my diet over 7 years ago, I spent the first 5 struggling with my weight, constantly gaining weight from overindulging in over processed pre-packaged gluten-free convenience foods. Once I realized that gluten-free or not, I was consuming total junk, I was always sick and I just felt run down, that is when I decided to make the big change. Many people see the words “gluten-free” on a package and take it as some health claim and that is a huge misconception. Avoiding gluten will definitely improve many/most people’s health, but not if going gluten-free means eating loads of processed junk. Sorry for the rant 🙂 Hope that helps and please let me know if you have any questions at all.
