The Spunky Coconut: Popular Gluten-Free, Dairy-Free Recipes

Today’s guest blogger is the incredible Kelly, from The Spunky Coconut. I have been lurking and loving Kelly’s blog for a very long time now. I find so much inspiration in the way that she cooks and especially bakes for her family. Before I changed my diet significantly two years ago, I rarely baked, since I found the challenge of making healthy gluten-free baked goods to be a bit overwhelming and scary. Once I decided to cut out all processed foods from my diet, I quickly learned that I would have to learn to start making my own gluten-free treats or give up on them all together. It was a daunting task that frankly intimidated me and kept me from experimenting in it for the nearly 5 years prior that I had been gluten-free. Once I started really exploring the world of gluten-free baking and making healthy versions of all of my favorite things from scratch, The Spunky Coconut became one of my favorite blogs to look to for ingredient and recipe ideas. Kelly has found a way to make virtually anything you can think of gluten-free, casein-free and refined-sugar free (and many times egg-free), and it is always delicious and easy to make. All of this while raising three beautiful children and putting out two incredible cook books!

One of my very favorite things about The Spunky Coconut is that Kelly’s recipes are always written in a clear and simple way that makes it seem so easy. For me, since I removed dairy from my diet last month, I have been visiting her site even more. In fact, I plan to make these Tortilla Wraps when I get home from our trip to Austin and I can’t wait. I’m so thrilled to be guest posting here on Tasty Yummies :-) I’ve admired Beth’s recipes for a long time, and I think we have a lot in common.

I make recipes that are free of gluten and usually gluten-free grains as well. I also don’t use casein (the protein in dairy, which is very similar to gluten) or refined-sugar. You can hear about how (in my family) we have overcome our health issues on my podcasts HERE, and under the label “recovering Ashley.”

My goal is always to pack as much nutrition into my recipes as I possibly can – whether it’s a cake or an entree – it doesn’t matter. Dessert can be just as good for you if you use healthy ingredients.


Some of my most popular recipes include:

Vanilla Bean Cake made with eggs, soaked and cooked white beans (any kind works), and a little coconut flour. See the comments to hear what other people say about this cake :-)


Grain-free (oat-free) Chai Granola, made with nuts which have been soaked to make them easier to digest. Adding chia seed meal and applesauce forms a glue, which creates great clusters.


Banana Chocolate Cream Pie, made with a walnut crust that reminds me of graham cracker crusts. One of my families all-time favorite recipes. Super simple and so satisfying.

I love Kelly’s blog too! My sister told me about the Spunky Coconut – says it’s her lifesaver with two boys who have severe food allergies. I’ve been gluten free for a year now and have immersed myself in the blog world of excellent foodies such as Kelly and now as I can see I have another blogger to admire – Tasty Yummies!

I was wondering if I can make chicken enchiladas with a gluten free tortilla? I notice they are very crumbly when I use as a wrap. I was wondering if they would just descenagrate when made into enchiladas ? My recipe has carnation milk poured over top while they bake. Thank you so much for all your hard work, I am new to GF and loving all the recipes, I know I won’t starve.
