    California is known for so many incredible things, these California Cobb Mason Jars Salads with Green Goddess Dressing featuring California Avocados essentially combines them all in one easy-to-make, on-the-go meal!

    Summer in California looks a lot different this year, but we are making the most of the current situation and of course, all the incredible goodness that California always has to offer us.

    We’ve gotten quite creative with our time outside of the house this summer, including our date nights. Weekends used to mean heading to a new restaurant, somewhere we could feel pampered, explore a new neighborhood and have a true California experience. In recent months, we have been taking drives to the ocean, picking a new beach each week, grabbing take out from our favorite local, farm-to-table restaurants, supporting California farmers and purveyors or just making and taking our own meals to-go!!

    We are always celebrating the goodness that California offers from amazing produce and signature flavors in classic recipes to the best dang views and outdoor living there is!

    One of my most favorite classic California creations is the California Cobb Salad. I am not quite sure where this iconic salad originated but today I am sharing a fun new twist so you can take it up a notch and make it portable.

    California Cobb Salad

    A classic California Cobb salad featuring chicken, bacon, California avocado, hard boiled egg, blue cheese crumbles and various fresh produce like lettuce and tomatoes, usually lined up and arranged beautifully in a rainbow presentation.

    Here’s the thing about a Cobb salad, you can really make it your own. Add some red onions or cucumbers, maybe some chickpeas. Add in spinach, kale or arugula for more dark leafy greens. Swap out the blue cheese for more avocado. As for the dressing, there are many variations you will find here, as well, from ranch to blue cheese dressing or even a simple balsamic vinaigrettes – but today, since we are celebrating California this California Avocado Green Goddess Dressing felt very apropos to celebrate one of California’s greatest gifts, the avocado!

    California Avocado Green Goddess Dressing

    This simple-to-make creamy green goddess dressing is THE perfect compliment to this California-inspired salad. From it’s vibrant color to the fresh, bright flavor and rich, creamy goodness. This makes more than what you need for two large mason jar salads, but keep it on hand for dipping fresh veggies, throw it over any salad or grilled veggies, over eggs, etc.

    How to Make California Cobb Salad in a Jar:

    Creating and serving a salad in a jar is a game-changer for summer eats, especially on-the-go. Picnics and beach trips may not be as abundant but we’ve been maximizing our date nights with grabbing food and driving to the beach in LA for what I will venture to call the finest oceanside dining, from the luxury of our own car.

    When creating mason jar salads here are a few simple tips to make the best salad experience possible – meaning NO sad, soggy lettuce:

    1. Start with your dressing at the bottom, anywhere from 1-4 tablespoons of dressing, depending on how much you like and how large the salad is. By keeping the dressing at the bottom you’ll prevent the lettuce and other ingredients from getting mushy.
    2. Continue to layer your mason jar salad by adding any hard veggies and fruits. I find adding tomatoes at the bottom right after the dressing helps to keep any excess water from the tomatoes away from the other ingredients.
    3. Next add your proteins.
    4. Layer any soft veggies or fruit (like avocados) mid-jar or just right before the greens.
    5. Add the blue cheese at any point in the middle, if using.
    6. Finally, add the salad greens. Salad greens such as lettuce have to always be on top to avoid them getting soggy or wilted.

    By finishing with the lettuce or greens last you can squeeze in as much as you can fit into the jar. With the greens being on top, when you turn the jar over to empty it out, you create a bed of greens.

    With how these salads are stored, you can make it up to a day head and just grab and go. Bringing a plate and some forks along for the ride. Most people assume you eat a mason jar salad straight from the jar… NOPE! That wouldn’t be very fun or easy.

    How Do You Eat a Mason Jar Salad?

    Well, when you are ready to eat the mason jar salad, just…

    1. remove the cap to the mason jar;
    2. if there is room in the jar, give the mason jar salad a really shake to mix the dressing with the rest of the ingredients;
    3. either way just shake the salad into a bowl or a large plate as you pour all the ingredients out;
    4. toss as needed to combine.

    How Long Will a Mason Jar Salad Last?

    Most mason jar salads will last up to 5 days, if stored properly, so feel free to make ahead or even use this method for meal prepping for the week.  

    Be sure the lid is screwed on tightly so it’s sealed and store in the fridge. 

    Great for on-the-go lunches if you are heading to work, the perfect park lunch if you need a break from working from home or a fun date night beach-side dinner.

    California Cobb Mason Jar Salad with Green Goddess Dressing {gluten-free, keto, paleo + Whole30 options}

    gluten-free, grain-free, nut-free, keto, options for Whole30, paleo, dairy-free

    Prep Time: 10 minutes
    Total Time: 10 minutes
    Servings: 2 -4 servings

    Ingredients 

    • 2-8 tablespoons California Avocado Green Goddess Dressing, see recipe below
    • 1 pint grape or cherry tomatoes, halved
    • 2 to 4 hard boiled eggs
    • 6 to 8 oz of cooked chicken, shredded, cubed, etc
    • 1 California Avocado, cut into cubes
    • 2-4 oz crumbled blue cheese
    • 6 pieces of cooked bacon, crumbled or roughly chopped
    • 4 cups+ of salad greens, I used little gem lettuce, because it was local and in season

    Instructions

    • Make sure your two wide-mouth mason jars are clean and dry.
    • Add 1-4 tablespoons of California Avocado Green Goddess Dressing to the bottom each jar. (it’s your preference for how much dressing you like and how many ingredients there are). These keeps the other ingredients from getting soft or mushy.
    • Diving the ingredients between the two jars, begin layering the ingredients, in the order listed above.
    • Tomatoes, then eggs, chicken, avocado, cheese, bacon, then lettuce.
    • When you get to the lettuce, ass as much as you can squeeze into the jar, feel free to gently press down to make enough room for the greens.
    • When you are ready to eat your California Cobb Mason Jar Salad unscrew the lid and shake the contents out into a bowl or plate. Toss everything well to combine, as needed so everything is coated in the dressing and the ingredients are well dispersed.

    Notes

    Anything listed above typically found in a Classic Cobb is obviously optional. Feel free to add your favorite salad ingredient, like cucumber, red onion, radish, chickpeas, a different cheese, your favorite lettuce or other greens – you can make these Mason Jar Cobb Salads your own!!

    Ingredients 

    • 1 large ripe California avocado
    • 1 cup packed fresh parsley, stems removed
    • ¼ cup extra virgin olive oil
    • ¼ cup water, more or less as needed for desired thickness
    • 3 tablespoons avocado oil mayo
    • 2 tablespoons fresh lemon juice
    • 1 tablespoon white wine vinegar, or apple cider vinegar
    • 1 large garlic clove, or 1 very small shallot
    • 3 tablespoons avocado oil mayo
    • sea salt and pepper to taste

    Instructions

    • Add all of the ingredients to a high speed blender or small food processor. Pulse a few times then blend until well incorporated and super creamy. Add more water as needed to reach your desired consistency.

    Notes

    You can use half basil and half parsley, if you’d like
    Add a small jalapeño (seeds and ribs removed) or red pepper flakes for a little heat
    Use a vegan mayo to avoid eggs, as needed

    I felt that the perfect and fitting end to Maui Week here on TY would be just a quick roundup of some of my favorites from our time on the island. From favorite (gluten-free/paleo) eats, where to stay and what to do and see – this list is my Guide to Maui. Admittedly, we planned for our trip to Maui to be as relaxing as possible so we didn’t do ALL the things, which means that just leaves a list to do next time. We really wanted to stay at a resort that would have all the amenities and bring the classic island vibes, while giving us the opportunity to truly let go and relax, which is why we stayed at the Fairmont Kea Lani, rather than grabbing an Air BnB or the like. We did of course get out to explore the island a ton and planned many activities during our week, so I wanted to share all of the highlights of our trip to Maui.

    Hawaii’s state motto is: Ua mau ke ‘ea o ka ʻāina i ka pono, which translates to “the life of the land be perpetuated in righteousness” – this is beyond captured on magical Maui, every where you go, with every sight you see and every breath you take. I am certain the sacred, righteous vibes of this place will strike you, too, as it did us and I know you will fall in love with the aloha spirit of Maui. We are already counting the days until we visit again.

    This post comes a little later than I had originally planned, but here it is, none the less. Better late than never. An account of my favorite gluten-free eats from my fall trip to London (and a few from Leeds, too).

    I have to say, having traveled to London about 15 years ago, I had a slight amount of trepidation around the food scene there. From my previous travels, I recall lots of traditional pub food, meat and potatoes, lots of beer and cider but not a whole lots that really knocked my socks off. Could be I was a broke 20-something that didn’t have a clue how to find good food or possibly that London was a tad late to the foodie game. I was also slightly concerned about the level of awareness and accommodation for gluten-free eaters.

    I have NEVER ever visited a city more gluten-free accommodating and aware than London. Even the smallest of restaurants and cafes in the middle of nowhere not only had an extreme awareness and concern for gluten-free eaters, but every single place stocked locally baked gluten-free breads that impressed the shit of out of this 12-year strong gluten-free eater. Beyond the gluten-free awareness and options, I was also just incredibly impressed by how much London had stepped up it’s culinary game since my previous visit. I still dream of many of these meals and in fact have been experimenting with recreating some of my most favorites so I can continue to enjoy them without the 10 hour flight.

    As I go deeper into learning about nutrition and food, while in school to become a Nutritional Therapist, at times feeding my husband reminds me a lot of what my friends who are mothers, go through with their children. Don’t get me wrong, my husband is no man-child, he can take care of himself, he’ll cook when I am not around, he eats his veggies and he can grill like it’s no one’s business – clearly my hubby is > a toddler. But, the man loves his sweets. If he had it his way he would eat a doughnut or a slice of cake for breakfast every single day, he will however on the average day simply settle for toast with jelly or a bowl of cereal.  Of course, no matter what is selected this would all be accompanied by the largest cup of coffee. Ever. Sigh.

    Recently I have been working with him not to change his diet in some drastic way, I don’t need him resenting me and my schooling, but more to understand how starting his day in this manner definitely contributes to, if not exclusively causes, those mid-day crashes he was constantly struggling with and not only that, how it also leads to additional cravings and the need and urge for more sugar and carbs to be satiated. The vicious, never-ending, sugar-burning cycle.

    With the stress and hustle of the holidays upon us and for so many of us, this also means traveling, our immune systems are certainly working overtime right now to keep balance within our body and to promote overall wellness and vitality.

    It’s inevitable we are exposed to more this time of year and our immune system often struggles in these compromised settings. With or without travel, this busy time puts an extra stress on our bodies, which in turn can stress our immune systems.   9. The Benefits of Travel

    If you follow me on social media, you have probably noticed how much traveling I have been doing this year. Being on the road, exploring and discovering – this ignites my soul in a way that I can’t even express into simple words. Just this year alone, I have been on-the-go in bustling cities, I have ventured home to experience the comforts of family and my old stomping grounds, I have hosted and experienced retreats in the forest of Northern California, amongst the mighty sequoias and at an ashram in the desert and I visited a bison ranch run by an inspiring family, following traditional and sustainable practices. However, one of the most relaxing trips I have taken this year, was the luxury and rejuvenation I experienced in Loreto, Mexico, in the Baja California Sur. {You can read a bit about this incredible trip and the delicious food, here}

    In the Indian culture there is a tradition of taking retreats to rejuvenate and revitalize the body, mind, and spirit. This is time away from work and responsibilities to focus on the self, to gather strength and wisdom so that we can return to society with new energy and enthusiasm. Yet here in the west we rarely allow ourselves such a luxury. We work too hard, too much, and don’t allow enough time in the day for contemplation, let alone an entire day to devote to our spiritual growth. And we feel it – maybe over time it happens so gradually that we get used to the sluggishness and struggle – but that’s not the way life is supposed to be.

    If you follow me on social media, on apps like Instagram or Snapchat, you may have noticed that after nearly 3 years of living in California, I am back to traveling again. The travel-bug has bit this girl and this is an itch that must be scratched. I absolutely love adventure and I live for that joy you get when discovering new places.

    The hardest thing about traveling, however, is doing so with dietary challenges. With limitations on my diet and wanting to maintain a healthy, mindful lifestyle, this can be hard while I am away from the comforts of my own kitchen. While challenging, it is also totally possible and I want to share with those of you living a life similar to mine, that with a little research and planning, your wanderlust can certainly be quenched, too! In the past, after first changing my diet, discovering my gluten intolerance and making other changes to my lifestyle, I had found myself scared to travel, worried that I wouldn’t be able to eat. But I always more than make it, I eat well on my travels and I am able to honor my body the way I choose to, while still being able to explore new cuisine, experience new restaurants and travel a city the way everyone else gets to. I want to encourage you guys, to get out there, to have fun, explore and travel.

Though with every passing year it gets easier and easier to find restaurants that truly support gluten-free, I also like to know that I am covered. Homemade energy bars, trail mix, dark chocolate and other healthy snacks, these are always a must for me. Plus, I don’t ever leave home without some green stuff.     It’s quite fitting that my fifth and final recipe for this series of healthy travel snacks, I created with Albertsons, is being written from around 37,000 feet in the air. I am flying from California to the East Coast where I will be spending a total of 10 days between Maine and New York. As usual, I have a large selection of healthy snacks packed away for my travels. While I find when flying I have to be a bit more selective with my snack choices, homemade energy bars are always a must. They are super travel-friendly and so simple to whip up the night before my trips.

    By now I am sure you’ve caught my tutorial on how-to make your own homemade energy bars, but if you haven’t get to it. It’s the perfect formula to create the perfect bars for your favorite flavors. These bars were one of the few that I have made more than a few times and inspired the ideas of the adaptable tutorial.

    These tropical-inspired bars are a great, healthy snack for bringing along on your vacation, but they are also a wonderful way to bring the vacation to you at home. Coconut and pineapple always summons the tropics. Think fancy frozen drinks with umbrellas on the beach.

    These particular energy bars are made nut-free, but you can certainly add nuts to fill them out a bit more, if you prefer. Almonds, walnuts, pecans – these are all great options.

    As summer winds down, I am clinging to every last bit of the season that I can. I refuse to acknowledge it’s almost over. Keeping with the theme of healthy summer road trip snacks this Honey-Sweetened Strawberry Fruit Leather is the perfect way to take the sweet tastes of summer with you, wherever you go.

    This fruit leather recipe calls for strawberries but you can use this as a guide to create fruit leather with whatever fruit you have an abundance of. Peaches, apricots, apples and so on. You can even create a blend of your favorite fruits.

    Honey-Sweetened Strawberry Fruit Leather

    Fruit leather gets a wrap for being a kids-only snack, but I can tell you, adults truly love the stuff, too. This could partially be the fact that it will instantly transport you to being a kid. It’s also great for travel and being on-the-go, just roll it up with a little parchment paper and pack it into your bag and you are ready to go. Sweet, summer berry goodness, wherever you are. Try out different berries or other seasonal fruit for additional variations. For a smoother leather, you can strain the seeds or any pulp before dehydrating, if you’d like. You can cook the fruit first if you’d like to intensify the flavor a bit.

    Summer is winding down, the days are getting shorter, the nights longer. This time of year I always find myself antsy for those end-of-summer road trips, hitting the open road and exploring. For those that have kids, I can imagine that travel urge is even stronger, these are the moments to escape, one last time before school is in-session and life gets back to the hustle and grind of the day-to-day.

This series of recipes is a great way to keep on-track with your mindful eating while you are away from the comforts of the kitchen. But, mostly this would just end up in a car full of crumbs, a belly full of gas and a heart full of regret.

  14. GATHER // Women’s Empowerment Retreat // Southern California

    This Spring, Wild Spirit Retreats hosted RISE, our first women’s retreat of it’s kind. We were blessed with an incredible group of women who came together to cultivate a magical weekend of healing and deep connection. We moved together, we created, we feasted, we laughed those incredible heart-warming belly laughs that can fuel you for months and there were many tears shed as we dove deep into our souls, hand-in-hand with each other. I am honored to have been able to share my passions, to have nourished and shared space with those 23 beautiful souls. As a teacher, I found myself learning from my students, so much about myself and this journey we are all on together and I am still swelling with gratitude for the lifelong friendships that were formed during our gathering.

    I am hitting the road tomorrow, heading to Lake Tahoe and Squaw Valley for the Wanderlust Festival. I have been counting down the days to this trip, for months. With an 8+ hour drive ahead of me, I have to plan ahead with snacks and food for both the drive and when I get there. It’s super important for me to know that I have what I need to be nourished and energized, especially when I am away from home and my routines, but also with how active I will be over the 4 days of the festival. Lots of yoga, hiking, maybe some stand-up paddle boarding and definitely some dancing!

    How-to Make Homemade Energy Bars

    One of my favorite things to make are homemade energy bars. They are so simple to make, a great way to energize with healthy fats, proteins and fiber and they are always soo yummy! I have gone from baking my own with oats and nuts, to keeping it super simple with these no-bake, grain-free, date-sweetened bars, reminiscent of the LÄRABAR®.

    The great thing about making these yourself is not only having full control of the quality of the ingredients, but also having fun with various flavor combos. You can get creative with by pairing your favorite flavors or you can simply go nuts with whatever you happen to have on hand in the pantry, that you need to use up. The latter tends to be the case for me.

    Coconut Mango Lime Energy Bars

    For the sake of this tutorial I whipped up two of my favorite flavor combos: Coconut Mango Lime and Berry Cobbler. The Coconut Mango Lime Energy Bars on top of being grain-free and vegan they are also totally nut and seed-free, so they are perfect for those with allergies or intolerances or even someone following the autoimmune protocol. The Berry Cobbler bars, I made bite-sized and those do contain nuts.

    All you have to do is follow my simple base recipe and then you can get creative from there. Trust me when I tell you, these are really hard to screw up. Once you’ve made your base mixture and get creative with your flavors, you can decide if you want to opt for full-sized bars, smaller bites or little balls. If you really wanna get crazy, dip them in some melted chocolate.

    Besides all the beautiful, fresh local fruit, the traditional Mexican foods and of course, their house-made gluten-free baked goods, the beautiful seafood was above and beyond, it is certainly what I most remember, when I think of all the delicious food. Most, if not all, the seafood served at the Villa del Palmar is sourced from the local waters, the Sea of Cortez. Chocolate clams (chocolate for their color, don’t worry they didn’t serve with chocolate) and the various fish were my favorites. You cannot beat fresh seafood, caught in the morning and served up to you in the evening.

    Tasty Yummies Travels // I am finding myself, once again, bitten by the wanderlust bug and therefore I have been hitting the road, traveling more and more. There is so much to explore in this vast and beautiful world, but this can also be completely daunting to those of us venturing out with a list of dietary challenges. As I hit the road I plan to share my travels and adventures along the way with you. It is important to me to share both the ease and at times, the struggles of traveling while maintaining the balance of the lives we cultivate and flourish with at home. For the first in this ongoing series I am taking you along with me to the beautiful Islands of Loreto, in the Baja California Sur, Mexico.

    Growing up on the east coast, Mexican culture wasn’t exactly part of my upbringing. Enjoying the foods and all of the incredible bold flavors was something I reserved for trips to Texas or California. Since moving to Southern California I have had the pleasure of visiting Mexico on several occasions this past year and each trip is an exciting, beautiful and of course, delicious adventure.

    My visit to the Islands of Loreto this past week meant I was fully submerged into all the Baja California Sur has to offer. Truth be told, these Islands off the coast and this particular region of the BCS was an area I previously didn’t even know existed as a travel destination. It’s off the beaten path, likely overlooked by most travelers in favor of it’s popular neighbor to the south, Cabo San Lucas. But, what Cabo is to college-aged Spring-Breakers, Loreto is to calm, relaxation-seeking, wellness warriors, like myself.

    My stay the Villa del Palmar Resort at the Islands of Loreto was a phenomenal one I will never forget. A week of wellness where delicious, fresh, beautifully prepared food was abundant, each plate served was a work of art more beautiful than the last. We ventured out on morning hikes into the hills over-looking the serene Sea of Cortez, the many islands and the incredible, vast untouched land surrounding the resort. We started and ended our days with yoga on the beach while the sound of the soft, calm waves found their way onto shore. By boat, with the salty sea breeze and the hot sun, kissing my skin, we explored the islands and witnesses some of the many native birds. We got an even closer look at the marine-life by snorkeling amongst the coral in the crystal blue clear water off one of the islands. Our lush time at the gorgeous Sabilla Spa took pampering to a whole new level with accommodations unlike anything I have ever seen, the hydrotherapy room alone is worth the visit. We also took a guided group trip into town, complete with a visit to the Misión de Nuestra Señora de Loreto Conchó. I loved exploring and experiencing the rich culture and history of the area and of course let’s be real, the local foods. This was the most wonderful way to feel deeply connected to the roots of this magical place I was so fortunate to visit.
