    As a self-professed perfectionist/crazy person, this recipe nearly didn’t make it to the website today. In some ways I am actually cringing that it did. I made these bars over the weekend, a recipe I had been dreaming of after being inspired and finally made the time to make them. They are SOOO crazy delicious, you guys. But, after spending the time creating them, after melting the chocolate, carefully sprinkling the coconut and giving the bars time to chill, when it came time to cut the bars, I was doing too many things at once. I was photographing another recipe, I was trying to keep the dog out of the food photo set up on the floor and I let myself get flustered. The sharp chef’s knife came out, I laid the bars on a cutting board and with the first cut I saw that I simply wasn’t present. I was somewhere else. With each cut thereafter it only got worse. Then the sun came out after the first so many photos were taken, so the lighting was changing. Things were just not going my way.

    With today being Cinco de Mayo, I was feeling inspired to create just one more Mexican-inspired recipe. But as usual, I couldn’t leave well enough alone and I had to put a little nutritional spin on this one, too. Classic Mexican horchata is obviously crazy delicious on it’s own, there is no denying that, but often it’s loaded with tons of refined sugar and traditionally it’s made with run of the mill rice and almonds – so, there really isn’t much nutrition happening here. What else could I do except boost it?

    This recipe takes a little time to prepare and you may need to do a little searching to find the right ingredients, but none of it’s difficult and I can tell you, it’s more than worth it. The end product is delightful. Full of creamy, rich, sweet and spicy flavor and depending on how you boost it, tons of health-containing goodness, too.

  3. Savory Sprouted Grain Breakfast Porridge with Soft Cooked Egg {Gluten-free}

    I have said it before a million times, but I seriously can’t really get into the super sweet breakfast scene. Once in a great while I love a good, subtly sweet homemade waffle covered in some maple syrup, but mostly I crave fat and savory, first thing in the morning. I don’t know about you, but this is the kind of note I want to start my day on and the fuel I want running through my body, especially on the busy days.

    As I tend to avoid grains most of the time, this means lots of eggs, veggies and in the warmer months, green smoothies. I also like the occasional piece of gluten-free sourdough, topped with an egg or avocado. In the winter months I find myself craving a bit more substantial and comforting foods. I could get down with a good savory oatmeal, but my tummy doesn’t tend to love that grain. I can tolerate the certified gluten-free oats, for sure, but it just doesn’t always sit well. Not worth the bloat – that should really be my life motto.

    These days when I do consume grains (gluten-free, obvi), I prefer for them to either be fermented by way of sourdough or to be sprouted. We spoke about the reasons why to sprout, in my sprouting tutorial, but as a recap:

    Germination (sprouting) produces vitamin C and it also changes the grains and seeds in many beneficial ways. It increases it’s vitamin B content, carotene increases significantly, but most importantly sprouting neutralizes phytic acid, a substance present in the bran of all grains. Phytic acid inhibits our ability to properly absorb calcium, magnesium, iron, copper and zinc. These inhibitors can also neutralize our own already existing precious enzymes within our digestive tract. The complex sugars responsible for intestinal gas are also broken down during sprouting and the sprouting also inactivates aflatoxins, potent carcinogens found in grains. Finally, many previous enzymes that actually benefit the digestion process are produced during the sprouting process. Read the rest of this entry »

    Swiss Chard often gets overlooked as just another green and I constantly find people confused as to what it is or how to cook with it. In my opinion, chard needs far more attention than what it gets. Why is kale getting all the love, anyway? This vitamin-packed, leafy vegetable is actually part of the chenopods, a subfamily of flowing plants that beets and spinach also belong to. Like beets and spinach, chard is packed with antioxidants and vitamins and it’s beautiful, colorful rainbow stems are just perfection.

    The other great thing about chard is that you can eat all of it. Stems and leaves. It’s another, as I like to call it, “nose-to-tail veggie”! (see also my Charred Carrots with Carrot Top Pesto)

    Sometimes, my love for food makes me feel like a real dork. A bonafide, way too excited, food-nerd weirdo! I geek out over spice blends, flavor combinations, discovering a new way to enjoy a food I have eaten a million times. I have been known to dance around my kitchen after just one bite of some random dish I created on the fly. I am pretty certain I could have a problem. (Maybe you should send help.)

    This recipe may have just taken my food-nerdiness to a whole new level. I have been sooo insanely excited to share this recipe with you guys that I woke up this morning so excited to hit “publish”.

    These tacos came out of a random idea I came up with on a bike ride. No seriously, Mark and I were on a long 15-mile bike ride a week or two ago, and on the way home we were riding into the wind and I was exhausted. I found myself quite agitated and struggling. My legs were tired from having worked out in the morning and I was starving. So instead of just breathing and taking in the sights, I did what most logical, food-obsessed people would do – I started dreaming up what I would make for dinner.

    One of my favorite things about blogging has been connecting and making friends with people who I not only have so much in common with but who I also adore, so much, too. Who knew it was possible to have, what some people would consider to be “perfect strangers”, as some of your most favorite people and some of your closest friends.

    Since most of us bloggers are scattered all over the country world, it would be nearly impossible to get everyone together to throw a party in someone’s honor – so the next best thing is a virtual party and today a bunch of us teamed up to do just that!     Since I have started sprouting foods myself, a few months back, I have been pretty excited not only with how much more delicious so many of my favorite foods are, but how much easier they have been to digest. Sprouting seeds and beans especially, have seriously reduced the amount of bloating I have felt with certain foods. Sprouted quinoa is one of my absolute favorites to sprout. It’s super simple and I love knowing that I am maximizing the full nutritional benefits of the quinoa this way.     This super easy, vibrantly-colored quinoa bowl is so easy to throw together and it’s full of so many amazing flavors. Seriously, if you don’t count the sprouting time, you can have this for dinner – completely made and on the table in under 30 minutes. It’s just that easy. Besides the food processor to make the pesto, it’s a one pot meal, which I am ALL about. I love easy meals like this, where it can all cook in one pot and your entire meal is in one bowl. Doesn’t get much easier than that.

    With all of the many different greens we’ve been getting in our CSA box each week I have actually made variations on this recipe too, last week I actually made it with swiss chard instead of the kale and it was just as amazing. I know arugula or spinach would be incredible, too.
