Slow Cooker Shredded Beef – Three Ways {Paleo, Gluten-free}
We have fully entered the season of busy. Easy weeknight meals are one of the things you guys ask for most, and this is also the struggle I see with many of my nutrition clients, simple, approchable meals for the busy work week. So, today I am sharing one of my favorite, simple slow cooker recipes, that comes with 3 different variations, so you won’t get bored. You could literally make this dish every single week as part of your meal planning and mix it up a million different ways.
My favorite thing about each of these recipes are the many varying ways to serve it up:
- lettuce wrapped
- on a salad
- over cauliflower rice (or traditional grains, like quinoa or millet)
- over zucchini noodles
- in any kind of veggie bowl
- filling for tacos, fajitas, burritos or enchiladas with your favorite tortillas
- sandwich
- filling an omelette
- nachos
- add to soups or stews
- stirred into a scramble or frittata
- add to fried rice or fried cauliflower rice
- over ramen noodles
- just spooned straight into your face!

Boosted Chocolate Tahini Fudge {Gluten-free, Paleo}
Well, I might just have to quit after this. This Boosted Chocolate Tahini Fudge features two of my favorite things together in a marriage so perfect I am not sure any treat can ever compare. At least for this girl. As if it couldn’t get better, this treat features the bonus healing powers of one of my favorite daily supplements.
This fudge is dreamy. It’s rich and decadent, it’s unique and “mmmmm”-inducing. Here’s the thing though, if you don’t like tahini, it may not be for you (though you could likely swap in some almond butter or sunflower seed butter). But if you are a lover of all things tahini, you’re in luck. MAJOR luck. The tahini flavor shines bright and in it’s prominence it’s complimented so perfectly by the decadent, rich super dark chocolate. Don’t skimp here, quality is of key. Better yet, use homemade dark chocolate if you’ve got some. You guys already know how I feel about dark chocolate, a square or two a day of this magical superfood and that’s about all this lady needs to be satisfied. It doesn’t take much. Roasted Cabbage Wedges with Garlic Tahini and Toasted Pepitas
There are two things that I will never tire of when it comes to food. The first is roasting. It quite literally is my favorite preparation for most veggies, bringing out their inherent sweetness and an unmatched level of comforting flavor. Second, I absolutely adore tahini. I want to put it on everything. Always.
Cabbage, now that’s a food I haven’t always been such a huge fan of. Admittedly, I used to hate the stuff. If you ask me, steamed cabbage gives this delicious, nutrient-dense veggie a very bad name. But times have changed, I love cabbage these days. Big fan. I like it in sauerkraut, that stuff has become a huge part of my every day. I also really love cabbage in a good homemade spicy slaw. But roast cabbage, this stuff is a total game changer, especially for those who swear they don’t like it.

Spicy Ginger Sesame Asian Cucumber Salad (gluten-free + vegan)
This easy-to-make salad is one of my favorite go-to, quick summer sides. Now that the beautiful heirloom cucumbers in my garden are coming in strong, I have been enjoying this cool, crisp salad nearly every day. The many wonderful Asian-inspired flavors are all so perfectly well-balanced by the various fresh ingredients.
By allowing some of the liquid to drain off from the cucumbers, you can make this refreshing salad ahead and keep it chilled and not lose and of the amazing crispy crunch of the cucumbers. The cucumbers in my garden are quite high in water, as compared to other varieties, so I find this step particularly important when I use those. I also really love this salad with persian cucumbers, as they hold up super well and their flavor is incredible.
