Well, I might just have to quit after this. This Boosted Chocolate Tahini Fudge features two of my favorite things together in a marriage so perfect I am not sure any treat can ever compare. At least for this girl. As if it couldn’t get better, this treat features the bonus healing powers of one of my favorite daily supplements.
This fudge is dreamy. It’s rich and decadent, it’s unique and “mmmmm”-inducing. Here’s the thing though, if you don’t like tahini, it may not be for you (though you could likely swap in some almond butter or sunflower seed butter). But if you are a lover of all things tahini, you’re in luck. MAJOR luck. The tahini flavor shines bright and in it’s prominence it’s complimented so perfectly by the decadent, rich super dark chocolate. Don’t skimp here, quality is of key. Better yet, use homemade dark chocolate if you’ve got some. But here’s the best part, this is so much more than your usual treat, in true Tasty Yummies style, I boosted this fudge to bring an added layer of healing benefits. Cabbage, now that’s a food I haven’t always been such a huge fan of. Admittedly, I used to hate the stuff. If you ask me, steamed cabbage gives this delicious, nutrient-dense veggie a very bad name. But times have changed, I love cabbage these days. Big fan. I like it in sauerkraut, that stuff has become a huge part of my every day. I also really love cabbage in a good homemade spicy slaw. But roast cabbage, this stuff is a total game changer, especially for those who swear they don’t like it.
This easy-to-make salad is one of my favorite go-to, quick summer sides. Now that the beautiful heirloom cucumbers in my garden are coming in strong, I have been enjoying this cool, crisp salad nearly every day. The many wonderful Asian-inspired flavors are all so perfectly well-balanced by the various fresh ingredients.
By allowing some of the liquid to drain off from the cucumbers, you can make this refreshing salad ahead and keep it chilled and not lose and of the amazing crispy crunch of the cucumbers. The cucumbers in my garden are quite high in water, as compared to other varieties, so I find this step particularly important when I use those. I also really love this salad with persian cucumbers, as they hold up super well and their flavor is incredible.
