    To know me, is to know my absolute LOVE and adoration of Christmas. You guys, I love the holidays so much I would eat my Christmas tree, if I could. But I can’t, I’ve tried (I haven’t). Seriously though, I was thinking the other day about the aroma of the tree and that very distinct evergreen scent that fills the house and how I wish I could bottle it up and eat it. These ramblings of a Christmas crazy person did actually serve some purpose, it brought me to the idea of rosemary cookies.

    Yes, I know rosemary is not the same as a pine tree, but it certainly is reminiscent, it does have teeny little hints of the same earthy aroma and it felt like the perfect flavor to craft a cookie around. Besides, to know me is to also know that I much prefer savory over sweet and most Christmas cookies are just way too sugary for my taste.

    ‘Tis the season for sweets and treats, Christmas cookies and cocktails galore. You guys already know by now that I am one for balance and not setting such strict rules on yourself that you restrict everything completely and end up flailing around and ruining your lifestyle after one “slip up”. Balance and occasional indulging is important, especially during this special time of year. However, I am also someone that absolutely HAS to have my daily greens. It absolutely is not an option for me to skip out.

    Gluten-free Thanksgiving for Two

    We are a little more than a week out from Thanksgiving and I am, of course, so excited for the big day. Each year since we have moved out to California, our Thanksgiving celebration has been a bit different. We haven’t exactly created new solid traditions, yet. Often this was even the case back home in NY, too. Most of the time we are surrounded with friends and/or family, but there have been years, due to schedules, travel or other situations, where Thanksgiving dinner was just the two of us. This year we are headed just over the border to Mexico to celebrate the holiday with our friends and their families, where we’ll be together with tons of incredible people, fully submerged in the good vibes of the holiday.

    As much as the holidays are about gathering with family and friends, we have all found ourselves on those less than busy holidays. Just two of us. Your spouse or your partner, a parent, your best friend, a loved one or neighbor you are caring for. I find while not as abundant in people, these more low-key holidays are really nice in their own right, quiet and simple – where brand new memories and traditions are created. I thought creating a feast of a meal, focused on this idea of less, might be useful to many of you.

    Additionally, some of you may be joining a larger feast, as someone gluten-free, or serving a feast with one or two gluten-free guests. It can be scary being that person (and even the person serving them), when you aren’t sure of the food being made, if it’s safe for you, how it was prepared and so on. These smaller-serving sizes free from gluten, would be the perfect way for you to make and bring along a small dish just for you or as an option to serve to your guest.

    Do you miss those fluffy dinner rolls from your previous (gluten-eating) life? Truthfully, I kinda do sometimes. Mostly I have learned to stay busy when the bread basket gets delivered to the table. I engage myself in an interesting conversation, I sip my water or tea and most of the time, I could really care less that I am unable to fill up on all those starchy carbs. 10+ years of not having something, you tend to not be too bothered after a while. I’ve created new habits and I enjoy my meals so much more without having a tummy full of carbs before I have even started the main event.

    But, at holiday meals, a time of traditions and coming together over food, you let go a little, you eat a bit more than you usually would, you indulge in your favorite, classic dishes (gluten-free versions, of course).     It’s that time of year again, the web is a buzz with turkey, mashed potatoes, stuffing, pie and all the sides, so here we go!! This salad celebrates the best of the season and not only is it beautiful, but it packs a punch in the flavor department. It is sure to impress anyone you serve it to and I can promise this salad will be the Knight in shining green armor at any carb-heavy holiday meal.

The flavor mellows, the texture becomes more silky and it’s infused with the soft flavors of the olive oil and citrus.

    This time of year I feel like as much as I am craving holiday flavors and traditional recipes, I am also looking to keep things as simple as possible and I really look to and work hard to stay on track with my eating. No reason to throw everything I work so hard for all year long, right out the door for a month of terrible choices. Between holiday parties and gatherings, events, my yoga teacher training coming to an end, mass amount of holiday orders from our websites, gift shopping and everything else, time is of the essence right now. There hasn’t been much extra time to bake cookies or to make homemade everything, like I always try to. When I was approached by Silk about their new Cashewmilk, I was super excited at the opportunity to try it and report back to you guys.

    We all know that I am the queen of homemade nut milks, but I am always on the lookout for store-bought alternatives, both for myself when life gets busy, but also for those of you that don’t have the desire or time to make homemade nut milks. For me, the important things I look for look for are brands whose nut milk products are certified non-GMO, certified gluten-free, are minimally processed, free of artificial flavors and preservatives and don’t contain carrageenan. I also prefer unsweetened nut milks, so I can control the amount and type of sugar used.

    Silk’s new Cashewmilk is a really great alternative to both homemade nut milks and if you are looking to make the switch, it is a great substitution for regular dairy milk, with 50% more calcium than dairy milk with only 25 calories per serving (25% less than skim milk)*. It’s so irresistibly creamy and delicious, it’s great over cereal, in your favorite recipes or just on it’s own. The moment I poured the first glass and saw just how thick and luscious it was, I immediately was inspired to recreate my favorite classic holiday drink, eggnog.

    This time of year while most folks are looking for holiday cookies and sweets, I find myself seeking out comforting, healthy foods that I feel good about eating. Don’t get me wrong, I do indulge a little here and there, but generally speaking I find myself craving fresh fruits and vegetables and foods that will give me the energy I desperately need this time of year.

    I am totally aware that I am coming in down to the wire with this recipe. Thanksgiving is just a few short days away and maybe some of you have had your menu’s planned for days or even weeks, but I am not quite that put together. I am serving dinner to somewhere between 7 and 10 people on Thursday and I am still working on what I plan to serve.

    With my weekends being consumed by yoga teacher training and trying to maintain a social life amidst a busy work schedule plus making time for my own yoga practice and personal training sessions, life has been feeling a tad hectic, as of late. My saving grace has been our CSA boxes that get delivered every Wednesday. Most weeks I plan our meals based on what shows up in that box, so I always know that we will be eating healthy and well, no matter how busy life gets.

    This stuffing was born on a day that a new CSA box showed up and I still had a couple things from the previous week’s box. So, it’s partially a recipe created with Thanksgiving in mind and partially and more simply, a fridge/pantry cleaning recipe. After getting some beautiful butternut squash, leeks and apples, plus some gorgeous collard greens, I was finding myself inspired to create a dish that used all of them.

    This fun version of a classic bread stuffing is so easy to throw together and it is just full of so many incredible comforting flavors. The best part of this recipe is how versatile it is. You can use whatever your favorite bread is, try kale instead of collard greens and you could even add meat, if that’s your preference.

    Though I tend to do very little imbibing these days, I do enjoy it now and again for special occasions. With the official start of the holidays upon us, I was on a mission to come up with a drink that could become the cocktail of the season. I have been working feverishly on the plans and the menu for our Thanksgiving feast this year and this seasonal appropriate libation will be perfect for our Friendsgiving get-together.

    Sangria is the perfect cocktail for entertaining, so really it’d be great for any celebration. You can make a large batch a day ahead of time, let all of the flavors infuse with one another and as guests arrive, serve chilled with some fresh bubbles on top.

    Happy New Year!! I hope you all had a wonderful holiday season. I decided to take a step away from the computer and online for the last week and a half and enjoy family, friends and to celebration all of the goodness of the holidays!!

    It has been a busy two months and the last two weeks have definitely been no exception. Though I do my best to stick to my clean and healthy eating, I do also like to indulge a little at the holidays. Everything in moderation, is how I choose to look at it. That said, by the time New Years rolls around I am tired and not feeling like my usual self.

    However, come January 2nd – every year, I am ready to get back to super clean eating, tons of fruits and veggies and wave goodbye to the sweets, cookies and cocktails, for a while.

    I am taking extra special care the next couple of days to get in lots of detoxifying and cleansing foods to help get my body ready for my month-long yoga teacher training program that I start next week!! I want to be in tip-top mental shape, ready to take in all that I am about to learn. For me what I am eating and consuming has a direct reflection on my mind and my ability to focus.

    This juice was the perfect way to start the day today and I have a feeling many days to come this month. Ginger, beet, lemon, apple, celery, cucumber and parsley together for a bright, fresh and cleansing juice. Read the rest of this entry »

    I was supposed to be in San Francisco for the weekend, our final show of the holiday. Sadly, the dog got sick  which meant I had to stay home, since we didn’t feel comfortable boarding her. Hubby had to go to the event without me, so that equated to some unplanned time off this weekend. I actually didn’t know what to do with myself, we have been going non-stop for the past month and a half or so. I seriously actually made a list Friday night of what I wanted to do to relax. That’s how tightly wound I was.

    Saturday morning I got up bright and early headed to a yoga class to start my unwinding and relaxing. I really cannot think of a more perfect way to kick off a weekend of no plans. By Saturday afternoon I found myself getting a relaxing pedicure with Meg and after that I curled up  on the couch with my furry baby, watching Christmas movies and I decide I should whip up a quick seasonal cocktail. Gingerbread felt appropriate given that we are just a couple days away from my favorite day of the year.

    This cocktail is spicy and has a strong molasses flavor, it tastes just like a traditional gingerbread cookie. If you want it sweeter add a bit more maple syrup or honey, or use a smidge less molasses. The fresh ginger is optional, but I personally love the little bits of it floating in the cocktail, such a great taste. Read the rest of this entry »

    This year I had amazing intentions of organizing a gluten-free Christmas Cookie Exchange with some of my favorite gluten-free bloggers. Ya know the kind, where you each make one or two types of cookies and you make one dozen for every person participating. Then you exchange cookies with everyone in the group (we were just going to mail them off) and then you each end up with a few dozen different types of cookies for all of your holiday entertaining. Or just to eat yourself, if that’s your thing!

    Well, life happened and I have barely had time to finish my Christmas shopping this year, so we’ll have to save this idea for another year.     This time of year, I am all about the familiar comforting flavors of the holiday season. Gingerbread, cinnamon rolls, egg nog and of course, chocolate and peppermint, etc. The Starbucks Peppermint Mocha used to be one of my favs, but I just really don’t love all of those sugary syrups and other junk, plus since I prefer to avoid dairy, my only option there is soy milk, which I really don’t like drinking, either. That said, those flavors are the perfect way to get me in the holiday mood. We have been known to go out of our way to get peppermint mochas, just to sip on while we pick out our tree or check out the holiday lights. It’s holiday perfection in a cup!

    Though I am not a regular coffee drinker these days, I do enjoy a cup of joe – now and again. It’s a nice treat once in a while, but I love not being a slave to the caffeine like so many regular coffee drinkers. I only drink it when it sounds good, not because I have to. I find I enjoy coffee and coffee drinks so much more since I tend to indulge only about once a month or so.

    This holiday season, I was determined to recreate the classic Peppermint Mocha, so that I could enjoy it without the junk. Dairy-free, refined sugar-free, made with high-quality ingredients! I am super happy with my homemade version, I like it better than any that could come in a cardboard cup with snowflakes on it.     After making the (huge) move from New York to California earlier this year, I knew that the holidays would be an especially hard time of year for missing my family. When the first signs of the season hit, I was instantly an emotional wreck (crying in the decorations aisle at Target, at the tree lighting ceremony at Disneyland… you get the gist.) Since we wouldn’t be making the trip back home this first year, I quickly realized how important it would be to bring my family’s holiday traditions to our new home.

    Every Christmas morning for as long as I can remember, my mom would form a batch of her homemade cinnamon rolls into the shape of a Christmas tree. Some years, she would get creative and decorate the tree with sprinkles or color the icing green, but no matter what, they were always in the shape of a tree. The sweet rolls served as a final gift to enjoy together after every other present from under the tree had been opened. It’s the little things like this – 34 years of the same Christmas traditions – that I’m going to especially miss this year.

    Since I pulled together the massive recipe round-up list for Thanksgiving this year, I haven’t been super focus on creating recipes for the holiday, since I knew you guys were more than set, but I have just been so inspired by the season and I have been having a lot of fun with the flavors.

    I love coming up with creative and healthy ways to enjoy the flavors of the season. I prefer to make recipes that everyone will enjoy, no matter if they have allergies or intolerances or not, while still accommodating my own personal dietary restrictions. These tarts do just that. They would be a lovely dessert at Thanksgiving or any other holiday gathering. The tart shells have the perfect texture to them, the creamy rich cashew layer is reminiscent of cream cheese and the spiced cranberry orange topping is what holiday dreams are made of.     Most of the time, as of late, I am struggling to believe it’s mid-November. Sure the calendar says so, there are lots of holiday decorations at the stores, I even saw the pictures from the first snow my family and friends got earlier in the week in NY. But, being my first year here in Southern California – the excessive sunshine and warmer temperatures are making it really hard for me to believe we are just a few weeks out from Thanksgiving. I have been a tad concerned that it would be hard to get into the holidays this year, with this new drastic change in lifestyle and scenery.

    On my run to the beach yesterday morning, I passed by a home with a huge tree with beautifully vibrant leaves, falling so haphazardly all over their yard. The tree was more bare than not. I was mid-run and had a really great stride going, but I had to stop and take it all in. Snap a photo or two. It’s the little things in life, this like, that I may have once took for granted, that can now literally stop me dead in my tracks, leaving me with an immense amount of gratitude. I wonder how many people pass that very tree in a day, not realizing just how special it is. It is maybe one of just a few trees like it in our entire neighborhood. Only the second that has caught my attention.

    Thanksgiving is a time to reflect on our gratitude. To take time to appreciate all that we have. This month I have been participating in a 21-Day Gratitude Meditation Series. Each morning I wake up and I dedicate a set amount of time before I start my day, to reflect on the gratitude I have for my life and those that are a part of it. It has been a wonderful journey and I don’t let a day pass by that I don’t recognize what a gift each and every moment truly is.

    OK but let’s be really real and totally honest, Thanksgiving is also ALL about FOOD! Delicious, yummy, satisfying, comforting food! Rather than share a bunch of new recipes throughout this month, I thought I would take some time to pull together some of my all-time favorite Thanksgiving recipes, from here on TY and from some of my favorite bloggers. Some I have made before, some are on my menu for this year and some on my fantasy menu (if only I could have a skilled team of chefs to help me prepare an 11-course meal)!

    Here is a list of some great gluten-free Thanksgiving recipes, sure to please everyone at your celebration. There is a little bit on something for all. Some of the traditional classics you’ve come to know at your holiday feasts, some lightened up and extra healthy dishes.  Some covered in cheese, some are literally just vegetables.
