    A twist on traditional baklava these Paleo Baklava Shortbread Cookie Bars bring the classic flavors of this popular Greek pastry, I grew up on without flour or gluten. Luscious butter, comforting, aromatic spices, a hint of citrus, a blend of spiced nuts and a sweet honey syrup. Mmmmmm!

    I am sorry, I have been holding onto this recipe for sometime now. I usually work several months out on my content, I create and test recipes several times over to get them right, then I make them for the final shoot, I style the food, shoot and edit all the photos, I write up the post and recipe and put it into the content calendar.  I move my content around to keep it fresh, I base it on what’s in season, holidays and what you all are wanting most. For me, baked goods aren’t always a priority, I don’t love to bake and I don’t generally care about sweets so the baked goods always get pushed down in the queue.

    I created the recipe for these Paleo Baklava Shortbread Cookie Bars after a trip back home to Buffalo to see my family this past April. My trips home always inspire so many recipe ideas, often new ways to create family or local classics that I didn’t even know I missed so much. The day I made this recipe for the very first time, the smell in my kitchen reminded me of home, of my mom and my dad, my Yia Yias. The first bite I took of this Paleo Baklava, I actually cried. A full on dessert-induced cry.

  2. Grain-free Thai Beef Bowls {Paleo, Whole30, Keto}

    Grain-free Thai Beef Bowls. This is an easy, one-pan meal, ready in just over 15 minutes, and it’s a weeknight staple in our house.     Despite the fact that we are well into spring now, Southern California has had it a bit twisted. Since I arrived back home from my travels to NY last week, it’s been mostly grey, rainy and cool. While I would have loved this weather in December and January, I will take it now. It’s a really nice change of pace. A great reason to pull out some sweaters and it’s also a great excuse to enjoy some real comforting foods.

    Of all things I was craving a casserole. I know. What is it 1985? There is just something so comforting and cozy about a meal you can dump into a pan, bake and enjoy. It’s childhood for those of us in our 30s. I was also dreaming of a good creamy spring risotto, one of my favorite foods. While rice isn’t off limits for me, I do try to be mindful of how many grains I consume. I just feel better when my belly isn’t bloated from the carbs. Hence why I am OBSESSED with cauliflower rice. It’s so crazy versatile, so super easy to make and it’s incredible how delicious it is. If you have a Trader Joe’s near you, the Organic Frozen Cauliflower Rice is an amazing quick option for when you don’t want to lug out the food processor. I have used it in this recipe before and it’s perfect!

    This tutorial falls under the category of simple, yet sweet. Or should I say, simple, yet savory! This is the perfect weeknight meal solution and as of recent, it is a near weekly occurrence in our house. I grab a fresh 3-4 lb whole pasture-raised chicken at the farmers market or Whole Foods, I rub it down, season it up, pile it atop some root veggies in the Crock Pot and voila, 4 hours later, dinner is ready.

    The best part of a weekly whole chicken is how many meals we get from it. The meal from the whole roasted chicken is good for at least 2-3 meals, we enjoy it with the potatoes, as chicken salad, on top of big green salads, etc. Then I make a big pot of stock from the leftover bones and we get another 2-3 meals from that. This is truly a must for any busy family.

    The seasonings on your chicken can vary with your preference and your mood. Generally I use this all-purpose herb and seasoning blend, that I love, occasionally I will opt for a spicy, chile pepper rub, it’s also great with lemon zest, garlic and freshly ground black pepper. The possibilities are endless. Seriously, you will never buy that rotisserie chicken from the store, again.

    This might seem like a beast of a tutorial, but if you grew up Greek, as I did, you will know just how exciting this is the first time you make them yourself. For the past few years, every trip my parents have taken out here to California to visit us, we have planned a day and made a huge Greek feast. Each time we have made the time to use the beautiful grape leaves growing in my yard that are always perfectly in season and we spend the afternoon making homemade dolmades AKA dolmas AKA stuffed grape leaves. These are just like my Yia Yia and my dad’s Yia Yia, had made when we were growing up.

    The beautiful thing about this stuffed grape leaves tutorial/recipe is how versatile it is. I have made these both vegan and with meat and most recently I have even experimented with cauliflower rice for a grain-free version. I have also made them both with jarred grape leaves and the fresh grape leaves growing in my yard.

    My dad has stories of his YiaYia (my great grandmother) driving along very specific country roads that she knew had grape vines, all the kids in the car would be instructed to get out and pick the freshest leaves, they would then take them home and she would tie them up to dry out in the attic, so she’d always have them on hand for homemade dolmades.

    Thankfully, I have several grape vines growing behind my house, so I don’t have to stalk any local vineyards. In the late spring and early summer as they are just starting to sprout new leaves, I can head behind the house pick the prettiest and most perfect ones, just for making dolmades. If you don’t have access to grapevines, simply buy jarred grape leaves, a little less work but still so delicious.

    This tutorial shares options for the filling to be made with or without meat, with rice or with cauliflower rice. Throughout the instructions you will see notes that pertain to the various options. Be sure to read carefully.

    Stuffed grape leaves make a great meze (mezethes or mezze) an appetizer or a small dish to share, meant to be served with wine or ouzo. Imagine a plate of these with some homemade hummus, feta cheese and olives, a big bowl of avgolemeno soup, falafel, a big ‘ol Greek salad, the list could go on and on. Whatever you serve these with and however you serve these, hot, warm or cool, you will love them, especially if you make and share them with people you love. This I can very much attest to.

    Lightened-Up Moussaka {Grain-free w/ Vegetarian Option}

    After sharing the recipe for my dad’s famous Roasted Red Pepper and Feta Cheese Dip earlier this summer, I realized that I haven’t shared enough Greek recipes here on the site.

    Growing up Greek is to grow up loving delicious, traditional, homemade food. I can still remember the smells of my Great Yia Yia’s house, the fragrant stews and sauces, like Fasolakia, simmering that you could smell as you walked up the driveway, fresh herbs drying in the kitchen, the smells of homemade chocolates wafting up the stairs from the basement, where she did her candy-making. It is amazing how I can still tell you exactly what that kitchen smelled like and that was over 20 years ago. When my great grandmother passed away, it was my dad’s parents that moved into the home, carrying on many of the same traditions, Avgolemeno soup, lamb meatballs, pastitsio, spanikopita, dolmades, plus of course, the Greek pastries and all of that good sweet stuff.

    Now that my parents have moved into this home, that was built for my Great Grandparents many years after they moved here from Greece and has been in family since long before I was born, they continue to make many of these amazing traditional foods in the very kitchen that my Yia Yia Faklaris and my Yia Yia Manos once did. My dad makes the best Greek salad dressing around (I will have to share my version of it soon) for the best souvlaki you will ever eat, he can grill up a leg of marinated lamb like it’s no one’s business and he makes a killer rice pudding that will literally have you on the verge of tears, it’s that good. My mom, though she doesn’t have a bit of Greek blood in her veins, she makes incredible pastitsio, amazing Avgolemeno soup and together she and my dad make the best baklava I have ever eaten.

    Sadly, going gluten-free nearly 10 years ago now, has meant that I have had to say goodbye to a lot of the traditional foods I grew up on. I have yet to come up with a gluten-free equivalent to phyllo dough, something so integral to so many of my favorite Greek dishes. With that said,  it has taken me nearly 10 years and moving across the country away from my family to come to this – but lately I have been thinking that while I may never have many of those classic Greek dishes as I once knew them, there is no reason I can’t reimagine them. Keeping the classic flavors, but making them gluten-free and trying to generally just lighten them up a bit.

  7. Photo Fun Day Friday

    I have been busy bad and I totally spaced on my Photo Fun Day Friday posts the last couple of weeks, so this is a bigger one than usual. I flew home to Buffalo this past weekend for the first time since we moved to Southern California six months ago! It was my niece Teagan’s 4th birthday and I hadn’t seen her since we left at the end of February. I missed her (and everyone) sooo much! It was a wonderful trip home, I crammed in as much time with friends and family as I could and just enjoyed every single bit of it.

  8. Photo Fun Day Friday – A Few Days Late

    I realize this should be titled “Photo Fun Day Sunday Afternoon”. My parents’ trip ended Friday afternoon and with that came some sad goodbyes and an afternoon of loafing around for Mark and I after we drove them to the airport. We had a busy week with them, we crammed a lot in and it was really wonderful! So nice to spend an entire week with my parents. Uninterrupted by work, obligations, business meetings, events, other people, etc. I don’t know if I have ever had that much time with just me (and Mark) my parents, ever! It was nice, to say the least.

    We made lots of meals at home, we went to a few of our favorite restaurants and even tried a few new places that Mark and I haven’t been to yet. We took a lot of walks, checked out the Long Beach Flea on Father’s Day, hosted a big dinner with friends, we of course, took them for their first trip to Disneyland and lastly, the beach on the last day, to end their trip right.

  9. Photo Fun Day Friday

    Hope everyone is in the full swing of the holidays and loving and cherishing every moment of it! I have been! It has been an emotional few weeks over here. The emotions have been caused by a variety of different reasons – like this being our last holidays living in this home and in Buffalo for that matter. Of course the sad tragedy of last Friday and the loss of all of those sweet innocent babies hit me just as hard as I know it hit most everyone else. On top of all of this, our family has been dealing with a terrible accident that landed a family member in the hospital the Friday prior, he is in serious condition but very lucky to be alive. Please send if you would, your positive thoughts, prayers, healing vibes, etc. his way, he could certainly use them in his long road to recovery ahead.

     It has been a lot of happiness and sadness for a short time, but it has all made me appreciate the magic of life and love that much more! Life is fragile, every moment a blessing and the only way I know how to embrace that is to live each day to it’s fullest, grateful for all that I have. I hope you are all doing the same, hugging your loved ones a little tighter this holiday season and counting your blessings whenever possible. Love and light to you all!

    As you will see in the photos, this week has been spent full embracing the holidays, shipping out the last minute orders for Hero, shipping gifts to out of town friends and family, packing boxes and squeezing in as much family and friend time as humanly possible!

    Got together with the family on Sunday and made TONS of baklava using my late Yia Yia’s recipe. I may not be able to eat it but it makes for great holiday gifts for friends!

    It is a pretty labor intensive process. You place each layer of phyllo dough, one at a time, and brush with butter. There are 15 layers, then nuts and spices, 10 layers, more nuts, then 15 more layers. Layer by layer, sheet by sheet! I love making it and hanging out with my family, even without the satisfaction of ever taking a bite!

    Took a break last night from packing and organizing for the move to relax! My relaxation involved a roast chicken from our farmer, a glass of bourbon and Christmas music.

    I cut up some of the delicata squash leftover from our CSA with porter farms. I tossed it with some olive oil, maple syrup and spices and added it to the chicken in the last 35 minutes.

  10. Photo Fun Day Friday (Yes, I Know it’s Monday)

    So it may be a few days late, but here it is. I decided after a busy few weeks of travel, house selling, getting ready for Thanksgiving and organizing the Thanksgiving series here on the blog, by the time the holiday had come and gone, I was just plain exhausted!! I needed a few days to relax, regroup and enjoy life with the family!

    Last weekend we wrapped up our east coast tour in Brooklyn and then made the drive home. We got back late Monday and took a Tuesday and Wednesday to catch up with everything from being away 10 days and to get out all of the web orders that came in while we were out. Thanksgiving this year was the best one I can ever recall. Instead of it being the large extended family affair that is usually is, which is definitely nice, this year we decided to just do a small dinner with my immediate family. My parents, my sisters, my niece and nephew and Mark and I. It was so quiet, fun and it was really nice to spend time together cooking, eating, visiting and enjoying each other. With our pending move across the country, I am taking in all of these moments and cherishing them to the fullest.

    On Saturday, we made the drive out to West Valley, NY to visit McHugh’s to cut down our Christmas tree. My parents, my sister Vicky and my niece Teagan joined us and we all went into Ellicottville afterward to walk around and grab some dinner. It was the perfect day, there was even snow!!!

    Hope everyone had a wonderful holiday (if you celebrate) and an enjoyable weekend. We have another road trip coming up this week, so I am going to do my best to get a few recipes up in spite of that.

    Another Friday is upon us and another wonderful week behind us. We have been taking in the last moments of summer and trying to enjoy it all while it is here. The weather has been absolutely beautiful and I kinda don’t want it to end, although I have been enjoying the cool evenings and mornings. So great for sleep!

Hubby and I will be set up in a booth there from 11am-5pm, selling all of our goods and wares, including some of the brand new Tasty Yummies kitchen and cooking prints.     We had a little dinner party get-together with friends Wednesday night. If you live in Buffalo you will be hearing a lot more about this lovely lady, Alyssa. She has plans to open a wonderful allergen-free bakery (with pour over coffee) here in the city in the near future, Wild Roots. For now you can keep up with her recipes and her plans on her blog.     Hey guys, hope everyone has been well! Sorry for the lack of posts as of late, it has been a bit busy over here with us getting our house ready to get on the market and everything else we have going on, with work and otherwise. We leave tomorrow morning to head to California for the week, where we plan to explore and really dive into what will soon be our new home. Both my hubby and I agreed that with such a HUGE life decision pending, we owe it to ourselves to be 150% positive that this is where we want to move and that this is what we want to do. We are both 99.9% sure, but the last time we were out there, last July, we were talking so casually about it, more like a 5-year plan. Since we really never do anything half-assed, we decided why would we wait so long? Let’s get our house here in Buffalo on the market, sell it and go! So after this week long trip, we plan to get back home, get our house on the market and when it sells, we are gone. We have been painting, putting up lights, decluttering, ebaying, craigslisting and just getting ourselves and the house ready! It has been exciting and worth it though, we can see the progress being made and we are getting that much closer. It looks like if the house here in Buffalo goes on the market in early June, there is a possibility we could be living in California by late Summer. That is so exciting and terrifying, all at once.

    As you can imagine, this is partially why I haven’t had as much time to play in the kitchen, play around with recipes, etc. I have been cooking and baking but I have been sticking with trusted and favorite recipes, or just simple throw together things that require very little thought. Though I did try to create a new recipe on Friday night and it just didn’t go as planned, I was trying to make grain-free, vegan ginger snap cookies and they just didn’t come out quite as I had imagined. They tasted amazing but the dough was a bit too thin and the cookies spread out more than I had wanted. So back to the drawing board on those.

    Saturday we had a fun little Kentucky Derby party at my parent’s house. So I, of course, did a little baking and cooking! I made oven “fried” okra (vegan and gluten-free), which turned out pretty good and these corn bread muffins. I also made a little something for everyone else, a Louisville favorite, “hot browns”! These are totally not gluten-free, vegan, dairy-free or anything else Beth friendly, but it’s one my hubby’s favorites and it reminds him of home. Rather than butchering a classic trying to make it healthy for me, I took one for the team and made a mini version of the traditional sandwich. Basically a hot brown is roasted turkey served on top of thick toast, topped with a thick, creamy white cheese sauce, some bacon and a slice or two of tomato. All of that is just put in the broiler until browned and bubbly, and you have one happy hubby! This may have been the first time I have ever made something that I couldn’t take a single taste of. I made the cheese sauce from scratch, but since it was thickened with regular flour, I couldn’t taste it. I was relying on everyone else’s taste, it felt strange and foreign. Kinda fun though, too.

    My mom made some oven baked “fried” chicken, we had some delicious beans and greens, some vinegary coleslaw and my dad made pulled pork. Oh, and of course, the bourbon and the mint juleps were flowing freely. My sister made a hysterical horse head cake and for me, she made some incredibly delicious and super beautifully decorated gluten-free and vegan chocolate cupcakes with chocolate frosting, totally from scratch. They were so amazing. My mom also pulled out some of my great grandmother’s (my great Yia Yia) old hats and we all picked one out to wear.

    Kentucky Derby Cake

    Since I always make sure to make at least one or two things that I know I can eat that are somewhat healthy, besides the simple corn meal crusted fresh okra bits that I baked up to make crispy, I decided to have some fun with these corn bread muffins and add in a little heat with the jalapeños. You could certainly leave those out if you don’t like jalapeños, or you could try chipotle or some roasted poblanos, etc – but I would recommend trying it. The heat and spice is very subtle and it is so nice with the gritty corn flavor. If you like your corn bread more on the sweet side, than savory, just add in a more sugar (or sweetener of your choice).

    Our Derby party was super fun and laid back. As we always do, Mark and I hit one of the seedy OTB’s (Off Track Betting) before heading to my parent’s house. It is the only time of year we bet on horse racing. It is our tradition. I always like to bet on one favored horse and one underdog. I put just $10 to win on each of my two picks and didn’t expect much! My underdog horse, #19 – “I’ll Have Another”, actually won and I walked away with $155! Yay!

    I am so glad we got to have this little party! This is one of the times of year that Mark gets homesick and we all love a good excuse to party! With us gearing up to move, I cherish these moments more than ever before!!

    Jalapeño Corn Bread Muffins - Gluten-free + Dairy-free

    makes 12 muffins

    • 1 cup unsweetened almond milk (or other non-dairy milk)
    • 2 teaspoons white vinegar
    • 2 large farm fresh brown eggs, lightly beaten at room temperature (you could try using an egg replacer here to make vegan,
    • but I haven’t done so yet, myself)
    • 1/3 cup olive oil (you can also use canola oil or melted coconut oil)
    • 1 cup gluten-free stone ground, whole grain medium grind corn meal (If you can’t find whole grain, regular will work and if
    • you prefer fine grind over medium, that’s ok, too)
    • 1 cup all-purpose gluten-free flour (I used a blend of tapioca, potato starch and sorghum flour)
    • 1/4 cup organic raw cane sugar (regular sugar will work, too)
    • 2 teaspoons baking powder
    • 1 teaspoon sea salt
    • 1 to 2 jalapeños, seeded and finely chopped

    Preheat the oven to 350ºF. Line a full-sized muffin tin with paper liners.

    Mix the vinegar with the milk, and set aside. In a large bowl mix together well all the dry ingredients, corn meal, all-purpose flour, cane sugar, baking powder and sea salt. In a separate medium-sized bowl, whisk together the eggs, olive oil and milk/vinegar mixture. Pour the wet mixture into the dry mixture slowly, mixing all the while. You can use a spoon or a mixer on low, just make sure the ingredients are thoroughly blended. Fold in the finely chopped jalapeños, make sure they are evenly mixed throughout.

    Pour the mixture into the prepared muffin tin and bake for 25 to 30 minutes until the top is firm and the edges are slightly browned. Serve warm if you wish.
