    As I sit down to write this recipe I am having the realization that these Maple Bourbon Glazed Chicken Wings in a nutshell are basically a food representation of my marriage and just 9 days before our 10 year wedding anniversary, at that. I would love to act as if this was 100% purposeful in it’s intent, but nope, kinda just a happy accident. But you guys, chicken wings inspired by the Kentucky Derby – it’s like Buffalo meets Louisville. I a Buffalo girl, my husband Mark from Louisville. Nifty. Totally planned (not really).

    Tomorrow is the Kentucky Derby and while I could care less about horse racing, in fact I actually have some inherent issues with it from a moral and ethical standpoint, I do have a husband that grew up in Louisville, surrounded by the culture of this 2-minute long historic sport. They party for 2 weeks prior to the Derby in Louisville, there are boat races, fireworks, fancy hats and a plethora of foods and cocktails exclusively served for the Derby. They don’t mess around.

    You guys know how I feel about my daily greens and more importantly about the quality of all the foods that we eat in our household.     It is an absolute given that at all times I have organic baby spinach and/or kale in the fridge. Whether it’s wilted down in my morning eggs, tossed into a blended smoothie or the base of an epic, seasonal salad I find these to be the most versatile veggies to always have on hand.

    If I am being fully honest with you, I have been known to just save a fistful of baby spinach or baby kale into my mouth mid-day if I have been slacking on my greens consumption. Hey – you do what you gotta go sometimes.

    With the new year upon us, for many people this month is about a reset. This can take on so many different faces and applications, depending on the person. Working as a Nutritional Therapist and seeing clients, it is never my job to tell anyone what their diet should be.     With the busyness of this time of year, I am finding myself far more called to creating nourishing, comforting food that doesn’t eat up half the day in prep work, but that also cooks quickly and leaves us time for all the other crazy tasks we have on ours lists right now. This time of year I just want the most comforting foods, soups and stews, roasts and other hearty, seasonal meals. This Instant Pot Beef Stew is basically the best ever version of all of this! Ready in under an hour, it’ll taste as if had been cooking ALL day long.

    Last year I got myself the Instant Pot, after hearing from so many people how amazing it is. I am still, after a year, learning all the things it can do. I recently began playing with the sauté feature, which allows you to sear meat, before pressure cooking it. I find this seals in the flavor and the caramelized flavors from the browning really brings more depth and richness to the overall dish. Plus, it gives us little brown bits to deglaze, which is one of my most favorite things to do when cooking.

    This is comforting, winter food at it’s finest. It actually reminds me of being a kid, this is the food we grew up on. My mom made a killer beef stew on the stove top. It tastes of love, coziness and comfort.

    For those of you that follow me on social media, you likely see that I spend a fair amount of time at the Terranea Resort here in the LA area.     For many of you that have followed Tasty Yummies and my ongoing health journey for some time, you know that this website, my passion and my recipes were all born of my own quest to find health. In discovering a severe gluten intolerance nearly 12 years ago, to my autoimmune disease diagnosis and a slew of other digestive troubles along the way – I have always chosen to let these challenges be the catalyst to me educating myself, empowering myself and in turn hoping to help others do the same.

    From the very start, I have always embraced and preached the idea of nourishing your individuality, that there is no one-size-fits all approach to health and that if you can quiet down the outside influences enough and tap into your own intuition – all of the answers are there. When the paleo movement began to come to fruition and came more to the forefront, I admittedly found myself viscerally opposed to this idea – just as I always had been with any other diet that contained strict labels, rules and a very black and white approach to health. It wasn’t so much that I was against the idea that it could work for some, it was more that I was witnessing very dogmatic activity from many of it’s supporters, which turned me off. It was feeling to me like some vegans’ approach to health and their belief (and often consequent judgement) that “their way” was the only way. Despite following a diet fairly close to what was labeled as “paleo” and having some interest in the idea that it could continue healing my body using a paleo diet, I stubbornly rejected the notion of slapping a label on my heath journey, this blog and my continued autoimmune struggles.

    Sometimes it’s the un-recipes, the simple, uncomplicated eats that are the most coveted around here. With fall being a hustling and bustling time, I know we all struggle to slow down, to hit pause even and enjoy the best of the season, but it’s so important. Fall will be over before we know it and we will be in the thick of the holidays. I don’t want to rush it. I want to enjoy every bit(e) of it.

    While I have no issues with embracing pumpkin-everything this time of year, I also find that apples don’t get nearly enough of the autumnal love! Probably my most favorite of all the fruits, apples are impeccable this time of year and a source of so many great nutrients, including vitamins A & C and various minerals including lots of potassium, and a solid showing of calcium, magnesium and phosphorous. They are high in fiber and apple pectin has detoxifying qualities, making it used often in cleansing formulas. Apples are a sweet mini-multivitamin of sorts, bringing a little bit of everything. I always recommend apples that are organic and unsprayed, as most conventional apples are heavily sprayed with pesticides.

    With the start of fall and now as we enter October, I say this means it’s officially, official that we can go all-in on the pumpkin spice everything. Sure it’s considered Basic B*tch to some, but I don’t care, call me “Basic Beth” if you wish – I want to pumpkin spice ALL the things, like these Maple Glazed Pumpkin Spice Almonds.

    These lightly sweetened with just a hint of salt, crunchy, crispy, coated almonds are flavored with my homemade Pumpkin Spice Blend (but of course any store bought pumpkin spice blend will work) – they get coated with maple syrup and then if you allow them time to dry slowly, they harden, up, get crispy and will wow you! Otherwise you end up with sticky, stuck together, not-so-crispy nuts.

    I am always looking for fun, inspired and unique ways to up my culinary creativity game, without too much extra fuss. Enter tea. I find tea-infusing to take the flavor profiles of recipes to new heights, with little to no extra work and the flavor combinations truly are endless.

    Part of the self-initiated responsibility that I have gladly taken on with Tasty Yummies and now as I move towards my Nutritional Therapy Practice, is to not only read about and research how traditional whole foods can play a role in our healthy lifestyles and healing journeys, but to also keep my ear to the ground about new (or new to me) nutrient-dense alternative foods.     If you have been reading Tasty Yummies for sometime, you know since moving to California 3 years ago, my infatuation love of figs runs very deep. The beautiful, big fig tree that we were blessed with, when we moved into this home, is one of the most magical gifts mother nature has ever given to me. The fig tree is a actually a long-standing symbol of abundance, fertility and sweetness, which is obviously quite fitting. Boy, does this tree produce in abundance! The only bad thing however, is just how short the season is. It’s over in a flash. Middle of the summer and that’s it.

    While we are still a month or so off from fresh figs, it doesn’t mean that I don’t crave those lusciously sweet fruits. Which is why California dried figs are the very next best thing.     Did you know that May is Celiac Awareness Month? I shared the following over on my Instagram account but I thought it was worth mentioning here, as well.

    While I discovered my own severe gluten intolerance over 11 years ago, I was actually never properly tested for Celiac (until it was too late) and now as many years later, as additional health issues have shown up to the party, many of which you guys have read about right here on the website – I now certainly suspect Celiac to be the underlying cause. (Though I denied this truth for many years)

    That said, frankly speaking, my 11 year journey of eating 100% gluten-free and guiding others on their path, no matter the need, it has always been about celebrating food, exploring ingredients and hopefully encouraging others to get excited to be in the kitchen and create. Fresh, seasonal, nutrient-dense whole foods – to me it’s all about the amazing things that are naturally gluten-free, rather than supplementing with overly processed substitutes.

    That said, given the nature of my work and the fact that not everyone has the ability to work from home, cook all three meals a day completely from scratch and that many of you have a whole family to feed – I am also always on the look out for gluten-free products that will make life easier, while not being loaded with terrifying ingredients.
