  1. Cherry Chocolate Chunk Banana Soft Serve {gluten-free, paleo, vegan}

    Cherry Chocolate Chunk Banana Soft Serve {gluten-free, paleo, vegan}

    Cherry Chocolate Chunk Banana Soft Serve {gluten-free, paleo, vegan}

    With Memorial Day behind us, Summer has un-officially kicked off and I couldn’t be more ready! We’ve already managed to get in a picnic and a BBQ to celebrate. Also important to the commemorating of this lovely season. Ice cream! Am I right?

    With all the adjustments I have made to my diet and how great I feel these days, while I very much subscribe to the notion of balance and the occasional treat being part of maintaining a healthy and accessible lifestyle, I also always apt to first reach for healthier whole food options, when possible. This recipe celebrates fresh, in-seaon nutrient-dense whole foods – bringing the treat vibes of what usually would be loaded with dairy, refined sugar and gosh, who knows what else.     Perfect Grain-free Chocolate Chip Cookies {gluten-free, paleo, egg-free, dairy-free}

    Perfect Grain-free Chocolate Chip Cookies {gluten-free, paleo, egg-free, dairy-free}

    Last month marked 6 years of Tasty Yummies. WOW! How that happened, I actually have no idea. I still remember the day I decided that I wanted to share my recipes with the world and it truthfully doesn’t feel that long ago. It’s been an interesting handful of years with varying challenges, lots of healing, yet so very much to celebrate. Mostly, this website and my own personal journey to health, these both always felt like the first steps to finding my true purpose. With years of my health bringing various challenges and curve-balls, I have realized that this was all part of my path to being able to help others in a much deeper way than just recipes. This was part of my journey for reasons that now finally make sense to me.

    Perfect Grain-free Chocolate Chip Cookies {gluten-free, paleo, egg-free, dairy-free}

    For the first many years I started this website, really until late 2014, I had looked at the long journey towards health I had already been on and how I was feeling in that present moment and somehow I let myself get accustomed to “good enough”. While I can look back now and see how terrible I was still actually feeling, I was letting myself compare it to my past (and to other’s) and it all just seemed fine enough. I looked at others battling with chronic illness and other serious afflictions and I somehow felt that I had no place complaining, that I had no right thinking my afflictions were “something”. After all I hadn’t been to the hospital, I could get out of bed every morning. I didn’t have cancer or lyme disease. I would read other blogs, I saw drastic and scary before and after photos, even comments here from my readers, going through just terrible, awful things – it all made me feel like I had no right thinking I wasn’t well. I felt like I was being nit-picky, complaining about having no energy and having chronic digestive issues. So, instead I would chronically repeat to myself “it could always be worse”. While this positivity served it’s purpose for me in some ways, in many ways it was a very dangerous addiction to “positivity” that was actually hindering my healing.

  3. Coconut Panna Cotta with Strawberry Rhubarb Compote

    Coconut Panna Cotta with Strawberry Rhubarb Compote

    I know many of you don’t read my words, you look at the pictures, you scroll down to the recipe and maybe you make it. Or maybe you don’t. I get it. No offense taken. Good news for those of you in the no-words-please club, you’ll be excited for this post and maybe those in the coming few weeks. I have finals coming up and studying is of the highest priority but I can’t not create and share recipes, it’s my life blood, it’s my energy source, it literally fuels me. We’re also leaving town tomorrow, headed to Palm Springs for our wedding anniversary. I plan to sit by the pool, read my text books, study my flashcards and maybe sneak in some napping and cocktails while I am at it, too. All that said, writing words right now feels harder than any community projects, any tests and quizzes, essays or book reviews – somehow it’s weighing on me heavier than anything else.

  4. Grain-free Matcha Orange Blossom Shortbread with Black Sesame Seeds

    Grain-free Matcha Orange Blossom Shortbread with Black Sesame Seeds

    Grain-free Matcha Orange Blossom Shortbread with Black Sesame Seeds

    Green has always been one of my very favorite colors. I have always been intuitively drawn to it, as long as I can remember. After I grew out of the typical pale pink phase that most little girls go through, I wanted everything to be green in my childhood bedroom. I am drawn to green food and I find comfort in lush green environments. From an energetic standpoint the color green represents the heart chakra, Anahata. Our center of love and compassion.

    I think when we hear the word love, often we think of our relationships, our spouses and partners, our family and our closest friends. We are all taken by this feeling of being drawn together and connected in unity. But, lately I have very much reminded how just as important that same love and compassion is, when it comes to ourselves.

    Grain-free Matcha Orange Blossom Shortbread with Black Sesame Seeds

    It is so very easy to get caught up in life, to forget our own needs and to be so available to those that we love that we can forget to care for ourselves. After struggling with this at the end of last year and as I continue to explore the idea of helping others on a deeper level, I am constantly reminded how vital self care, self love and self compassion are to me being able to bring my best self to others. I struggle with my ego trying to convince me to believe this self care is selfish, the balance is delicate and often that line is greyed, for some people.

    Grain-free Matcha Orange Blossom Shortbread with Black Sesame Seeds

    This need for self-love has been most apparent to me as I have tackled my own healing journey this past year and I would say the same could be said for anyone going through any of their own healing. Whether it be physical, emotional or spiritual. To heal is to make whole. If our heart center is the catalyst to unification, then it too becomes the center of healing. Indeed, love stands to be the ultimate healing force.

  5. Grain-free Banana Cream Pie Bites {Paleo & Gluten-free}

    Grain-free Banana Cream Pie Bites

    Grain-free Banana Cream Pie Bites

    Sometimes, my Type-A, control-freak brain comes in very handy, I can be so organized when it comes to certain things and I can also be so obsessed with being in control and ahead. I am competitive with myself and I am always striving to do better than the last time. But, there is still that little hippie type-B inside of me, that likes to be relaxed and fly by the seat of my pants, go with the wind and whatever my mood and the energy of the day dictates. This post is a culmination of all of this. Let me explain why.

    I was lying in bed Monday night thinking about all those silly “National Food Holidays”, that have become such a thing over the past few years. If you are on any social media platform, I know you know about it. There is National Donut Day, National Red Wine Day, Chocolate Cake Day, Pizza Day, last week there was National Margarita day and National Toast Day… the list goes on and on and on. I have no clue where these come from, nor who created them. Mostly I think it’s fun. I like the excuse to be reminded of something in the TY recipe archives that you guys might like to know about it, after all I have nearly 6 years of recipes just hanging out here.

    Grain-free Banana Cream Pie Bites

    As I thought about this trend, I decided to see what food holidays  were coming up this month and I saw that today, March 2nd,  was National Banana Cream Pie Day. Fun. But wait, I don’t have a banana cream pie recipe to share, that I love. I sat up in bed and started thinking about so many fun recipe ideas and then realized I had everything on hand to whip up some adorable little mini Banana Cream Pie Bites! As I drifted off to dreamland, I dreamt of soft, luscious, banana cream pies that I could actually eat.

  6. Dark Chocolate Rose Water Truffles

    Dark Chocolate Rose Water Truffles

    Dark Chocolate Rose Water Truffles

    I have to be totally honest with you, after I passed the age of giving out Valentines at school (which I always adored), I have always found the fact that Valentine’s Day has become a day generally so focused on giving gifts, to just be a tad bit silly. I grew up with my mom saying to us kids every single year without fail, something along the lines of: “I don’t need one special day or any fancy gifts to show my love to you or your dad, I love you each and every single day of the year”. I have to say, I couldn’t agree more with my mother. I have always felt like the holiday was less about love and more about the greeting card industry, the jewelry stores and florists make out like bandits, and besides Easter, I have to imagine this is the biggest day of the year for chocolatiers. I also have to be real here for a sec, I kinda resent that this day has been somewhat stolen by those in monogamist romantic relationships! If it’s a day about love, then shouldn’t we celebrate ALL love? That of the romantic variety but also plutonic friends, parental, puppy-love (like I’m talking your actual pooch), your favorite co-worker, anyone and everyone that you have love for?

    Dark Chocolate Rose Water Truffles

    Don’t get it twisted, I don’t at all frown upon a day focused on love, how could I? What kind of V-day scrooge that would make me? It’s far from this. Nothing in this world makes me happier than love and I can only wish and hope that every day, every person has the pleasure of experiencing some love on some level, even if just that sweet look of adoration from their pooch on their morning walk. Love should be celebrated each and every day, so a day that puts it at the forefront, this certainly brings a smile to my face. But I say, collectively, we take that energy so many focus into this one single day and we extend it out throughout the year. Do sweet things for one other, share sweet thoughts with the people you love most, tell them you love them, surprise someone with homemade chocolates – these acts of love are are even better on a random Tuesday, not just on February 14th, one time a year.

    Dark Chocolate Rose Water Truffles

    When it comes to Valentine’s Day, if you want to give gifts, I am, just as any other holiday, very much in favor of those of the homemade variety. I also love the idea of thoughtful actions in lieu of presents and sweet unexpected somethings like breakfast in bed or a homemade meal, traditions, special outings, picnics etc. The gifts that come from the heart, they will, like cupid’s arrow, cut through with such vigor!

  7. Grain-free S’mores Tart

    Grain-free S'mores Tart

    Grain-free S'mores Tart

    Every once in a while your friends really surprise you. During the holidays we had the pleasure of having our friends Sean and Ruth, visiting from the U.K., while traveling California celebrating their honeymoon. I learned while they were staying with us that they had never had S’mores before. How is that possible? I guess with our freedom comes amazing treats like s’mores.

    So, I did what any good American foodie friend would do, I promptly went to Whole Foods, got some organic graham crackers for all them, the best dark chocolate I could buy and the best marshmallows I could get my hands on. I started a fire in the fireplace and I treated them. Their minds were blown! Since I skipped out on buying store bought processed gluten-free graham crackers for me, I have since been craving some sort of homemade S’mores concoction, to get my fix.

    Grain-free S'mores Tart

    S’mores to me conjure up emotions of childhood, fun and summertime. They bring back family and spending time around the campfire on our big group camping trips. The marshmallows of our childhood, they are scary things. Loaded with corn syrup and chemicals, we always packed the milk chocolate hershey bars, today my foodie snobbery has gotten so intense that as a self-professed chocoholic, if that was the only chocolate in a 50 mile radius, I would pass. What’s a girl to do, but remedy that situation with the best version of a S’mores you ever did see.

    The idea for this tart came to me and I instantly thought it would be such a perfect Valentine’s Day Sweet, but to be fair, I just couldn’t wait that long. So here we are. A slightly sweetened spiced graham-inspired grain-free crust, a luscious, rich, super duper dark chocolate layer (I’m talking 85% dark, people) and a lightly toasted, fluffy marshmallow topping! It’s perfection.

  8. Chocolate Avocado Shake {Paleo, Dairy-free, Nut-free, Keto-friendly}

    Chocolate Avocado Shake {Vegan & Paleo}

    Chocolate Avocado Shake {Vegan & Paleo}

    By now we’ve all seen and likely enjoyed that that tasty chocolate mousse or pudding, that is actually just avocado, cocoa and a little sweetener. (You can find my recipe for it, terrible photo and all, way back in the TY archives.) That very idea also sparked the creation of these delicious Creamy Chocolate Fudgesicles.

    This past week, as I continued to collect the many avocados still available in abundance from the tree in our yard, I was dreaming up creative uses for all the avocados we have. I can never get enough guacamole and my homemade avocado salad dressing is always a favorite, but I was also craving something sweet. I am not sure how or why, but I was instantly inspired to create a creamy, luscious chocolate shake.

    Chocolate Avocado Shake {Vegan & Paleo}

    I have never been a fan of milkshakes!! Gasp… I know right? There is just something about that much dairy getting sucked through a straw, laced with a year’s worth of sugar that ALWAYS spell disaster for my gut, as it should.

    Velvety smooth, rich and sinfully delicious, this Chocolate Shake get it’s creaminess from avocado, rather than ice cream and it’s sweetened only by a few dates (or other sweetener of your choice) and a little melted dark chocolate (your choice of how dark). It brings you some healthy fats from both the avocado and the coconut milk and a load of antioxidants from the raw cacao (read more about the benefits of dark chocolate). Also, shhhh, there’s no dairy in there, so it’s great for all, paleo, vegans, it’s even safe for our nut-free pals. Basically in all it’s delicious glory, it’s like a nutrient-dense chocolate shake, that you can indulge in, without worrying about crappy ice cream or loads of sugar! I promise, it will be love at first sip.

  9. Hemp Heart Peppermint Chocolate Fudge

    Hemp Heart Peppermint Chocolate Fudge

    Hemp Heart Butter Peppermint Chocolate Fudge

    Christmas cookies seem to get all the love this time of year, but I personally think that fudge is the often forgotten sweet. I have a feeling Santa would be extra good to any house that left out for him this delicious, rich and creamy peppermint fudge.

    Traditional fudge can include tons of dairy and sugar, oftentimes even corn syrup. While I don’t think the holidays should be all about going without or depriving yourself, I also firmly believe if you have to be mindful of your health and your ongoing path towards healing, indulging a bit too may leave you sorry, come January 2nd. Besides all the less than stellar ingredients, most traditional fudge also requires heating and many tedious steps, including keeping the chocolate at specific temperatures and all that complicated stuff. This simple fudge recipe requires a food processor or high speed blender and that’s it. No heat.

    Hemp Heart Peppermint Chocolate Fudge {Grain-free & Vegan}

    Hemp Heart Peppermint Chocolate Fudge

    The best part about crafting and reimagining classic recipes, is that I can indulge in the classic flavors I love, while also bringing an extra nourishing element to them. A little sneaky sweet, if you will. This fudge is exactly that. Rather than dairy and corn syrup, this fudge relies on a creamy, rich Hemp Heart butter to bring the decadence. With all that rich decadence, the Hemp Hearts also bring a surprisingly large serving of plant based protein, you get an ample sized and properly balanced serving of Omega 3 + 6 essential fatty acids. Per a 30 gram serving of Manitoba Harvest Hemp Hearts, (approx. 2 heaping tablespoons) you get 10 grams of protein and 10 grams of Omega 3+6s.

  10. Dark Chocolate Bark Bites

    Dark Chocolate Bark Bites

    To know me, is to know my insane love of dark chocolate. As long as I am not on any elimination diets or protocols, it’s nearly always part of my daily routine, whether I am on the road or at home. In the freezer, I nearly always keep a bar or two of the best, darkest, organic fair-trade chocolate that I can easily get my hands on. It’s rare you’ll see me crushing on a cake or cookies, but if I pass by a good bar of dark chocolate, it will most certainly stop me dead in my tracks. Generally, I simply need a square or two of the good, dark stuff and I am a happy girl.

    Dark Chocolate Bark Bites

    Naturally lower in sugar than milk chocolate or other candy and certainly less than most baked goods or other treats, it’s just the right amount of flare at the end of a well-made savory meal. Besides being the most perfectly created food, chocolate with a cocoa content of 70 percent or higher contains resveratrol, which has been found to lower blood sugar. Dark chocolate also has positive affects on lowering “bad” cholesterol levels. Dark chocolate is rich in Flavonoids that help protect plants from environmental toxins and help repair damage. You only need about 1 to 1.5 ounces dark chocolate per day to see the heart healthy benefits.

    Flavonoids, which can also be found in green and black teas, cherries, apples, red grapes and other deeply colored fruits and vegetables, have also been known to help with digestion, improve kidney, bowel function and sexual performance, and treat anemia and gout.

    Dark Chocolate Bark Bites

    If I am traveling, you better believe that dark chocolate is my co-pilot. An integral part to any good trip, it’s an instant way to bring a smile to your face amongst the crazy hustle and bustle of an airport and the long and sometimes tiring long drives.

    Surely you can just pack a dark chocolate bar, but I find these Dark Chocolate Bark Bites are a fun way to indulge in additional superfoods, your favorite goodies or just the stuff in the pantry you need to use up. Dried nuts or seeds, dried fruit, spices, sea salt – if you like salty or savory, add some crispy bacon, crushed pretzels or potato chips.

    These little bark bites travel so well and you can really have fun with the toppings, making a little something for everyone.

  11. Grain-free Peach and Fig Crumble

    Grain-free Peach and Fig Crumble

    As someone who has maintained a 100% gluten-free lifestyle for over 10 years and is constantly making major and minor shifts to my diet and lifestyle, in efforts to heal my body, I find great inspiration in the work that my peers do. As I have navigated my way through various elimination diets and protocols, oftentimes it’s other bloggers who have come to the rescue for me in these most challenging times. Sharing their research and their own personal experiences and of course, delicious recipes. Lauren of Empowered Sustenance is the perfect example of this. As a Nutritional Therapy Practitioner, Lauren’s approach to holistic wellness has not only allowed her to heal her ulcerative colitis, but to also share her knowledge and experiences in this journey on her website for the rest of us, no matter what our diagnosis.

    Grain-free Peach and Fig Crumble

    When Lauren asked if I would guest post on her site and share a grain-free, nut-free, dairy-free recipe with her audience – I jumped at the chance. Though I am fortunate to not have to avoid these items 100% of the time, I prefer to avoid all three in large amounts, my gut is happier that way and a happy gut = a happy Beth. Additionally, I also really empathize with those that do need to avoid these 100% of the time. Restrictions to your diet, no matter what they are, can be a challenge, I know this all to well. So, if this recipe can brighten just one day, if it can take the burden off just one person – than my work here is done.

  12. Dairy-free Mini Cheesecakes

    Dairy-free Mini Cheesecakes

    Dairy-free Mini Cheesecakes

    As someone that has maintained a gluten-free lifestyle for over 10 years now, I have sampled my fair share of products, both for my own curiosity and for the purpose of sharing here with you guys, the best and healthiest options in the market place. In my home, I have more than simplified my life and the meals I create, but like anyone else I both have cravings and I also believe in balance.

    Dairy-free Mini Cheesecakes

    On a recent morning I found myself really craving a bowl of cereal, a hankering that happens but once or twice a year. I realized I didn’t exactly have a go-to gluten-free cereal that I not only loved but one I could feel OK about eating. With my husband being the only regular cereal eater in our home, everything in the pantry contained gluten. I went on about my business and reached for a smoothie instead.

  13. Honey Balsamic Roasted Fig and Toasted Pistachio Coconut Yogurt Parfaits

    Honey Balsamic Roasted Fig and Toasted Pistachio Coconut Yogurt Parfaits

    Honey Balsamic Roasted Fig and Toasted Pistachio Coconut Yogurt Parfaits

    It’s here. It’s officially fig season and I couldn’t be happier. Though the season can seem somewhat short, when you have an over 20 foot fig tree in your yard, it honestly feels like it carries on forever and ever. I am not complaining. For the rest of the world, fig season usually feels like it is over in the blink of an eye. The season gone and done with, before you even fully begin to enjoy it. What a beautiful metaphor for life. Everything happening so quickly, whizzing right by us. The sweetest things, they come and go and if you don’t stop and slow down, if you don’t savor every bit of it, truly stopping to appreciate every little detail, it will pass you by.

    Honey Balsamic Roasted Fig and Toasted Pistachio Coconut Yogurt Parfaits

    Over these past three summers of being in this house, I have done my very best to not take this tree for granted, what a gift. Having only ever really eaten dried figs, I have learned to love figs in a whole new way and I have found myself getting creative, adding them to recipes anywhere that  I can. If you have never had fresh figs, I can tell you that you are surely missing out.

    Figs are delicious when fresh, sliced up and added to salads or pasta, they are wonderful just for a sweet bites, you can stuff them with goat cheese or blue cheese, but like many foods, I have a real thing for roasting them. The flavor and the sweetness shines even brighter this way and you end up with a delicious sauce of sorts, perfect for so many different recipes.

    Honey Balsamic Roasted Fig and Toasted Pistachio Coconut Yogurt Parfaits

    Honey Balsamic Roasted Fig and Toasted Pistachio Coconut Yogurt Parfaits

    Roasting is also a great way to preserve the figs a bit longer. Many times if I pick figs that are perfectly ripe and ready for eating straight away, I try to nab them just before they fall to the ground or the birds get them, but they won’t last long when they are this ripe. Roasting gives me a few more days with them and it ensures not a single fig’s life is lost in vain! It’s also a great way to get the most out of the figs that aren’t as great. Maybe they were picked a little early or they are just less sweet. Roast them. Problem solved.

    If you don’t have a tree, when buying fresh figs, always buy the more ripe ones. Unlike many other fruits, figs do not continue to ripen once picked. Soft and squishy is perfect, a little splitting skin with some juices oozing, even better. The ugliest figs, the ones many would likely pass right over, those are usually quite often, the tastiest figs. Possibly another metaphor for life? Heh.

    Honey Balsamic Roasted Fig and Toasted Pistachio Coconut Yogurt Parfaits

    These yogurt parfaits are one of my favorite ways to enjoy and savor the roasted figs. The tart and sweet flavor of the roasted figs, the beautiful syrupy sauce that is created, it pairs so perfectly with a creamy and tangy yogurt. I love the addition of the toasted pistachios, too. You can feel free to swap with whatever your favorite nut or seed is. I opt for my homemade coconut milk yogurt, but you can feel free to opt for any yogurt you’d like. Greek, goat’s milk an so on. Great as a breakfast, a dessert or a snack.

  14. Fresh Grape and Prosecco Sorbet

    Fresh Grape and Prosecco SorbetIf we could go back in time just for one day to visit our younger selves, I can tell you that there would be an early 20-something Beth, disappointed to know that most opened wine in the house of her mid-30-something self, usually just gets used in a recipe or worse yet, to know that there is any leftover wine at all.

    Fresh Grape and Prosecco Sorbet

    These days, I do such little drinking that I usually only open a bottle of wine if we have guests. On the rare occasion I imbibe just because, I have a glass, the bottle gets put in the fridge and usually it tastes bad before it ever gets finished. I know…. the shame, the horror. I love the way a good glass of wine tastes at the end of a busy day or with a delicious, robust home-cooked meal, but usually, the truth of it is most times I feel terrible before I ever even catch a buzz. My body just doesn’t like the stuff. It’s all “wait, this ain’t green juice. where’s my smoothie?” The other thing is, most mornings I get up so early, either for yoga or the gym, that a hangover, sans party, just never seems worth it. Yup, clearly I have rounded the corner to my mid-30s. These are all things, I swore I would never think or say.

    Fresh Grape and Prosecco Sorbet

    I was at Trader Joe’s last week picking up a few things and I saw the bubbly wines from the corner of my eye, as I pushed my cart full of veggies past the wine section. It just sounded so good. The summer time always has a way of making me crave chilled bubbly wines. So, I treated myself and I bought a bottle, I had a glass once it was chilled, then instantly knew the rest would go to waste, so I decided to get crafty this time. Waste not, want not.

  15. Salted Caramel Coconut Panna Cotta

    Salted Caramel Coconut Panna Cotta

    Add saltiness to any sweet and I simply cannot pass it up. Salted caramel anything, now that is just swoon-level obsession.  I just can’t even begin to imagine not indulging. Sadly, however, most times, I have to.

    Salted Caramel Coconut Panna Cotta

    When you are mindful of what you eat, whether it be that you prefer, or are forced to avoid things like gluten, dairy and refined sugar, a lot of times that means deciding to go without things that you truly love and would love to partake in with everyone else. It’s not because you don’t want to treat yourself or indulge a bit, more so it’s rarely worth the surely guaranteed repercussions. So often these days I see posts on social media where folks that are without dietary challenges, making blanket statements like “oh just eat it, you only live once” or something to that effect. Whether you believe in reincarnation or not, I feel like in this one life I am certain I have to live, I no longer want to spend it with a stomach ache. I don’t want to walk this earth with a bloated belly, chronic headaches, achey joints or a cloudy brain. Call me crazy!

    Salted Caramel Coconut Panna Cotta

    I have found the beauty of this life lies within the challenges. This is where the magical and epic creation happens. What a better use of our energy, am I right? I’d actually much prefer to constantly be finding myself getting creative out of a need, rather than falling into complacency and monotony. I have discovered some amazing things about myself and the world within these challenges and needs.

  16. Grain-free Black Forest Tartlets

    Grain-free Black Forest Tartlets

    It’s here, it’s here! Cherry season is upon us. One of the tastiest times of the year, if you ask me.  Naturally, to know me is to know that one of my favorite ways to pair them is with chocolate. Because chocolate seems to be my answer to all of life’s questions, even the ones not being asked.

    Grain-free Black Forest Tartlets

    I love chocolate so much that I have been known to keep a bar of 85 – 90% dark chocolate in the freezer or fridge at all times. A small square of that goodness after a delicious dinner, that’s really all I need in life. Except maybe these tartlets, these are pretty amazing, too! By the way, that 30+ days I did on the Autoimmune Protocol, skipping chocolate completely throughout the entire process was harder than anything else. I did it, but I wasn’t happy about it.

    These pretty, naturally grain-free and vegan chocolate cherry mini tarts, have a delicious nut-based crust, filled with a rich and smooth, cherry-flecked ganache and topped with homemade coconut whipped cream.

  17. Vanilla Roasted Stone Fruit with Masala Chai Infused Coconut Whipped Cream

    Vanilla Roasted Stone Fruit with Masala Chai Infused Coconut Whipped Cream

    This time of year is one of my favorites, for fresh local fruit. Stone fruit season means some of the most flavorful and sweetest fruits you’ll find all year. Peaches, nectarines, apricots, plums and the hybrids apriums, pluots — just to name a few.

    Vanilla Roasted Stone Fruit with Masala Chai Infused Coconut Whipped Cream

    I find, much like with various vegetables and other fruits, roasting the stone fruit truly brings out it’s inherent sweetness. The natural sugars as well as the small amount of coconut sugar also caramelize and we end up with an incredible rich and deep flavored sauce. The finely ground, fresh vanilla bean compliments stone fruit so well by bringing a fragrant and almost smoky, earthy depth to the light sweetness. Many times if I am working with particularly ripe stone fruit, which can tend to be very juicy, I will actually pour off some of the sauce, after roasting and I simply reduce it down by more than half, over a medium heat. This creates a delicious, rich syrup, perfect for drizzling over the coconut cream topped fruit or over yogurt or other treats.

    Vanilla Roasted Stone Fruit with Masala Chai Infused Coconut Whipped Cream

    This recipe is a pretty simple one, I really enjoy the roasted fruit as it is, topped with the creamy hint of spiced masala chai infused coconut cream. You can feel free to follow the same recipe and simply use whipped heavy cream or even creme fraiche instead of the coconut cream. This roasted stone fruit would also be wonderful layered with yogurt, sorbet, ice cream or frozen yogurt for a delicious parfait. You can top it with nuts and seeds or your favorite granola. Of course, you can always stand over the oven and eat the roasted fruit straight from the pan, which I may have done a time or two.

    Happy 5th Birthday Tasty Yummies!!!

    This week we are celebrating Tasty Yummies’ Birthday / Anniversary / Blogaversary!! I seriously cannot believe it has been 5 years since I sat down to share the first gluten-free recipe here. Where, oh where has this time gone? From the deepest depths of my heart, I thank each and every one of you for supporting me and this website over the last 5 years. I can say in all sincerity, this blog and my life wouldn’t be what they are – without all of you!!

    Besides the usual feelings of excitement surrounding a big anniversary like this, it has also stirred up some unique emotions, as well. Given the state of things currently, I am reminded fondly on this special day of the idea that this blog was built from my desire to create a space, a virtual community where I could share my journey and my creations! I also always had the hope that in the process of sharing, I might help to empower others to find strength amidst a less than ideal situation with their health and diet. Here we are, 5 years later, continuing our journey together, with new struggles and challenges unique to us, yet still reminded that we are not alone.

    Sometimes in life, you have to shift your focus and your energy, finding the positive in whatever situation you are in, no matter how challenging. Being in the middle of the autoimmune protocol, I have actually been finding so much joy in the restrictions. I get so excited I find myself dancing around the kitchen when I can pull together a delicious recipe that not only fits the long list of things that are not allowed but actually tastes good and makes me as happy as any other recipe would. This has all been so much more rewarding than the usual creations. With each recipe I develop, it feels like I have completed the most challenging board in a video game, I get my gold crown and I get to move on to the next level. I’ve actually have been quite enjoying this forced shift in my perspective, the encouragement and motivation to be creative in the kitchen – it’s all so invigorating and it makes each step and each day easier!

    I won’t lie to you though, with all of the many restrictions on my diet currently, I nearly let this special celebration pass. I was worried that without some grandiose, pinterest-worthy baked good, a layered cake or dainty little cupcakes with cute little number 5s on them – that it wouldn’t feel much like a birthday. But that just simply isn’t true! So what, I can’t have my favorite grain-free chocolate cake right now? There is still so much celebrate and it’s just as special of a holiday, chocolate or not!

    I feel like it’s alarming and shocking whenever I share a dessert recipe here on Tasty Yummies. I do it so infrequently. In the nearly 5 years I have had this blog, you have probably heard me say more than a dozen times, that I have never really cared much about baking and I don’t get super excited about sweets. But, this month (January 2017) marks the 10 year anniversary of me going gluten-free, so this is certainly something to celebrate and what better way than a super epic Grain-free Chocolate Cake with Dark Chocolate Ganache Frosting. With nearly 5 years of gluten-free recipes here on Tasty Yummies, it’s time we have a good special occasion cake up in here!

    I know to some of you, celebrating the complete removal of some of your favorite foods from your diet, forever – wouldn’t likely be something you would get excited enough to bake a cake for, but for me it is! Before my diagnosis, I spent so many years with silly health issues, an unhappy gut, unexplained migraines and many sicknesses. Discovering my gluten intolerance is something I am forever grateful for and I never regret seeking out the answers that led me to such a huge lifestyle change, nor do I ever wish that it hadn’t happened to me. It truly has been a blessing disguised as a curse. It has made me a stronger person and has led me to look at things in a much different way. Without that discovery and that huge life change, I wouldn’t be who I am today, this site wouldn’t exist and I don’t think my love for cooking would have evolved in the way that it has.

    Without knowing where my severe gluten intolerance stemmed from, I simply ate 100% gluten-free upon discovering how gravely it affected me after that month-long cleanse, at the end of January, 10 years ago this week. By the time a doctor finally tested me for celiac disease, I had already been gluten-free for 5 years and it of course came up negative. So for me, an exact reason or diagnosis was never as important as simply knowing my body couldn’t tolerate it and therefore avoiding it at all costs and never looking back, for 10 whole years (and counting)! {You can read more about my journey to living 100% gluten-free, here. Written Aug. 2013}

    The irony of this big anniversary for me is that I am currently in the middle of a whole new health exploration, if you can call it that. This past summer I was diagnosed with IgA Nephropathy, a kidney disease. This kidney disease was presenting, what I thought, were little to no symptoms and I only discovered that I had it, by a routine life insurance physical in the spring of 2013. After being declined life insurance due to high levels of protein in my urine, as well as blood, I had to get myself health insurance so I could begin the journey to discovering what was causing it. After over a year, many tests and several doctors, finally a kidney biopsy this past summer confirmed that I had an autoimmune kidney disease called IgA Nephropathy.

    In speaking with several doctors and doing some research, I have learned that it is very common for there to be a crossover with celiac patients and IgA patients. So, I suppose it is even more possible than I once thought, that I do actually have celiac disease.

    After finding a nephrologist and getting a second opinion from another, I started by protecting my kidneys in the short term and I began taking several pharmaceutical drugs as prescribed. These drugs immediately set off a slew of new symptoms and seemed to tip the scales of balance in my body in epic ways. Two weeks ago I had my first appointment with my new naturopath, to not only treat my kidney disease but to also help me heal some other health related issues I’ve been dealing with over the past few months. Unhappy digestion, strange skin rashes and acne, low B12, allergies & sinus issues, etc. At our first appointment we discussed the probability that I am likely dealing with leaky gut and candida and we started with a small amount of supplements and herbs to start healing my gut and balancing things out a bit, so we can begin to get to the root of what might be causing all of these issues.

  20. How-to Make Chocolate Bark

    Tutorial Tuesdays // Tasty YummiesHo-to Make Chocolate Bark

    Homemade holiday gifts are one of my very favorite things. I love thoughtful, personalized gifts that are truly made with love! Homemade chocolate bark is probably one of my most favorite edible homemade gifts to make. Whether it’s a gift for a hostess of a holiday party or your dish to share, homemade chocolate bark is super simple to make and you can customize it to no end.

    Ho-to Make Chocolate Bark

    The possibilities for flavors and toppings is endless and you can really create something super special for whoever will receive it. It is super easy to make your chocolate bark allergen friendly, too. Easy to make gluten-free, vegan, nut-free, soy-free and so on. You can add dried fruit, nuts, seeds, your favorite cookies or candy, dried botanicals, spices or herbs. Some of my personal favorite flavor combos include sea salt or smoked sea salt. I also love a sprinkle of cinnamon, chili powder or cayenne to bring a little heat. Gluten-free pretzels or mini peanut butter cups are both amazing and fun toppings. The list could go on and on.

  21. Red Wine Poached Apples and Pears with Cinnamon Whipped Coconut Cream

    Red Wine Poached Apples and Pears with Cinnamon Whipped Coconut Cream

    Your farmer brings you a bunch of Asian pears and apples, I mean really, what else is there to do with them then soak them in some booze? OK, yeh, I know, predictable – another blog post that I start out talking about my CSA. Snore! But, to be honest, every single week that box of goodies that shows up on my doorstep, delivered by my farmer himself, and it inspires me and my cooking in so many ways. Every Wednesday, I feel like I am on a game show, where a mystery box shows up and I have to get creative with whatever I am given.

    Sure I could have just eaten the apples and pears straight up, but where is the fun in that? Plus, I have to assume if I am getting apples and pears in my weekly box, other folks are too, and they might want some fun ideas on how to prepare them. It doesn’t get much more fun than these Red Wine Poached Apples and Pears with Cinnamon Whipped Coconut Cream.

    A friend of ours, John, works in the “wine biz” up in LA. What he exactly does, I am not 100% totally sure, but what I am sure of is that he gave me a huge case of some really nice wines the last time I saw him – so he is A-OK in my book. These days I don’t do a ton of drinking, if we have guests or it’s a special occasion, maybe, but generally I drink very little at home. But, cooking with wine, that’s far more my speed.
