    If you follow me on social media at all, you may know that I am currently in London. We have 10 days of travel between London, Paris, Leeds and back to London before we head back to LA. A for-real vacation, just the hubby and I.

    So far, it’s been an adventurous trip. Unfortunately the adventures started off on a truly sad note for us. Here’s a strange and very somber story for you, it’s affected me greatly and it’s been weighing so heavy on my mind, even amidst this exciting time of international travel with my guy.

    We had a direct flight from Los Angeles to London, on Thursday evening. It was meant to be approximately an 11 hour flight. A few hours in, somewhere over the middle of the country I drifted off to that strange, blurry-headed, plane-induced half-sleep, when there was a call over the loud speaker for any doctors or nurses. A short time later, another call.

    Suddenly several hours later, with about 3.5 hours left of our 11 hour flight, the bright lights turned on, a jarring way to wake. We received the pre-recorded notice that we were close to our arrival and that we should prepare for landing. ‘Trays and seat backs to the upright positions.’ ‘Bags stowed.’ It didn’t make sense. The map showed we were in the middle of the Atlantic, somewhere near Greenland. In the fog of sleep and slight confusion and with the pull of an extremely abrupt direction change, I opened up the digital map on the glowing screen in front of me. The flight path showed a very abrupt u-turn in the middle of the blue sea. Mark said “we’re turning back around, we’re going back.” Our plane was headed back in the very direction we had just come from and the arrival time now showed as just over an hour.

    Christmas cookies seem to get all the love this time of year, but I personally think that fudge is the often forgotten sweet. I have a feeling Santa would be extra good to any house that left out for him this delicious, rich and creamy peppermint fudge.

    Traditional fudge can include tons of dairy and sugar, oftentimes even corn syrup. While I don’t think the holidays should be all about going without or depriving yourself, I also firmly believe if you have to be mindful of your health and your ongoing path towards healing, indulging a bit too may leave you sorry, come January 2nd. Besides all the less than stellar ingredients, most traditional fudge also requires heating and many tedious steps, including keeping the chocolate at specific temperatures and all that complicated stuff. This simple fudge recipe requires a food processor or high speed blender and that’s it. No heat.

    The best part about crafting and reimagining classic recipes, is that I can indulge in the classic flavors I love, while also bringing an extra nourishing element to them. A little sneaky sweet, if you will. This fudge is exactly that. Rather than dairy and corn syrup, this fudge relies on a creamy, rich Hemp Heart butter to bring the decadence. With all that rich decadence, the Hemp Hearts also bring a surprisingly large serving of plant based protein, you get an ample sized and properly balanced serving of Omega 3 + 6 essential fatty acids. Per a 30 gram serving of Manitoba Harvest Hemp Hearts, (approx. 2 heaping tablespoons) you get 10 grams of protein and 10 grams of Omega 3+6s.

    The various aromas of the holidays and the feelings they evoke are certainly synonymous with this time of year. The rustic evergreen of a fresh cut christmas tree; spicy, warming cinnamon, nutmeg and cloves; bright, citrusy orange or the fresh, minty smell of candy canes – these can all bring the good feelings of seasonal cheer, the reminder or family and love and the promise of a season full of joy and happy memories.

    To know me, is to know my absolute LOVE and adoration of Christmas. You guys, I love the holidays so much I would eat my Christmas tree, if I could. But I can’t, I’ve tried (I haven’t). Seriously though, I was thinking the other day about the aroma of the tree and that very distinct evergreen scent that fills the house and how I wish I could bottle it up and eat it. These ramblings of a Christmas crazy person did actually serve some purpose, it brought me to the idea of rosemary cookies.

    Yes, I know rosemary is not the same as a pine tree, but it certainly is reminiscent, it does have teeny little hints of the same earthy aroma and it felt like the perfect flavor to craft a cookie around. Besides, to know me is to also know that I much prefer savory over sweet and most Christmas cookies are just way too sugary for my taste.

    It’s certainly very easy to go a little too hard and overindulge a bit during the holidays. We’ve all been there. You may feel the guilt of not following your usual, more conscious way of eating, but usually more-so you end up feeling the actual physical pain of loosening up a little and not being mindful of the type of food you are consuming.

    I am a big fan of balance, having your fun and letting go, but not at the cost of your health, or the healing you work so hard to maintain the rest of the year. I think with the holidays coming but once a year, it’s important to be kind to yourself, honoring your health and your hard work, while also acknowledging that depriving yourself isn’t the real answer. While it can be easy to use this time of year as an excuse to overindulge, it is also very important to cultivate and hone that same balance you honor throughout the rest of the year. To pick your battles wisely, yet to still allow yourself to indulge a little in your favorites. Rather than spending the first few weeks of the new year detoxing, cleansing and working to reverse any damage caused by going too far during the holidays, I find it helps to simply reach for healthier versions of your favorites, whenever possible. Less sugar, less refined, processed foods and instead more nourishing, whole foods.

    We are a little more than a week out from Thanksgiving and I am, of course, so excited for the big day. Each year since we have moved out to California, our Thanksgiving celebration has been a bit different. We haven’t exactly created new solid traditions, yet. Often this was even the case back home in NY, too. Most of the time we are surrounded with friends and/or family, but there have been years, due to schedules, travel or other situations, where Thanksgiving dinner was just the two of us. This year we are headed just over the border to Mexico to celebrate the holiday with our friends and their families, where we’ll be together with tons of incredible people, fully submerged in the good vibes of the holiday.

    As much as the holidays are about gathering with family and friends, we have all found ourselves on those less than busy holidays. Just two of us. Your spouse or your partner, a parent, your best friend, a loved one or neighbor you are caring for. I find while not as abundant in people, these more low-key holidays are really nice in their own right, quiet and simple – where brand new memories and traditions are created. I thought creating a feast of a meal, focused on this idea of less, might be useful to many of you.

    Additionally, some of you may be joining a larger feast, as someone gluten-free, or serving a feast with one or two gluten-free guests. It can be scary being that person (and even the person serving them), when you aren’t sure of the food being made, if it’s safe for you, how it was prepared and so on. These smaller-serving sizes free from gluten, would be the perfect way for you to make and bring along a small dish just for you or as an option to serve to your guest.

    With my lack of interest in sweets this year, I came to the realization that if I just started making sweet recipes to post here on the blog, I would eat them, simply because they were here. This is my number one rule for being mindful of how I eat and not making bad decisions. If you don’t have it in the house, you can’t and won’t eat it. Even with not being much of a dessert or baked goods person, my hatred of wasting food would definitely beat out my disinterest in any sweets. So, I have opted to just not make many sweet things this holiday season. Problem solved.

    Though this time of year tempting sweets sseem to be around every corner, it doesn’t mean we have to overindulge.     This time of year I feel like as much as I am craving holiday flavors and traditional recipes, I am also looking to keep things as simple as possible and I really look to and work hard to stay on track with my eating. No reason to throw everything I work so hard for all year long, right out the door for a month of terrible choices. Between holiday parties and gatherings, events, my yoga teacher training coming to an end, mass amount of holiday orders from our websites, gift shopping and everything else, time is of the essence right now. There hasn’t been much extra time to bake cookies or to make homemade everything, like I always try to. When I was approached by Silk about their new Cashewmilk, I was super excited at the opportunity to try it and report back to you guys.

    We all know that I am the queen of homemade nut milks, but I am always on the lookout for store-bought alternatives, both for myself when life gets busy, but also for those of you that don’t have the desire or time to make homemade nut milks. For me, the important things I look for look for are brands whose nut milk products are certified non-GMO, certified gluten-free, are minimally processed, free of artificial flavors and preservatives and don’t contain carrageenan. I also prefer unsweetened nut milks, so I can control the amount and type of sugar used.

    Silk’s new Cashewmilk is a really great alternative to both homemade nut milks and if you are looking to make the switch, it is a great substitution for regular dairy milk, with 50% more calcium than dairy milk with only 25 calories per serving (25% less than skim milk)*. It’s so irresistibly creamy and delicious, it’s great over cereal, in your favorite recipes or just on it’s own. The moment I poured the first glass and saw just how thick and luscious it was, I immediately was inspired to recreate my favorite classic holiday drink, eggnog.

Whether it’s a gift for a hostess of a holiday party or your dish to share, homemade chocolate bark is super simple to make and you can customize it to no end.

It is super easy to make your chocolate bark allergen friendly, too. Easy to make gluten-free, vegan, nut-free, soy-free and so on. You can add dried fruit, nuts, seeds, your favorite cookies or candy, dried botanicals, spices or herbs. Some of my personal favorite flavor combos include sea salt or smoked sea salt. I also love a sprinkle of cinnamon, chili powder or cayenne to bring a little heat. Gluten-free pretzels or mini peanut butter cups are both amazing and fun toppings. The list could go on and on.

    I am totally aware that I am coming in down to the wire with this recipe. Thanksgiving is just a few short days away and maybe some of you have had your menu’s planned for days or even weeks, but I am not quite that put together. I am serving dinner to somewhere between 7 and 10 people on Thursday and I am still working on what I plan to serve.

    With my weekends being consumed by yoga teacher training and trying to maintain a social life amidst a busy work schedule plus making time for my own yoga practice and personal training sessions, life has been feeling a tad hectic, as of late. My saving grace has been our CSA boxes that get delivered every Wednesday. Most weeks I plan our meals based on what shows up in that box, so I always know that we will be eating healthy and well, no matter how busy life gets.

    This stuffing was born on a day that a new CSA box showed up and I still had a couple things from the previous week’s box. So, it’s partially a recipe created with Thanksgiving in mind and partially and more simply, a fridge/pantry cleaning recipe. After getting some beautiful butternut squash, leeks and apples, plus some gorgeous collard greens, I was finding myself inspired to create a dish that used all of them.

    This fun version of a classic bread stuffing is so easy to throw together and it is just full of so many incredible comforting flavors. The best part of this recipe is how versatile it is. You can use whatever your favorite bread is, try kale instead of collard greens and you could even add meat, if that’s your preference.

    There a some flavor combinations that for me are the classic quintessential tastes of the holiday season. The combination of chocolate and peppermint this is definitely one of those. For my final giftable recipe this month in my series with Free People, I thought a handmade gift that was not only pretty, but tasted amazing would be the best way to end things.  Hot cocoa is not just for kids, but also for the kids at heart.

    Layer the delicious ingredients for this homemade candy cane hot chocolate in a jar and add some fun decorative touches like a fresh clipping of evergreen, wrap fabric over the lid, tie twine or ribbon and add a pretty tag. It not only looks beautiful, but it is so tasty, too! The bonus is this hot cocoa mix is vegan and gluten-free and depending on the ingredients you use,  low in refined sugars, as well.

    On it’s own or with a nice mug to compliment it, this simple DIY gift is sure to put a smile on anyone’s face! It’s a great hostess gift, it’d perfect for the secret santa giveaway, or just a thoughtful handmade gift for the chocolate loving vegan in your life. This simple ratio of ingredients can also be used to make a small batch for yourself, anytime you’d like!

     

    Vegan Candy Cane Hot Cocoa Mix

    [print_this]Vegan Candy Cane Hot Cocoa Mix
    Fills a 1 quart jar, makes 12 servings

    • 1 cup powdered non-dairy milk, such as soy or rice (or powdered dairy milk, if you aren’t vegan)
    • 1 cup unsweetened cocoa powder (be sure it is vegan)
    • 3/4 cup coconut sugar (or raw cane sugar)*
    • 1/2 teaspoon fine sea salt
    • 1/2 cup miniature semi-sweet vegan chocolate chips
    • 1/2 cup crushed vegan peppermint candy (these particular candy canes are great – no GMOs, no HFCS, no artificial dyes, etc )

    Optional:

    • 1/2 cup vegan mini marshmallows
    • A few additional mini or full-sized candy canes

    Layer the powdered non-dairy milk, cocoa powder, coconut sugar, salt, chocolate chips, and peppermint candy. If you’d like, you can add mini marshmallows to the top of the jar, if there is room or attach a plastic bag full to the jar. On the back of the gift tag, write:

    “Mix all of the ingredients together in a large bowl. For each serving, place 1/4 to 1/3 cup cocoa mix in a mug and stir in 1 cup boiling water or non-dairy milk. Mix keeps in airtight container at room temperature for up to six months.”

    OR

    If you wish to leave the powdered milk out, shake all of the remaining ingredients together (you may want to increase the ingredients by 25-50% to fill up the jar without the powdered non-dairy milk). Once fully mixed, add it to the jar and layer marshmallows on top, if there is room. Change the directions on the gift tag to read:

    “For each serving, heat 8 ounces of your favorite non-dairy milk in a small saucepan over medium heat until hot (alternatively, microwave 2-1/2 minutes at full power). Whisk in 1/4 to 1/3 cup hot chocolate mix. Mix keeps in airtight container at room temperature for up to six months.”

    *Consider making a homemade vanilla sugar first, using my recipe for vanilla sea salt, replacing the salt with sugar. Use an equal amount of the vanilla sugar instead of plain sugar in in this recipe and it takes it to a whole new level!!

    It is likely you have noticed how quiet things have been around here on Tasty Yummies. We have been traveling up a storm over here this holiday season to different events and fairs all over the east coast. In the last month we have been to Washington DC, Baltimore, Philadelphia, Brooklyn, Chicago and Pittsburgh. As of this past weekend, are finally done traveling for the year! At the start of the crazy month of travel, in mid-November, we got an offer on our house. YAY!!! Closing is scheduled for early January. I honestly cannot believe it’s all really happening.

    So, besides being overwhelmed with all of the travel and the holidays, we are in the midst of selling our house and figuring out packing up all of our personal and business related belongings to relocate to California in early 2013. I don’t consider myself a stressful person or a worrier in the least, but I have to say, we haven’t even really begun packing up boxes and all of that real stuff, and I am kinda already freaking a little bit. Hubby, of course, continuously reassures me it is all fine and everything will all get done, but I cannot quiet the constant voice in my head reading the long list of the many things that need to get done before closing (and having to be totally moved out) next month, a month from yesterday to be exact. I have surprisingly only moved once in my adult life and that was from living at home with my parents to buying my first home at 23, 9 years ago. So, I am just a bit overwhelmed.

    As you can imagine, between the travels, running the business, preparing for the move and dealing with all the holiday fun of shopping and such, there just hasn’t been much leftover time for me to play in the kitchen. That is the only bummer about all of it. Obviously as with most painful things in life, it is temporary. This time will pass and be over before I know it. Doesn’t make it all any easier though.

    I have been eating well and cooking every single chance I get, but the time to create new recipes, set up photo shoots, edit photos, etc – just doesn’t seem to be there right now and I have tried to do my best to accept that, as much as I am not exactly happy about it. I will obviously be sharing recipes whenever I can, I am not totally disappearing, I just wanted to explain the quiet and lack of recipes. Oh and I have some really fun end of the year stuff planned for the end of the month here on the blog, so stay tuned for that.

    Banana Nog Smoothie - Gluten-free + Vegan

    In the meantime, I created this tasty smoothie this morning after yoga. By the way, another quick side note yoga has been my saving grace this past month. That is one thing that I have made sure to find as many free moments for right now. I need it. It has helped keep me grounded (mostly) and has allowed me to quiet my mind, even if only temporarily, in a way that nothing else can. I am so grateful for my practice every day, but especially in times like this. OK, back to the tasty smoothie…. I wanted to create something that really had some holiday flare to it. I am a Christmas junkie and I have been trying to take in and cherish every single moment of it this year. I like to squeeze in the holiday cheer wherever I can. So, what better way than with the classic flavors of egg nog, in a healthy and hearty smoothie. I actually had planned on using canned coconut milk since I have plentyin the pantry but I had some So Delicious Coconut Milk Nog in the fridge (which I am admittedly addicted to) so I thought that would really bring on the extra nog flavor. Obviously this would be equally as delicious with just coconut plain milk. Feel free to sweeten and spice to your liking. Since I used the nog and my banana was nice and sweet, I didn’t add any sweetener and I went with the below measurements for spices, you may want more though, depending on how strong a flavor you are looking for. This smoothie would of course also be delicious with a shot (or two) of your favorite spirit if you really want to celebrate!

    Banana Nog Smoothie - Gluten-free + Vegan

    makes 1 large serving or 2 smaller servings

    • 1 cup organic coconut milk – the canned kind (or for even more flavor, opt for your favorite vegan eggnog, instead)
    • 1/2 cup unsweetened organic vanilla almond milk (or other non-dairy milk)
    • 1 frozen banana
    • 1/2 teaspoon ground nutmeg
    • 1/4 teaspoon cinnamon
    • pinch of cloves
    • 1 teaspoon vanilla extract
    • 1 tablespoon chia seeds
    • 1 small handful ice cubes

    Optional – 1 tablespoon maple syrup, honey or other sweetener if it isn’t sweet enough for you)

    Add all of the ingredients to your blender and blend on a high speed until thick and creamy. Give it a quick taste and adjust any seasonings or sweetness to your liking. Sprinkle a little nutmeg and/or cinnamon on top. Serve right away. [/print_this]
