    I am all about the simple, easy, weeknight dishes but I especially love nutrient-dense, brain-boosting foods that are easy to prepare and include in the weekly repertoire.

    One of the world’s most nutrient dense foods, kale is an inexpensive way to load up on important vitamins, minerals and other nutrients.  Kale is incredibly rich in Vitamin C (more than 4.5 times what you can find in spinach and 1 cup of raw kale has more vitamins C than a whole orange). Kale is also one of the world’s best sources of Vitamin K, with 1 cup of raw kale containing more than 7 times the recommended daily amount, Vitamin K is an important nutrient involved in blood clotting.

    Kale is also a great source of B6 and other B Vitamins. Kale like other leafy greens is a rich source of antioxidants, specifically Beta-Cerotene, an antioxidant the body can turn into Vitamin A, along with various polyphenols and flavonoids, including two flavonoids, quercetin and kaempferol known for being heart protective, anti-inflammatory, anti-viral and so much more. Kale actually contains over 45 different flavonoids! WOAH!

    Lutein and zeaxanthin, catenoid antioxidants these are the nutrients that give kale its deep, dark green coloring and they are  protective against macular degeneration and cataracts.  Kale is also high in many minerals people are often deficient in, some of the minerals found in kale include calcium, magnesium, manganese, potassium, phosphorus, zinc, copper, iron, to name a few.

    With the busyness of this time of year, I am finding myself far more called to creating nourishing, comforting food that doesn’t eat up half the day in prep work, but that also cooks quickly and leaves us time for all the other crazy tasks we have on ours lists right now. This time of year I just want the most comforting foods, soups and stews, roasts and other hearty, seasonal meals. This Instant Pot Beef Stew is basically the best ever version of all of this! Ready in under an hour, it’ll taste as if had been cooking ALL day long.

    Last year I got myself the Instant Pot, after hearing from so many people how amazing it is. I am still, after a year, learning all the things it can do. I recently began playing with the sauté feature, which allows you to sear meat, before pressure cooking it. I find this seals in the flavor and the caramelized flavors from the browning really brings more depth and richness to the overall dish. Plus, it gives us little brown bits to deglaze, which is one of my most favorite things to do when cooking.

    This is comforting, winter food at it’s finest. It actually reminds me of being a kid, this is the food we grew up on. My mom made a killer beef stew on the stove top. It tastes of love, coziness and comfort.

    Although it’s back to school time and summer is coming to an end, let’s not rush into the fall foods just quite yet. Zucchini are still abundant and there are lots of great dishes to be made with them. Of course, I am far more likely to make zucchini noodles and more savory dishes, than to bake with zucchini, I also find myself craving at least one zucchini baked good before the summer passes us by.
