    These Keto Chocolate Muffins are little bit different of a recipe for me. I am not big on baking or sweets and I am also not generally one for using alternative sweeteners, not that there is anything wrong with some of them, necessarily, but it’s just not my scene. Most of the time, if and when I am going to have a little something sweet, I will use a very small amount of maple syrup or honey or a little coconut sugar. We’re talking a small amount, because it’s totally fine and I will be fine and honey and a little sugar won’t kill me.

    When I developed this particular Keto Chocolate Muffins recipe, however, I wanted to make a low carb muffin recipe that would be versatile for my different readers and their different needs. I know for many folks eating keto or a low carb diet, they find themselves there due to diabetes or a metabolic condition of some sort where tracking their blood sugar becomes of high importance, so they do have to be more mindful and aware then those of us just choosing this lifestyle to feel good. Having several people in my life, close to me, that are diabetic, I love creating recipes that I know they can enjoy, too and I can feel good knowing they aren’t shoving those super scary artificial sweeteners into their bodies (splenda and the like).

    These Keto Chocolate Muffins can be made several different ways. To be fully low carb and low glycemic, I tested the recipe with this Monkfruit Maple Flavored Syrup, which I have found is a nice replacement for baking recipes that use maple syrup or honey.  There is a very subtle maple flavor, however, so you are aware, but I find that flavor pairs so nicely with these muffins. It’s not too distinguishable in this recipe, but in other recipes it can be more prevalent.

    By using the monkfruit, these Keto Chocolate Muffins (by my calculations) clock in just over 5 net carbs per muffin! Not too shabby. Read the rest of this entry »

    A twist on traditional baklava these Paleo Baklava Shortbread Cookie Bars bring the classic flavors of this popular Greek pastry, I grew up on without flour or gluten. Luscious butter, comforting, aromatic spices, a hint of citrus, a blend of spiced nuts and a sweet honey syrup. Mmmmmm!

    I am sorry, I have been holding onto this recipe for sometime now. I usually work several months out on my content, I create and test recipes several times over to get them right, then I make them for the final shoot, I style the food, shoot and edit all the photos, I write up the post and recipe and put it into the content calendar.  I move my content around to keep it fresh, I base it on what’s in season, holidays and what you all are wanting most. For me, baked goods aren’t always a priority, I don’t love to bake and I don’t generally care about sweets so the baked goods always get pushed down in the queue.

    I created the recipe for these Paleo Baklava Shortbread Cookie Bars after a trip back home to Buffalo to see my family this past April. My trips home always inspire so many recipe ideas, often new ways to create family or local classics that I didn’t even know I missed so much. The day I made this recipe for the very first time, the smell in my kitchen reminded me of home, of my mom and my dad, my Yia Yias. The first bite I took of this Paleo Baklava, I actually cried. A full on dessert-induced cry.

    Do you miss those fluffy dinner rolls from your previous (gluten-eating) life? Truthfully, I kinda do sometimes. Mostly I have learned to stay busy when the bread basket gets delivered to the table. I engage myself in an interesting conversation, I sip my water or tea and most of the time, I could really care less that I am unable to fill up on all those starchy carbs. 10+ years of not having something, you tend to not be too bothered after a while. I’ve created new habits and I enjoy my meals so much more without having a tummy full of carbs before I have even started the main event.

    Part of living with dietary challenges is learning to find joy in events and celebrations without your traditional go-to foods! We all have been there and we can attest that the struggle is real! It’s really real. I know many of you will call me crazy for this next admission, but at times I find so much joy in creating foods that I myself cannot currently have, just because I want to share them with others. I am not talking about gluten-containing baked goods, I reserve that for once or twice a year when the hubby makes a special request. More, I am talking about the occasional times I find that I am avoiding a food or foods for an elimination diet or whatever reason.

    Most times this desire to create for others goes hand-in-hand with baking for a special occasion. So I think I would like to rename all of this to “baking therapy”. For me, there is just something so special about spending time in the kitchen, with the oven heating up and bringing that comforting warmth, whipping up a recipe and then smelling the glorious aromas from the oven as your creation bakes. I suppose it reminds me of my mother and my sister. Both love to bake and do so for nearly every special occasion. For the last 10 years of me being gluten-free, although I couldn’t eat 95% of what they made, I took great comfort in knowing that the creations that they lovingly made would be there. I also love watching the happy faces of everyone enjoying those creations, whether or not I can be part of it personally.

    It’s that time of year again, when the amount of zucchini coming from my garden, is far more than two humans could ever consume. So, I’ve been getting busy making zucchini noodleschocolate zucchini muffinsraw zucchini bitesstuffed zucchinicrispy baked zucchini rounds and more.

    However, while staring at a pile of fresh heirloom zucchini freshly picked from my garden over the weekend, I realized I hadn’t made zucchini bread in a very long time, in fact I hadn’t made bread of any kind in a long time. So I pulled out my favorite gluten-free all-purpose flour blend and I got busy.

    This Gluten-free Spiced Zucchini Bread has a delicate crumb and the perfect amount of spice. I like mine toasted with a little pat of coconut butter or real butter.

    Gluten-free Spiced Zucchini Bread

    [print_this]Gluten-Free Spiced Zucchini Bread
    makes 1 loaf

    • 1 full cup of grated zucchini (from about 1 medium zucchini)
    • 1 1/2 cups all-purpose gluten-free flour blend
    • 1/4 cup almond flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/4 cup ground flax seeds
    • 2 tablespoons psyllium husk powder
    • 1/2 teaspoon fine sea salt
    • 1/2 tsp ground nutmeg
    • 2 teaspoons cinnamon
    • 1 tablespoon fresh ginger, peeled and grated
    • 1/2 cup light coconut sugar or other granulated sugar
    • 1/3 cup olive oil or coconut oil
    • 2 extra large eggs
    • 1/2 cup full-fat coconut milk
    • 1 teaspoon fresh lemon juice
    • 1 tablespoon pure vanilla extract
    • 1/3 cup chopped walnuts or pecans, optional

    Preheat your oven to 350ºF. Grease a 9-inch loaf pan with coconut oil and set aside.

    Place the shredded zucchini into some paper towels and gently squeeze out any excess moisture then set aside.

    Put the all-purpose gluten-free flour, almond flour, baking powder, baking soda, ground flax seeds, salt and cinnamon in a medium bowl and whisk to blend. In another large bowl add sugar, oil, eggs, coconut milk, lemon juice and vanilla. Whisk thoroughly until smooth.

    Add the dry ingredients to the wet and beat (by hand or with mixer) until well combined. Fold in the grated zucchini and the walnuts, if using. (I always reserve just a little of each to sprinkle over the tops of the loaves).

    Pour the batter into your prepared loaf pan, using a spatula to even out the top. Sprinkle over the reserved zucchini and nuts to the top. Bake for 45-50 minutes, or until a toothpick inserted in the center of a loaf comes out clean.

    Transfer the pan to a cooling rack and let cool in the pan for 10 minutes. Carefully remove the loaf from the pan and let cool completely on the rack. As hard as it can be, I allow the bread to cool for at least an hour, if not longer, before slicing into it.

    Once cooled, bread can be wrapped in a double layer of plastic wrap and stored at room temperature for up to 3 days. [/print_this]

    I feel like I am constantly reiterating how aloof I am about most sweets, but here I am again. I honestly just don’t have much of a sweet tooth, never have. Yet, as of late, I feel like I am constantly creating and sharing sweets and baked good recipes. I was thinking about why that might be – as someone who is much more into savory cooking.
