New Year Reset Meal Plan // Week 1

Whether you are starting the year off with the Whole30 or a 21 Day Sugar Detox, maybe you are going paleo or gluten-free for the first time or perhaps you are simply just getting back to your usual mindful-eating ways – we could all use our regular, pre-holiday routines and definitely some healthier eats. I want to make these first weeks of 2017 a breeze for all of you, so I have meal plans set for every week this month.  All of the meals featured in the weekly meal plans, throughout this month, will be gluten-free and paleo, all of the recipes are free from grains, dairy, legumes and sugar (or have very simple options to make them as such).

New Year Reset Meal Plan // Week 1

Instant Pot Beef Stew

Monday: A hearty, yet easy to make meal, this Instant Pot Beef Stew is the perfect, cozy winter dish. (Don’t have a pressure cooker? Don’t worry, I include instructions for the slow cooker)

Slow Roasted Salmon with Meyer Lemon Gremolata

Tuesday: Despite it’s name, this Slow Roasted Salmon with Meyer Lemon Gremolata is ready in under an hour and it’s delicious served with a side of roasted broccoli.

 

How-to Make Roast Chicken in the Slow Cooker

Wednesday: Beat the mid-week slump with basically the easiest recipe ever – Slow Cooker Roast Chicken! Serve with a side of cauliflower rice and some garlicky sautéed winter greens and boom! (Save the leftover bones and meat for Friday’s soup)

 

Greek Lamb Meatballs

Thursday: Meatballs are always a great idea, Greek Lamb Meatballs are the BEST idea ever. Serve with a big Greek salad and some homemade dressing (skip the feta and the sweetener) and some kalamata olives.

 

Turkey Tortilla Soup (with Paleo option)

Friday:  Turkey Tortilla Soup (made instead with leftover roast chicken from Wednesday), opt for the cassava flour tortillas option, rather than corn. I like to add a few handfuls of baby spinach to boost the soup and get in those greens!

Beth, saving my life, as ever. The holidays have left me feeling sick, broken out, covered in eczema, and like my body from neck down has turned in to brie. Thanks for reminding me to get back to real life (i missed it!)

Any paleo breakfast ideas that don’t contain eggs? Sadly I am allergic :( Also cassava doesn’t seem to have become popular in Canada yet so have not been able to find cassava flour or products anywhere!

I always recommend just some meat and veggies, making your own sausage patties, eating leftover chicken, etc. I think our culture is so hung up on what breakfast is supposed to be, that we forget that just real, simple, whole foods, that you would eat at any other meal, make great breakfast options. I love meats of meat or fish and veggies for breakfast.

Happy New Year Beth;
You have been very instrumental in my Paleo Journey. I have no intolerance to any foods (that I know of); I have eaten just about everything and anything do to survival training (bugs, grubs, larva, snake, lizard, etc.) with no ill effects; but find a great deal of sense for Paleo. With eating organic, grain-free, pasture raised products and chemical free nourishment I feel great at 64 (“will you still need me; will you still FEED me.”) I have also lost approx. 100lbs (+or-). One thing I crave on occasion is bread. I have been working at finding a palatable/textural substitute and have one question on the chemical interactions between gluten-free flours (preferably nut flours), starches and pysillium, and maybe any other ingredient I may be missing to develop a similar texture to a satisfying bread.

Love these dishes that I have accidentally found!!! Started Paleo at the beginning of December 2016, and feel soo much better!!
