Kale Banana-Berry Smoothie - Gluten-free, Vegan + Sugar-free

I think I might be a smoothie nerd. I find myself craving smoothies at random times, I find myself dreaming of new smoothie concoctions while strolling through the farmers market or grocery store. Sometimes in a conversation someone will mention a particular type of produce and I find myself wondering if it could work in my smoothie the next morning. I keep a large bag of already peeled bananas in my freezer, so I always have a frozen banana ready and waiting for me to pop into a smoothie. I may have a problem!

One of my favorite ways to create new smoothie flavors is to just look at what I happen to have on hand, whether from my CSA box or leftover from another recipe and I just go to town. This recipe came out of not knowing what to do with a small amount of kale leftover from our CSA box and some blueberries I had bought to make another recipe. I thought they would be perfect together and although the resulting color is definitely an interesting hue, the flavor is nothing short of delicious.

There is something so satisfying about making a delicious smoothie and sneaking some veggies into it. It’s like you are getting one up on the world. Before some people are already out of bed, you’ve treated yourself to being nourished by some amazing vitamins and minerals, among many other things, all in a delicious creamy treat. It feels sneaky.

 

Kale Banana-Berry Smoothie - Gluten-free, Vegan + Sugar-free

Makes 2 small or 1 large serving

  • 1 1/2 cups unsweetened non-dairy milk of your choice, I used hemp milk
  • 1 heaping cup raw kale, center ribs and stems removed, roughly chopped or torn
  • 6 ounces blueberries or strawberries (fresh or frozen) – blackberries or raspberries would also be great, or a combo of all of these
  • 1 banana, preferably frozen
  • 2 medjool dates, pitted
  • 1 teaspoon vanilla
  • 1 tablespoon chia seeds, optional

Add all of the ingredients to your blender and process until smooth. Enjoy immediately. [/print_this]

    Hey! Looks good…. Just curious, how many cups did one recipe make? I only have a magic bullet and it fits 2 cups comfortably. It’s already 1.5 cups of milk….I might be out of luck

      I would say if your bullet is limited to 2 cups, just take the liquid down to 1 cup instead of 1 1/2 and it should work perfectly. Hope that helps.

    I have a stupid question, how do you freeze your banana? Do you slice them up, cut in half, or put the whole banana with skin to the freezer? I’m new in the “eating healthy lifestyle” and I’m very grateful for you. Thank you.

      I peel them, then half them and add them to a large ongoing bag of bananas in the freezer. I have made the mistake before of freezing the whole banana, peel and all and it is SO difficult to get off 😉

    random question… where do you get your straws and are they reusable?

      I suppose technically they are not usable, but I reuse them. They are paper straws, so I just quickly rinse them after I use them and they are usually good to go after but it just depends on how long they were in the drink and what the drink was. I got them on etsy sometime last year.

    I’m just curious, and not trying to be ridicule your recipe because it sounds delish!! But I was wondering why you label it as “sugar free” when it the berries, banana and dates will give this smoothie a ton of sugar. I understand that they are natural sugars and fruit is very healthy for you, but natural sugar is still sugar. I’m on a quest to find sugar free recipes since I am on an anti-candida diet and I literally cannot have things like bananas and berries because of the amount of sugar in them.

    I would love to hear your opinion!

    This looks SO good. I’ve yet to do much with chia seeds besides drink them from a kombucha drink. I’ve been meaning to buy some and try them in a smoothie like this

    I tried this smoothie two times this week and loved it! I tried it with almond vanilla milk and today I used coconut milk (forgot to get unsweetened this time so I left vanilla extract out). I also did not have dates but used blueberries, blackberries, raspberries and strawberries (frozen) with a banana and chia seeds. I used a mix of kale, spinach and rainbow chard since that was all I had and it turned out delicious! Do you soak the chia seeds? Some people recommend soaking them for 5 minutes.
