Did you know that May is Celiac Awareness Month? I shared the following over on my Instagram account but I thought it was worth mentioning here, as well.

While I discovered my own severe gluten intolerance over 11 years ago, I was actually never properly tested for Celiac (until it was too late) and now as many years later, as additional health issues have shown up to the party, many of which you guys have read about right here on the website – I now certainly suspect Celiac to be the underlying cause. (Though I denied this truth for many years)

That said, frankly speaking, my 11 year journey of eating 100% gluten-free and guiding others on their path, no matter the need, it has always been about celebrating food, exploring ingredients and hopefully encouraging others to get excited to be in the kitchen and create. Fresh, seasonal, nutrient-dense whole foods – to me it’s all about the amazing things that are naturally gluten-free, rather than supplementing with overly processed substitutes.

That said, given the nature of my work and the fact that not everyone has the ability to work from home, cook all three meals a day completely from scratch and that many of you have a whole family to feed – I am also always on the look out for gluten-free products that will make life easier, while not being loaded with terrifying ingredients.

Enjoy Life has a line of 43 products that are all not only certified gluten-free but they are also free-from the top 8 most common allergens as defined by the FDA (wheat, milk, eggs, soy, peanuts, tree nuts, fish and shellfish). In addition, all of their products are verified Non-GMO by the Non-GMO Project, and certified Kosher and Halal, and are made without artificial ingredients. That’s some goodness worth celebrating, for sure!

I recently had the opportunity to try their new gluten-free pizza crust mix with ancient grains and develop a recipe with is and I am so impressed, you guys. A gluten-free crust that isn’t whimpy, flimsy, thin, dry or blah! The Enjoy Life baking mixes in particular are extra cool because they are certified vegan and contain 5g of plant-based (algal) protein per serving, are made with a blend of ancient grains, and contain shelf-stable probiotics that don’t degrade during the baking process – providing a bit of digestive functionality! While I am not vegan, I know for many of you, eggs and dairy cause issues, so it’s exciting to have a delicious option.

This Gluten-free Mediterranean Flatbread is a super tasty way to enjoy some of my most favorite flavors on this delicious crust. As any good Greek girl would, most of these toppings are usually already open and in the fridge or on reserve in the pantry, at all times. Obviously this is highly customizable, so feel free to add or take away whatever toppings you’d like. We enjoy a light crumble of some sheep’s milk feta cheese, but it would also be great with goat cheese, your favorite nut milk cheese or you can just leave it off altogether, too! We enjoy it that way from time to time.

Pro-tip: You guys, the roasted garlic spread that goes down first, sure it adds an extra step, from just using fresh raw garlic – but it is highly, highly recommended. Next level flavors here.

Other optional topics: baby spinach, fresh tomatoes instead of sun dried, fresh basil instead of oregano, red onion, crushed red pepper flakes, pepperoncini

serves 4

Roasted Garlic Spread

  • 2 heads roasted garlic
  • 2 teaspoons olive oil
  • 1 tablespoon fresh oregano, roughly chopped
  • sea salt and black pepper

Flatbread Toppings:

  • 1/2 cup sun dried tomatoes
  • 1/4 cup kalamata olives, roughly chopped
  • 1/4 cup marinated artichokes hearts, chopped (I actually found jarred grilled artichokes at TJs)
  • 1/4 cup roasted red peppers, thinly sliced
  • 2 ounces sheep’s milk feta cheese, goat cheese or other cheese (optional)
  • zest from one lemon
  • fresh oregano, basil or parsley

Preheat oven to 400ºF. Grease a large baking sheet or line with parchment paper.

Prepare pizza crust mix by adding olive oil and water. Mix well and work into a ball. Add more water as needed. With damp hands, press the dough into one single large rectangle on a greased or parchment paper lined large baking sheet (rather than two pizza rounds as the directions state) – thickness should be around 1/4-inch for a slightly chewy crust. If you want it crispier, work it more to 1/8-inch.

Lightly brush the surface with a little olive oil and lightly sprinkle with sea salt. Using a fork make indentation holes throughout and bake without toppings for 10-12 minutes. (8-10 for a thinner crust.)

While pre-baking. Squeeze the roasted garlic from their skins, add to a shallow bowl or a mortar and pestle. Add olive oil, fresh oregano and salt and pepper. Mash together until a paste is formed.

Remove the crust from the oven and spread the roasted garlic herb paste evenly over the flatbread. Add your desired toppings evenly.

Bake for another 10-12 minutes or until the crust is slightly crisp. For an even crispier crust, place the crust directly on the oven rack after pre-baking.

Finish with fresh lemon zest and herbs. Cut and serve.[/print_this]

  2. May is always such a delicious and empowering time for us gluten free eaters and/or celiacs! 😉 I have yet to try Enjoy Life’s pizza mix, but I can’t wait to get my hands on it!
